Mexican Flour Tortillas




Mexican Flour Tortillas

Ingredient

  • 3 cups of plain flour
  • 2 tsp Salt
  • 2 Tsp of Baking powder
  • 175 ml of hot water
  • 100g butter or margarine.

Method

  • Add all the ingredients in to a mixing bowl and mix it at least 5 min.
  • Let the dough rest coverd about 1/2 and hour or an hour
  • Make rotis to the size you like. Put it in a container and close the lid to keep it moist.
  • If you leave it open it will go dry.
  • Serve with a dipping or a curry or as a wrap.


Old Fashioned Chow mein



This recipe is really a hit after I tried it at home. This is packed with full of flavours and nutrients too. I got this recipe from a person who is almost 90 years old. After he tried the chow mein original chinese recipe he gave me this recipe  describing how tasty and easy this recipe is. Really I love this recipe and you can change the meat to chicken or any other if you are not a beef eater.

Old Fashioned Chow mein

Ingredients

  • 250 g Beef Mince
  • 3 Cups of cabbage
  • 1 onion sliced
  • 1/2 cup celery
  • 2 cups green beans
  • 1 carrot diced
  • Salt & pepper
  • 1 Packet chicken noodle soup
  • 1 tsp stock powder or a cup of stock water
  • 3 tblsp rice
  • 1 cup water
  • 2 tblsp oil.
Method

  • Add oil in to a pan.
  • Add celery & onion and cook several minutes.
  • Add minced beef and brown the beef.
  • Then add the rice, carrot and the beans and a tsp stock powder.
  • Add water.
  • Cook about 15 minutes.
  • Add the cabbage and chicken noodle soup and cook several minutes.

Fish pie.



I really love this fish pie, as I can prepare it a day before. This taste nice and easy to make. When you are busy with your work it s hard to cook after work. Prepare this the day before or before going to work. Once come back after work pop it in the oven and relax. Green chillies are optional and instead of dill you can add any herb that you like to add .

After baking leave the fish pie to rest several minutes to set.

Fish Pie

Ingredients

  • 500 g Fish Fillets
  • 250 g Prawns
  • 1 Onion
  • 1/4 cup Dill Leaves
  • 20g Butter
  • Salt
  • Pepper
  • 1/2 tsp Nutmeg
  • 1 tblsp stock powder
  • Several Green chillies (optional)
  • Bay leaves
  • 2 tblsp Plain flour
  • 1 Cup Milk
  • 1 cup Cheddar or mozarella cheese.

Method

  • Steam the fish about 10 minutes.
  • Add the buuter in to a pan melt the butter.
  • Add onion, Garlic and dill. Cook about a minute.
  • Add flour in to the Pan with the bay leaves .Cook the flour.
  • Then add the salt pepper and the nutmegAnd the chillies.
  • Then add the milk, mix well.
  • Make a smooth thick sauce.
  • Flake the fish. Dont  break the fish in to tiny pieces.
  • Add lime zest and the lime juice in to the fish.
  • Add enough salt & pepper in to the fish.
  • Pour the white sauce in to the fish and mix.
  • Then use ramekins or pyrex dish to pour the fish.
  • Spread cheese or bread crumbs on top.
  • Bake 180 about 20 min.

Cabbage with Sprimp & Coconut

Ingredients

  • Cabbage leaves ( Outer green leaves)
  • 1 Cup freshly grated coconut
  • 1 Onion
  • 3 Cloves of garlic
  • Mustard seeds
  • Oil
  • Several green chillies
  • Salt
  • 1/2 tsp tumeric powder.
  • Pepper.
  • 1 cup Washed dried shrimp

Method

  • Add some oil in to a pan and when oil is hot add some mustard seeds in to the oil.
  • Let them pop up.
  • Add garlic & onion and cook one minute.
  • Then  add the washed shrimp with green chillies pepper & tumeric.
  • Then add the cabbage and cook until tender.
  • Then add the freshly grated coconut..And salt. cook another minute.
  • If you like add some lime or lemon juice.

Ingredients

  • 2 CUps of Bread flour
  • 3/4 cup of warm water
  • 1 Tblsp Sugar
  • 1/2 Tsp Yeast
  • 1 Tsp salt
  • 1 Tblsp oil.

Method

  • Add warm water in to the mixing bowl.
  • Add yeast & sugar.
  • Leave it to activate.
  • When yeast has activated add flour, salt, and oil and knead about 10 -15 minutes.
  • Pu the prepared dough in to a greased bowl & leave in a warm place to double
  • When it is double in size punch down and devide the dough in to equal parts.
  • Take the dough and make balls and leave it to double in size.
  • Egg wash and bake it on 180.

  • 1 large cutlet Spanish Mackeral
  • Salt
  • Bread Crumbs
  • Flour
  • Egg wash
  • Curry powder
  • Chillie Powder

  • Oil for Frying

Method

  • Add all the spice on to the mackeral.
  • Then add salt and lime juice.
  • Massage the fish cutlet with the spices.
  • Leave it to marinate for 1 hour.
  • Make the egg wash.
  • Dip the marinated fish in the flour.
  • Then dip it in the egg wash.
  • Crumb it.
  • If you like double crumb the fish.
  • Fry the spanish mackeral until its golden brown,

Ingredients

  • 225 g Self raising flour
  • 3 Tblsp golden syrup
  • Pinch of Salt
  • 50 g Cocoa Powder
  • 2 Eggs
  • 85 ml Olive oil.
  • 200 ml Sour cream
  • 115g Brown sugar

Method

  • Grease 12 hole muffin tray.
  • Pre heat oven to 180.
  • Beat the eggs and the sugar.
  • Add oil, golden syrup  cocoa powder, Self raising flour & salt.
  • Mix it adding sour cream.
  • Pour in to muffin holes.
  • Bake 20 - 30 min.

Ingredients

  • 1/2 Cup Dates
  • 1/4Cup Walnuts
  • 1/2 Cup Boiling water
  • 30 g Butter
  • 1 Cup Self raising flour
  • 1 Egg
  • 1/4 tsp Bicarb
  • 1/2 cup of Brown sugar

Method

  • Pour the boiling water in to a pan and add butter and sugar and boil it.
  • Add dated and bicarb in to the pot.
  • Leave it a minute.
  • Add all the other ingredients to the pot. 
  • Spray the tin and  put it in to the tin.
  • Bake 180 about 50 -60 minute. Cool on wire racks
  • Slice and serve with butter.

Stir Fried Dried Anchovies/ Keeramin Baduma

Ingredients


  • 1kg Desiree potatoes
  • 350ml Cream
  • 125 ml milk
  • 150 g shredded bacon
  • 90 g shredded mozarella or cheddar cheese
  • 2 large onions finely sliced
  • Salt & pepper
  • Stock cubes or stock powder

Method

  1. Add stock powder to the cream.
  2. Add milk to the cram
  3. Add a layer of potato, then onion and then the bacon.
  4. Repeat it until finish all. FInish with potatoes
  5. Add the mixed cream
  6. Cover with a foil & bake on 180 about half an hour.
  7. Sprinkle cheese on top.
  8. Bake another half an hour.

Tea Rusks /Hulang viskoththu (Sri Lankan Style)

Masala Dosa


Masala Dosa

Ingredients

For Dosa

  • 1 Cup of  Urud Dhal
  • 1 Cup rice flour
  • 2 cups water

For the Filling

  • Potatoes
  • 2 Onions
  • Salt
  • 2 Red Chillies
  • Cinnamon
  • Pandan Leaves
  • Chillie Powder
  • Chillie Flakes
  • Tumeric Powder
  • Fennel Seeds
  • Cumin Seeds
  • Mustard Seeds

Method

  1. Mix all the ingredients for the dosa. 
  2. Leave several hours or over night to rest.
  3. Boil potatoes.
  4. Add oil in to a pan fry curry leaves ,chillies and  cinnamon.
  5. Add mustard,fennel and cumin seeds and let it splutter.
  6. Add onions cook several minutes
  7. Add the spices.
  8. Add the potatoes. Cook 5 min.
  9. Pour one spoon ful batter in to a pan and spread it. Then once cooked add a spoon ful of the potato mix on to the middle of the dosa and cover from the other end. Serve hot.



Pickled Corned Beef



How to cook pickled Corned Beef


Ingredients

  • 1 kg Corned silveside
  • Enough water to cover the meat
  • Vinegar
  • 1 Orange cut in to pieces
  • 1 Onion
  • 1 Tblsp brown sugar
  • Peppercones
  • Bay leaves
  • Cloves
Method

Put all the ingredients in to a pot and cook simmering about 1 hour.

Lamprais (Lump Rice) (+playlist)



Lampraise is a dutch influenced, a very rich rice dish very famous among all Sri Lankans. The banana leaf wrapping gives  the rice and the curries with an authentic aroma and a taste unique to this dish. Its really expensive to buy. If you give it a try, the money spent on one packet enough to buy ingredients to serve four people.

Try to make some curries a day before or when you have time.This recipe has changed a lot and some use seeni sambol instead of onion salad, then fried eggs and fried potato and ash plaintain curry. I just tried to stick to  the correct recipe.The banana leaf is an important part of Lamprais because it gives the food a special flavour and fragrance once it is steamed or baked together. Do not wrap this in plastic wrapings. I t will not taste the same.

Ingredients for the Rice


  • 3 Cups Rice
  • Onions
  • Curry Leaves
  • Pandan Leaves
  • 20 g Butter
  • Cinnamon
  • Cardamon Seeds
  • Cloves
  • Pepper corns
  • Garlic
  • 6 Cups of water
  • Tumeric Powder
  • Coconut milk (Optional)

Method

  1. Add Butter and all the ingredients and fry until it releases the aroma.
  2. Then add rice and fry the rice and add water and tumeric powder. 
  3. Cook the rice and put the coconut milk if you like.


Ingredients for the Brinjal Pickle

  • 3 large Egg plants deep fried
  • 1 Tblsp mustard seeds
  • 1 Tsp Tamarind juice
  • 3 Tblsp vinegar
  • Salt
  • 1 Large Onion
  • 1 Tsp Ginger
  • 1 Tblsp Garlic
  • 1 Tblsp Chillie Powder
  • 1/2 Tsp Tumeric Powder
  • Fresh Chillies
  • Curry Leaves
  • Cinnamon
  • Pandan Leaves
  • 1 Tsp Sugar
  • 1/2 Tsp Cumin Seeds
  • 1/2 Tsp Fennel Seeds
  • 1Tblsp Maldive fish flakes
  • 1/2 Cup Thick Coconut milk
  • 1Tblsp Oil

Method

  • Add a tablespoon oil in to a pot.
  • Add the Onions, Garlic & Ginger,Curry leaves, Cinnamon , Pandan leaves,Fennel, mustard seeds & Cumin seeds.Cook 2 minutes.
  • Add tamarind,chillie powder, tumeric powder,chillies,maldive fish flakes  sugar, vinegar,& salt. Cook another minute.
  • Then add the fried egg plants about 2-3 minutes until it absorbs all the flavours.
  • Add coconut milk & cook until it becomes a dry curry.

  • 500g freshly grated coconut
  • 700g Sugar
  • 1 Tblsp crushed cardamon seeds
  • Food Colouring
  • Vanila
  • 1 can condensed milk

Method

  1. Add all the ingredients in to a pot
  2. Stir until it comes off the pan and sets.
  3. Put on to a floured board and leave to cool down.
  4. Cut in to desired size pieces.

  • 250g Chicken
  • Parsley
  • 1/2 cup leeks
  • 1 Green capsicum
  • 1 Small carrot
  • 1/2 cup Cheddar cheese
  • 2 Green chillies
  • 1 Tblsp Garlic
  • 1 Tblsp Crushed Pepper
  • 1 Tsp stock powder
  • 1Tsp Cumin powder
  • 1 Tblsp Plain flour
  • 50ml White win
  • 4 Cups macaroni (Cooked)

Method

  1. Add oil in to a pan.
  2. Add onions & garlic.
  3. Fry  several minutes & add garlic
  4. Add chicken & all the spices and cook until it is brown.
  5. Add wine and cook with the wine 5 min.
  6. After cooking the chicken add salt,chilles ,carrot and cook 1 min.
  7. Next add capcicum and leeks. Cook 1 min.
  8. Add milk & cream.Bring it to boil.
  9. Then add plain flour and cook until it thickens.
  10. Add cheese & pasta. Cook until it absorbs all the flavours.

Ingredients

  • Some Chicken Drumsticks
  • 1 Tsp Paprika
  • 1Tblsp Garlic Powder
  • 1 Tsp Pepper
  • Salt
  • MSG/Stock Powder
  • 11/2 cups milk
  • 2 tblsp vinegar
  • 11/2 cups plain flour
  • Salt
  • 1 Tsp baking powder
  • 1Tblsp Garlic Powder
  • 1 Tsp paprika
  • Pepper
  • Dried basil & origano

Method

  1. Add the chicken and the first six ingredients to a bowl and leave several hours in the fridge to marinate.
  2. Add vinegar to milk and leave 5 min.
  3. Add flour ,herbs,baking powder,salt and the spices.
  4. Dip the chicken in butter milk and coat that in flour well
  5. Deep fry until golden brown.
  6. If the chicken is still pink cook in the oven for several minutes.

Ingredients

  • 500g Diced Chicken
  • Salt
  • 2 Eggs
  • 2 tblsp Oil
  • 3 Tomatoes
  • 2 Tblsp Yoghurt
  • 1/2 cup Thick cocnut milk
  • Curry Leaves
  • Green Chillies
  • Cinnamon
  • 1 Onion
  • 1 Tblsp Garlic, & Ginger
  • Corriander powder
  • Cumin Powder
  • Tumeric Powder
  • Crushed Pepper
  • Fenugreek & Cardamom seeds

Method

  1. Add salt ,Ginger & garlic and season the chicken.
  2. Add 1 tblsp oil & fry the chicken until golden brown.
  3. Transfer the fried chicken in to another bowl.
  4. Add 1 tblsp oil in toa pan.
  5. Add curry leaves, onion,tomato cardamon and fenugreek seeds 
  6. Fry that several minutes.
  7. Add yoghurt in to the chicken.
  8. Then add that chicken mix in to the onion mix.
  9. Add all the spices with the green chillies& cook until it absorbs all the flavours.
  10. After several minutes add the thick coconut milk.
  11. Cook until there is no gravy.
  12. Beat the eggs with salt  and add the eggs in to the chicken.
  13. Pour around the chicken and cook until the eggs are set.
  14. Serve hot with rice.

  • Cocktail Frankfurts
  • 1 Cup plain flour
  • 1 Tblsp Sugar
  • 1/2 tsp Pepper
  • 1 Cup milk
  • Salt
  • 4 Tsp Baking powder
  • 1 Cup Corn meal
  • 1 Egg

Method


  • Add all the ingredients together and make a nice smooth batter.
  • Then insert skewers in to the frankfurts
  • Dip in batter. Shake to remove excess batter.
  • Fry in hot oil until golden brown.

Egg Cutlets (Sri Lankan Style)


Egg cutlets are little bigger than  normal cutlets. Its really easy and inexpensive to make. From this recipe I made 8 cutlets. If you make more, can freeze it upto 3 months for future use.
Egg Cutlets ( Sri Lankan Style)

Ingredients

  • 4 Boiled eggs
  • 3 Large boiled potatoes
  • 1 Onion finely chopped
  • 1 Can tuna or mackeral
  • Curry leaves
  • 2 cups Dry bread crumbs
  • Chillie Powder
  • Curry Powder
  • Pepper 
  • Tumeric powder
  • Fresh chillies
  • Salt
  • Oil for frying.

For the Batter

  • 1 Cup plain flour 
  • 11/2 cups water
  • Pinch of tumeric powder

Method

  • In to a hot pan add a table spoon ful oil and onion and curry leaves.
  • After a minute add the mackeral and spices and cook another minute.
  • Add enough salt to your taste.
  • Then add mashed potatoes.
  • Make the dipping batter add all the ingredients together.
  • When the mix is cool enough to handle take half of an egg and get a ball of mix and press together to make a nice ball covering
  • Dip in batter and crumb it. 
  • If you like double crumb the egg cutlets.
  • Deep fry until golden brown.
  • Serve with  tomato sauce.

This cake is very soft and moist. Omit nuts if you dont like nuts.You can serve this with butter scotch sauce as a dessert too.

Ingredients

  • 1 Cup of  Self raising flour.
  • 2  Eggs
  • 20g Cashew nuts and walnuts
  • 125g  Brown sugar
  • 3/4 tsp Bicarb
  • 1 Cup of hot water
  • 230g Dates.

Method

  • Add hot water to dates and bring it to the boil.
  • Add bicarb and leave to cool down.
  • Add butter and sugar in to a mixing bowl and mix well.
  • While mixing add the eggs.
  • Add nuts and self raising flour and mix well.
  • Next add the dates.
  • Mix and pour in to trays.
  • Bake 180 about 40 min 1 hour.
  • Cool on wire racks.

Ingredients

For the cake
  • 250 g Butter
  • 3 Eggs
  • 250g Caster Sugar
  • 340 g Self Raising Flour
  • 1 tsp Vanila
  • 180 ml milk
  • food coluring (two different colours)
For the icing
  • 180 g butter
  • 3 cups of icing sugar
  • Milk

Method

  • Preheat oven to 180 c/ or 160 fan forced.
  • Line a 22 cm cake tin with paper.
  • Beat butter & sugar.vanila
  • Add eggs
  • Afdd flours and mix several min.
  • Add the milk little by littleAnd mix for 2 minutes.
  • Devide the cake in to 3 equal parts.
  • Leave one as it is and add the colours in to the other two.
  • Spread each colour carefully on each layer and bake 30-40 min.
  • Cool on wire racks.
  • For icing add butter and icing sugar and add milk little by little and mix well.
  • Ice as you wish.

Ingredients

  • 2 Finely sliced 2 large potatoes
  • Leeks
  • Salt
  • Oil ( Coconut oil)
  • Garlic
  • 1 carrot finely sliced
  • Curry leaves
  • Pandan Leaves
  • Cinnamon
  • Cabbage
  • 2 onions sliced
  • Green chillies
  • Sri Lankan Curry powder
  • Pepper
  • Tumeric powder
  • Chillie powder
  • Bread crumbs
  • Oil for frying

For the roll batter

  • 2 Cups plain flour
  • 2 eggs
  • 500ml water.

For the dipping batter for rolls

  • Flour
  • water
  • Salt
  • Tumeric powder

Method

  1. Add oil in to a pan.
  2. Add curry leaves pandan leaves ,cinnamon & onions and fry.
  3. Next add potato, carrot, garlic,Green chillies and spices.
  4. While cooking above ingredients make the batter for pancakes adding flour, eggs, water. (Lump Free)
  5. Then make the next batter for dipping rolls before crumbing.
  6. Then add cabbage and leeks into the curry. and cook on low heat.
  7. Leave the curry to cool down,
  8. Make pan cakes
  9. Transfer that to a plate.
  10. Put a spoon ful of the mix in to the side of the pancake and roll it taking both flaps in. (Watch the video)
  11. Dip in the second batter & crumb it.
  12. Deep fry until golden brown.
  13. Serve with tomato sauce.

Fluffy Breakfast or Dessert Pancakes



This recipe is only for 5 medium pancakes. Please multiply according to your need. Serve this with jam and cream or a berry coulie with cream and ice cream.

  • 140 ml Butter milk
  • 20 ml Olive oil
  • Pinch of salt
  • Vanila
  • 1 Egg
  • Lime or Lemon Juice
  • 80 g Self Raising flour
  • 1/2 tsp Baking soda
  • 30 g Sugar

Method

  • Add all the ingredients together.
  • Mix it well.
  • Leave the mix in the fridge  for 30 min or more.
  • Leave a pan on the stove to be hot.
  • Pour a spoon ful of the mix in to the pan.
  • Cook both sides.
  • Serve with ice cream and fruit.
