Rich Fruit Cake
Ingredients
- -- 250g of Butter
- - 1 Teaspoon of Mixed Spice
- - 5 Eggs
- -3 Tblsp strawberry jam
- - 80g of Self Raising Flour
- - 300g Brown Sugar
- - 230g of Plain Flour
- - 185ml of Sweet Sherry
- - 1Kg of Mixed Fruit
Method
- Preheat oven to 150c.
- Line a 22-24 cm round cake pan with four greased layers of baking paper.
- Mix fruit with sherry and leave over night.
- beat butter and sugar.
- Add eggs and cream the mix.
- Add flour and then the fruit.
- Put in to the prepared pan.
- Bake 31/2 hours.
- Brush with warm sherry. Leave to cool.
- Can keep it for months brushing with warm sherry every week.
