My Mums Mixed Vegetable Curry
Ingredients
1/2 a Leek
1 cup Cabbage
1 Cup Beans
1 cup Carrot
Onion
Garlic
1 Cup Capsicum
Cinnamon
Rampe/ Pandan leaves
1 cup thick coconut milk
Curry powder
Turmeric powder
Chilli powder
Fenugreek seeds
2 Tblsp oil
Method
Add oil in to a pan and then fry pandan leaves, cinnamon, garlic and onions.
Next add sprats and fry several minutes.
Add carrots , beans with the spices & cook about three min.
Next add coconut milk, leeks, capsicum and cabbage.
