Hummingbird Cake
Ingredients
- - 2 Bananas
- - 440g of Pineapple
- - 2 Eggs
- - 175ml of Oil
- - 1/2 Teaspoon of Cinnamon
- - 1/2 Cup of Self Raising Flour
- - 1 Cup of Plain Flour
- - 1/2 Teaspoon of Ginger
- - 1/2 Cup of Decicated Coconut
- - 1/2 Teaspoon of Bi-carb
- - 1 Cup of Brown Sugar
Method.
- Preheat oven to180c.
- Prepare a 8x8 inch baking tray.
- Mash the bananas and mix all the ingredients in a bowl.
- Pour in to the baking dish and bake for about30-40 min.
