Spanish Style Chicken & Vegetable Rice (One pot meal)
Ingredients
21/2 cups long grain rice
Bay leaves
1 Cup Asparagus
1 cup Beans
2 Tomatoes cut in to chunks
6 Cloves of garlic
Onion
1/2 cup red wine or stock water
1 Tblsp Cumin powder
1 Tblsp Coriander powder
1 Tsp chilli powder
Salt & pepper
1/2 cup parsley
300g diced chicken thighs
Method
Add oil in to a pan and cook garlic,parsley, bay leaves, onion and chicken .
Brown the chicken and add all the ingredients
Add water and cook in the oven for 35-45 min. Check the water levels and put more water to cook rice.
