Butter Cream Icing



Butter Cream Icing

Ingredients


  • 11/2 cups (175g) Icing Sugar
  • Drop Of vanilla
  • 1 Tblsp Whipping/ Thickened Cream
  • 1/2 Cup (115g) Butter

Method

  1. Cream Butter about a minute.
  2. After add cream and vanilla and cream for 2 min. Always make sure to scrape the sides when mixing. Whisk on full speed.
  3. Next add icing sugar and mix on speed one. Then mix on speed 10 for 3 min continuously.
  4. Put the mix in a piping bag to pipe.

No Bake Cheesecake Cookie Slice



No Bake Cheese cake Cookie Slice

Ingredients


  • 2 packets Lattice cookies
  • 1 Tsp Vanilla
  • 1/1/2 Tsp Gelatine powder
  • 3 Tblsp Warm water
  • 125g Butter
  • 1 Block cream cheese (250g)
  • 150g Caster Sugar

Method

  1. Dissolve gelatine in water .
  2. Mix cream cheese and butter about 5 min.
  3. Add vanilla &sugar  and mix well.
  4. Scrape edges while mixing.
  5. Beat the mix until creamy.
  6. Use a slice pan and arrange cookies. Then Spread the prepared cream cheese mix and lay another cookie layer on top.
  7. Leave in fridge over night to set.
  8. Cut as you wish.

Ham & Seaweed Buns



Ham Rolls & Seaweed Buns (Simple Baking)

Ingredients


  • 560g Bread flour
  • 200ml Milk
  • 2 Eggs
  • 3g bread Improver
  • 9g instant Dry yeast
  • 3g Salt
  • 30g Sugar (Can Use more up to 75g)
  • 60g Butter
  • Sliced Ham
  • Sushi sheets

Method

  1. Add Bread flour, yeast, sugar salt and eggs and mix well.
  2. Next add milk and knead 5 min. 
  3. After add butter and knead 20 min.
  4. Leave the prepared dough in a greased bowl in a warm place until double in size.
  5. Put the dough on to the bench and knead and cut in to equal size pieces. 
  6. next cut one piece in to two  as one small and one a bit larger.
  7. Roll them to a rectangular shapes and put the ham in the middle and cover with the smaller piece.
  8. Seal well. Brush eggs and place the sea weed on top as showed in video and leave to prove.
  9. Next brush the tops with eggs and bake on 180c about 20 min or until golden brown.
  10. Cool on a wire rack.

Red Velvet Chocolate Chip Cookies



Red Velvet Chocolate chip cookies.

Ingredients


  • 100g Plain flour
  • 10g Cocoa Powder
  • 1 Egg
  • 60g Butter
  • 1 Cup (100g) Chocolate chips
  • 1/2 Tsp Baking Soda
  • 75g Sugar
  • 1 Tblsp Red food colouring
  • Pinch of Salt

Method

  1. Cream butter, sugar, cocoa powder and salt. 
  2. Add eggs , red colouring and mix well.
  3. Next add baking soda and plain flour.
  4. Mix chocolate chips.
  5. Take a tblsp size mix and make a ball and press down and leave on a cookie sheet,.
  6. Bake on 180c. about 20 min.
  7. Make sure not to bake long as it can go harder.

Roasted Chicken Buns (Simple Baking)

Ingredients


  • 560g Bread flour
  • 40g Butter
  • 11g Instant dry yeast
  • 25g Sugar
  • 2 Eggs
  • 40ml water
  • 4g Salt
  • Roux (20g flour + 200ml water cooked several hours before)

Method

  1. Add flour,roux, sugar, yeast , eggs, salt and water and knead until smooth.
  2. Next add butter and knead 25 min.
  3. Leave the prepared dough in a greased bowl to prove again.
  4. When the dough is ready  Put that in a greased bowl and leave in a warm place until double in size.
  5. When the dough is double in size Knead the dough on the bench and cut in to same size portions.
  6. Roll each to a rectangular shape.
  7. Next Put chicken and roll and cut on the top of the bun.
  8. Leave to prove again. Brush the tops with eggs.
  9. Bake on 180c about 25-30 or until golden brown.
  10. Cool on a wire rack.

Custard Cream Cookies


Custard Cream Cookies

Ingredients

  • 170g Softened butter
  • 2 Egg yolks
  • 60g Icing sugar
  • 60g Caster sugar
  • 2tsp Vanilla
  • 330g All purpose flour

For the custard cream

  • 110g butter
  • Yellow food colouring
  • 3 Tblsp custard powder
  • 150g Icing sugar

Method

  1. Preheat the oven to 180c.
  2. Prepare a cookie tray.
  3. Cream butter and sugar.
  4. Add egg yolks next and mix one min.
  5. After add vanilla and plain flour . mix well.
  6. Cut the cookies to your desired shapes.
  7. Put them on cookie sheets and bake 10-15min or until slightly brown.
  8. Mix all the ingredients for the custard cram until smooth.
  9. Cool on wire rack. When its completely cold pipe or spread icing mix and sandwich them.
  10. Enjoy with a cup of tea or coffee.

Sandwich Braids


Sandwich Braids (Simple Baking)

Ingredients


  • 600g Bread flour
  • 150g Whole wheat flour
  • 20g Sugar
  • 75g butter
  • 8g salt
  • 10g Yeast
  • 300ml warm water.

Method.

  • Add flours, yeast sugar, butter, salt and mix well.
  • Next add water little by little and make a smooth dough.  
  • Keep on kneading about 25 min and leave in a greased bowl in a warm place until double in size.
  • Next add some flour on to the bench and punch the dough, knead on the bench about 2 min.
  • After cut the dough in to equal size portions.
  • Make braids as directed in the video.
  • Leave them to double in size.
  • When double in size Brush the tops with eggs and sprinkle some sesame or poppy seeds and bake them on 180c about 20-25 min or until golden brown on top.
  • Cool on a wire rack.
  • You can freeze these buns always to take when you want.

White and Dark Chocolate Fingers

Ingredients


  • 170g Plain Flour
  • 80g Butter (Room temp or softened)
  • 50g Icing Sugar
  • 20g Caster Sugar
  • 15g Cocoa Powder
  • 1 Egg
  • 30g White chocolate melts

Method

  1. Cream butter and sugars.
  2. Add egg, cocoa powder and mix well.
  3. Next add plain flour and mix about 2 min. (If the mix is too dry add several drops of milk to smoothen it. If not will be hard to pipe. Every thing depends on the size of the egg yolk)
  4. Put that in to a piping bag and bake on 170c about 10-15 min.
  5. Cool on a wire rack.
  6. Melt the chocolate and dip the cookies in.
  7. Let them harden on a baking sheet.
  8. Enjoy with a coffee.

Vanilla Bread Rolls (Simple Baking)

Ingredients


  • 380g Bread flour
  • 20g Sugar
  • 2 Vanilla pods
  • 1 Tblsp vanilla
  • Pinch of salt
  • 7g Instant dry yeast
  • 25g Butter
  • 2 Eggs
  • 100ml water or milk

Method

  1. Add flour yeast, sugar, vanilla, eggs and butter and mix well.
  2. Add water little by little until it makes a smooth dough.
  3. Put the prepared dough in a greased bowl and leave in a warm place until double in size.
  4. Next put flour on to the bench and punch the dough.
  5. Add more flour and knead on the bench until the dough is not sticky.
  6. Cut the dough in to equal size pieces.
  7. Roll as shown in the video and leave to prove again.
  8. When ready brush the tops with eggs and bake on 180c about 20-30 min or until golden brown on top.
  9. Enjoy with a savoury or a sweet filling.

Twisted Coconut Bread Sticks

Ingredients


  • 375g Bread flour
  • 60g Sugar
  • 1 Egg
  • 4g Salt
  • 6g Yeast
  • 50g Butter
  • 125 ml Warm milk

Coconut filling

  • 100g Desiccated coconut
  • 40ml Milk
  • 60g Icing sugar
  • 2 Eggs
  • 40g Melted Butter

Method

  1. Add melted butter , Icing sugar, milk and eggs and coconut. Mix well and leave aside.
  2.  Knead flour,yeast, sugar,butter,salt,egg,and milk together.
  3. Knead for 20 min.
  4. When the dough is ready leave in a warm place to double in size.
  5. After, Roll the dough in to a rectangular shape and spread coconut evenly on 3/4 of the dough.
  6. Fold as directed in video and cut in to strips.
  7. Twist the strips and leave to double in size.
  8. Brush the tops with eggs and bake 20 min on 180c.
  9. Cool on a wire rack .

Condensed Milk Cookies



Condensed Milk Cookies 

Ingredients


  • 100g Butter
  • 40g Sugar
  • 275g Plain Flour
  • 110g Condensed Milk

Method

  1. Add the butter and condensed milk in to the mixing bowl and mix well.
  2. Add Sugar and flour and mix well.
  3. If dry add more condensed milk.
  4. Put the dough on to the bench and roll to a thickness of your choice.
  5. Cut the dough to a desired shape.
  6. Bake on 180 about 10 min.
  7. Cool on a wire rack and store in an air tight container.

Strawberry Muffins



Ingredients:

  • 1 1/2 cups of self raising flour 
  • 1 cup strawberries 
  • 1 tsp vanilla 
  • 1/2 tsp bi-carb baking powder
  • 1/4 tsp salt 
  • 120ml of milk 
  • 125g caster sugar
  • 120g butter
  • 1 egg
Method:
  •  Preheat the oven to 180 degress. Add the butter, sugar and cream this on a medium speed for 2 minutes. Add the salt, egg and the vanilla  and mix this for another minute. Add the flour, baking powder, then mix this for about another 3 minutes.  Then slowly add the milk and mix until smooth and combined.
  • Add half of the strawberries into the mixture and fold it in, leaving the rest to decorate. Prepare a muffin pan of 12 with cupcake liners inside, fill the each cup with about 1 1/2 tbs of the mixture and then decorate the tops with strawberries.  
  • Place it in the oven for 15-20mins. Then let the muffins to cool down.

Sweet Coiled Bread



Sri Lankan Sweet Bread (Method)

Ingredients


  • 600g Bread flour
  • 300ml Warm water
  • 100g Sugar
  • 8g Salt
  • 70g Butter
  • 1/2 tsp Bread improver
  • 9g instant dry yeast
  • Jam or honey for the glaze

Method

  1. Add the bread flour , bread improver, yeast,salt ,sugar and mix well. after add water little by little and knead 10 min.
  2. Next add butter and knead another 20 min.
  3. When the dough is ready put the dough in to a greased bowl and leave in a warm place to double in size.
  4. Next cut the dough in to two.
  5. Roll the dough to a log  and roll like a coil.
  6. Leave to double in size.
  7. Next egg wash and bake 20 min on 180c.
  8. Take out and glaze the bread and bake another 10 min.
  9. Cool on wire rack.

Apple Cake (Simple Baking)



Apple Cake (Simple Baking)

Ingredients


  • 250g Plain flour
  • 1Tsp Bicarb (Baking Soda)
  • 2 Tblsp Honey
  • 1 Lemon
  • 600g Apples
  • 1/2 tsp Cinnamon
  • 1 Egg
  • 30 ml olive oil
  • 125g Sugar
  • 1 tsp Vanilla

Method

  • Add all the ingredients except lemon and apples. Mix well. It will look crumbly.
  • Next add lemon juice and apples. Mix well.
  • Grease 22cm cake pan. Put the mix in. Bake on 175c about an hour or until a skewer comes out clean.
  • Cool on wire rack.
  • Serve with cream and ice cream.
