Christmas pudding
Christmas Pudding
Ingredients
90 g Raisins
210g Sultana
75g mixed peel
50g Cherries
150g Figs
3 Eggs
100g Self Raising flower
100g fresh bread crumbs
40g Almond meal
1/3 cup Brandy
150g brown Sugar
100g Butter
1 Orange (Zest & Juice)
1 Apple Finely grated
Method
Mix all the fruits with brandy, orange juice and leave over night.
Next day mix all the other ingredients and put that to a pudding bowl.
Cook about 4-5 hours on simmer until a skewer inserted comes out clean.
Cool on rack and leave covered in a cool dark place.
On the day serving steam one hour and serve hot with brandy custard.
