Spanish Style Chicken & Vegetable Rice (One pot meal)
Ingredients
- 21/2 cups long grain rice
- Bay leaves
- 1 Cup Asparagus
- 1 cup Beans
- 2 Tomatoes cut in to chunks
- 6 Cloves of garlic
- Onion
- 1/2 cup red wine or stock water
- 1 Tblsp Cumin powder
- 1 Tblsp Coriander powder
- 1 Tsp chilli powder
- Salt & pepper
- 1/2 cup parsley
- 300g diced chicken thighs
Method
- Add oil in to a pan and cook garlic,parsley, bay leaves, onion and chicken .
- Brown the chicken and add all the ingredients
- Add water and cook in the oven for 35-45 min. Check the water levels and put more water to cook rice.
