Hummingbird Cake Ingredients - 2 Bananas - 440g of Pineapple - 2 Eggs - 175ml of Oil - 1/2 Teaspoon of Cinnamon - 1/2 Cup of Self Raising Flour - 1 Cup of Plain Flour - 1/2 Teaspoon of Ginger - 1/2 Cup of Decicated Coconut - 1/2 Teaspoon of Bi-carb - 1 Cup of Brown Sugar Method. Preheat  oven to180c. Prepare a 8x8 inch baking tray. Mash the bananas and mix all the ingredients in a bowl. Pour in to the baking dish and bake for about30-40 min.

Mini Sausages Rolls (Party Food / Finger Food) Ingredients - 500g of Beef Mince - 1 Cup of Fresh Bread Crumbs - 1/2 Cup of Parsley Leaves - 2 Eggs - 2 Onions - 1 Carrot  - Salt - 1 Teaspoon of Pepper Method Mix all the ingredients & pipe that on to the pastry sheets.  Roll the pastry and seal the edges. Cut in to eight and brush the tops with eggs and sprinkle the seeds Bake 180 about 20 min.

Oven Roasted Spicy Chickpeas Ingredients - 3 Cans of Chickpeas - 2 Tablespoons of Olive Oil - Salt - 1 Tablespoon of Cumin Powder - 1 Tablespoon of Paprika - 1/2 Teaspoon of Pepper - 1 Tablespoon of Garlic Powder - 1 Teaspoon of Fenal Powder Method Drain the chickpeas on paper towels until dry.  Then add salt and all the spices. Spread them on oven trays and bake on 180-200 c ablout 40- 50 min. (Check while roasting)

Green Beans with Coconut ( Bonchi Mallum) Ingredients - 200g of Green Beans - 1 Teaspoon of Mustard Seeds - Salt - Onion - Chillies - Curry Leaves - Cinnamon - Lime Juice - 1 Teaspoon of Curry Powder - Cumin Powder - Coriander Powder - Tumeric Powder - 1/2 Cup of Coconut - Oil Method Add oil in to a pan. Add spices  in to oil. Mix ground spices with beans. Add beans in to the oil. Then  cook several min. ( Dont over cook beans) Add coconut, take out and add lime juice. Serve hot.

Hokkien Noodles with Chicken & Vegetables Ingredients - 450g of Hokkien Noodles - 1  Tablespoon of Oyster Sauce - 1 Tablespoon of Rice Wine Vinegar - 2 Tablespoons of Soy Sauce - 1 Teaspoon of Fish Sauce - Oil - Mushrooms - 250g of Chicken - 1 Onion - 1 Capsicum - Carrots - Beans - 1 Tablespoon of Garlic - 1/2 Teaspoon of Ginger - Stock Cube Method. Add oil & fry ginger garlic. Then add chicken , mushrooms and the sauces, Next add other vegetables except bok choy. Cook several min. Add bok choy and cook several seconds and add noodles and mix.

Teriyaki Chicken (Quick & Easy Meals) Ingredients - 1 Kg of Chicken - 1 Tablespoon of Garlic - 1 Teaspoon of Ginger - 2 Tablespoons of White Wine - 3 Tablespoons of Rice Vinegar - Olive Oil - 2 Tablespoons of Brown Sugar - 1 Tablespoon of Paprika - Salt - 1/2 Cup of Light Soy Sauce Method Add all the ingredients in to a bowl and mix well. Leave in the fridge to marinate several days. After preheat grill to 200c put that in the top rack in the oven. Cook until juices runs clear or golden , Take out brush with the remaining sauce several times before taking out. Reduce the sauce  and serve with chicken.

BLT Sandwich

BLT Sandwich Ingredients 4 Slice of Bread - Butter - Mayonnaise - Lettuce - Bacon - Tomatoes Method Pan fry bacon until crispy and drain on paper towels. Toast the bread. Apply butter and mayo on each slice. Stack lettuce, bacon, and tomatoes and cover.  Cut in to triancles.

Cheese Kottu (Stir Fried Vegetables with Roti) Ingredients.  Godamba Rotti - 2 Onions - Cabbage - Leeks - Ginger - Garlic - Curry Leaves - Chillies  - Carrot  - Capcicum - Cheese - Eggs - Tomatoes  Method Heat oil in a pan or a grill and add eggs. Ham & Pineapple Pizza from Scratch Ingredients For the pizza Base 480 g Flour 2-4 Tblsp olive Oil 2 Tsp yeast 2 Tsp Sugar ( Sorry forgot to tell that in video) 2 Tblsp water Salt Nearly 1 cup water For the Tomato sauce/ Pizza Sauce 1 Can of diced or crushed tomatoes or 400g fresh tomatoes cut in to cubes. 1 Tblsp oil 1/2 tblsp Oregano 1/2 Tblsp Basil 1/4 cup parsley 1 onion cut finely salt Sugar For the topping 1 can pineapple cut in to triangles or fresh pineapple 1 cup ham (Shredded) 1 Cup Mozarella Cheese Method Mix ingredients for the base and knead 6 min and leave in a warm place to double in size. Spicy  Fish in a Creamy Coconut Sauce Ingredients Fish of your choice 1/2 cup Coconut milk 4 Tomatoes 2 Onions Salt Green Chillies Tumeric Powder Corriander Powder Chillie Powder Cumin Powder Cinnamon Curry Leaves Pandan Leaves Garlic Method. Add oil  & fry curry leaves, pandan leaves with ginger garlic and onions Add tomatoes next. Add all the spices. Add the fish in to the tomato base and mix and cover with the sauce and cook 2 min Add coconut milk and cook several min. Serve hot with flat bread , bread or rice.

Pasta Cabonara

Pasta Carbonara (Easy meals) Ingredients - 250g of Spaghetti - 1 Onion - Garlic - 1/2 Cup of Parsley - 2 Rashes of Bacon - 2 Tablespoons of Olive Oil - Salt - Pepper - 2 Eggs - 1 Cup of parmasan Cheese Method Boil Pasta. In another pan cook bacon,Then add onion & garlic. Cook several min. Beat eggs with parmasean cheese. Remove one cup of pasta water and leave aside. Add pasta in to the pan and toss with bacon. Then add the eggs and mix quickly with out lettling it to scramble. Then add pasta water and cook another minute. Add parsly and mix it. Serve with extra parmasan on top.

Spicy Tapioca (Cassava ,Manioc) with Cococnut. Ingredients. 500g boiled tapioca 1 cup freshly grated coconut oil pandan Leaves Curry Leaves Cinnamon 1 Tblsp Mustard seeds Red and Green chillies 1 Onion 5 Cloves of Garlic Tumeric Powder Cummin Powder Tomatoes Salt Method Boil Tapioca with tumeric or saffron adding salt to your taste. Fry the ingredients to get the aroma out. Add coconut and Tapioca. Mix well. Can serve as it is or with rice.

Baked Eggs with Vegetables

Baked Eggs with Vegetables... Ingredients - 8 Eggs - 2 Boiled Potatoes - Mushrooms - 1 Onion - 1/2 Cup of Dried Tomatoes - Chillies - 1/2 Cup of Cheese - 1 Leek - Salt - Pepper - Oil Method Add oil in to a pan and cook onions. Then add mushrooms and other vegetables. cook several min. Put them equally in to ramekins and then break eggs  and cover the vegetables. ( See the video) Sprinkle half of the cheese. Bake 180c fan forced about 5 min.  Sprinkle the remaining cheese  and bake again and until cheese melts. Serve hot as it is or with toasted bread.

Oven Baked Whole Fish with Garlic & Chillie Sauce. Ingredients - 1 Whole Fish - 1/2 of a Lime - 1 Tablespoon of Pepper - 1 Tablespoon of Brown Sugar - Salt - 1 Tablespoon of Fish sauce - 3 Tablespoons of Oyster Sauce - 5 Tablespoons of Soy Sauce - 1 Tablespoon of  Garlic Paste - Chillies Method Add all the ingredients in to a food processor and make a suce. Brush the fish with the sauce. Bake on 180c about 20 min. Then brush  with the sauce and again and bake uncovered another 5 min. Serve hot adding more sauce on top.

Chicken & Shrimp Rice Noodles (Quick & Easy Meals)

Chicken & Shrimp Rice Noodles Ingredients - 1 Packet of Rice Noodles - 1 Tablespoon of Fish Sauce - 1 Tablespoon Light Soy Sauce - 1 Tablespoon Dark Soy Sauce - Sesame Oil - 1 1/2 Cups of Shrimps - 2 Cups of Chicken - 1 1/2 Cups of Spring Onions - Red Chillies - 4 Eggs - Salt - 2 Stock Cubes - 1 Onion - 5 Cloves of Garlic - 250g of Bean Sprouts Method Add oil in to a pan and add garlic,Shrimp paste and Cook one minute. Then add onions and cook them several min. Add chillies and transfer to a bowl. Then add oil again and fry shrimp, then chicken & add sauces. Next make a well in the center and add eggs and scramble it. Add noodles spring onions and bean sprouts. Serve hot.

Tuna & Vegetables with Crusty Bread Ingredients Crusty Bread 1 boiled potato 1 boiled carrot 1 capsicum 3 tomato 1 can of tuna or minced meat Parsley Onion 1 Stock cube Chillies (Optional) Salt & Pepper Cream Oil Method Apply garlic or butter and toast the bread in the oven. Add oil and sautee onion and other vegetables and then add cram and parsley. Take the bread out and serve the vegiies on top.

Vegetable Pasties Ingredients - 3 Puff Pastry Sheets - 1 Potato - Onion - Leeks - Carrot - Ginger & Garlic Paste - Chillies  - 1 Stock Cube - 1 Egg Method Cook the vegetables in a little oil on low heat with out adding water. Cut pastry in to squares. Fill the mix and make pasties as instructed in the video. Bake 180 about 20-30 min until golden brown. Serve with tomato sauce.

Spanish Mackeral Curry (Thora Maalu Kirata) Ingredients - 500g of Spanish mackerel - 1 Cup of Coconut Milk - 1 Onion - Curry Leaves - Fenugreek Seeds - Cinnamon - Green Chillies - Curry Powder - Chillie powder - Pepper - Tumeric Powder - 2 Cups of Water Method.... Put all the ingredients except coconut milk in to a pot. Cook Several minutes adding salt to your taste. (Can add tamarind or tomatoes for sourness) Next add coconut milk and cook until boils. Macaroni & Cheese with Vegetables (Easy Meals) Ingredients - 1/2 of A leek - 2 onions - 1 Can of Corn - Cheese - 1/2 cup of Plain Flour - Broccoli - Olive Oil - Salt - Pepper - 500ml of Milk - 250g of Macaroni - 1/2 Cup of Parsley  Method Boil the pasta. Cook Vegetables in a little oil. Make the white sauce. Mix all of them together.

Sri Lankan Omlette Curry Ingredients - 6 Large Eggs - 1 Onion - 2 Chillies  - Pepper - Salt - Curry Leaves - Pundan Leaves - Garlic - Maldive fish Flakes - Green Chillies - 1 Tomato - Cinnamon - Fenugreek Seeds - 1 Cup of Coconut Milk - Oil - Chillie Powder - 1 Teaspoon of Curry Powder - Tumeric Powder Method Break the eggs and add salt pepper, leeks, onion and chillie along with the green part of the leeks. Add a table spoon oil and put the egg mix in to the pan and make an omlette . Cut that in to squares. Add  oil in to another pan & fry onion garlic and all the other aromatic spices. Next add the remain and fry several min and add the coconut milk. Cook several min adding the eggs, Serve hot with rice or bread.

Spicy Fish & Potato Jaffels Ingredients Tuna & Mackeral or one of them 3 onions finely sliced Chillies Salt & Pepper Butter 3 Boiled potatoes Finely sliced curry leaves or any herb to your taste. 1 loaf of bread Method Add oil in to a pan & fry curry leaves and onions. Next add chillies and spices. Then add the fish and cook several min. Add potatoes and lime juice and mix well. Butter bread, Add the mix and cover with another slice and cook in jaffel maker for 2 min. Cool on wire racks to avoid being soggy.

Add onion and garlic and cook one more min. Add sauces and cauliflower cook anothe min. Then add broccoli and leeks. Next add seasame seeds and spring onions. Serve hot.

Salmon & Vegetable Loaf (Quick & Easy Meals)

If you like to have a quick dinner this recipe will do it. If going to work can prep and leave in the fridge & then can bake it or prep ingredients and assemble them once come back. The vegetables in this can be steamed or sauteed. You can use any kind of a vegetable as you wish. Salmon &vegetable Slice Ingredients  1 Can of Salmon - 1 Carrot - Leek - 2 Onions - 1 1/2 Cups of Dhil Leaves - Salt - Pepper - Cream - 1/2 Cup of Cheese - 1 cup of Flour - 7 Eggs Method Add all the ingredients in to a bowl. Mix wll.  Put them in to a greased loaf pan or a tray. Bake 180 about 20-30 min.

Golden Syrup Dumplings

Golden Syrup Dumplings Ingredients - 1 Cup of Self Raising Flour - 1/3 Cup of Golden Syrup - 1/4 Cup of Milk - 20g of Butter - 1/3 Cup of Golden Syrup  - 1/4 Cup of Brown Sugar - 15g of Butter - 420ml of Water Method Add the first four ingredients and make a thick batter. If you find it very hard add a bit more milk. Add the second four ingredients in to a pot.Bring to boil. Next take two spoons and slowly drop them in to the syrup. reduce heat. Cook on simmering about 25-30 min. Serve with the syrup , cream or icecream.

Shrimp Salad (Kooni,Koonisso Sambal)

Dry Shrimp is available in any sri Lankan or Asian  grocery store.and please wash them well several times before using them. Shrimp Salad (Kooni /Koonisso Sambal) Ingredients 100g of Dried Shrimp 1 Tsp Oil - Salt - 2 Onions - Garlic  - Lime - Pepper - 1 Cup of Coconut Method..... Add a teaspoon oil and fry / dry roast the dried shrimp. Use a food processor or motor and the pestel or even a blender to drind the fine. Add the rest of the ingredients and mix well.

Simple Chicken Lasagna (Easy meals)

You can always adjust the amount of cheese and the layers in this recipe. If you dont like adding ricotta can omit that totally too. But cheese hold each layer together. Simple chicken Lasagna. Ingredients - 750g of Chicken Thigh Fillets - Bay leaves - Butter - 1/2 Cup of Plain Flour - Lasagne Sheets - Pepper - Salt - 1 Stock Cube - 1/2 Cup of Parsley - Chillies - Garlic - 1 Onion -2 cans tomatoes. -1/2 cup Parmasan cheese -350g Ricotta Cheese -1 cup Mozzarella Cheese Method Add chicken in to a processor and mince. Then add a bit of oil & fry onion garlic,and herbs. Then add chicken,and cook for several minutes. Then add tomatoes & cook about 45 min until the sauce thickens. In another pot add butter and flour and milk and make the white sauce. Next lay chicken mix lasanga chicken mix,parmasan cheese, white sauce and ricotta and continue three to four layers. Winter Melon Curry Ashguord / Puhul) Ingredients 1Kg of Winter Melon - Curry Leaves - Pundan Leaves - Salt - 1/2 Tablespoon of Maldive Fish Falkes - Fenugreek seeds - Cinnamon - Onion - Garlic  - Oil - Green Chillies - 1/2 Cup of Coconut Milk - 1/2 Teaspoon of Chillie Powder - Tumeric Powder - Curry Powder Method Cut winter melon in to large cubes. Add all the ingredients except coconut milk in to the pot. Cook for 10-15 min. Add coconut milk. Enjoy hot with rice.

Mix veggies with salad dressing and arrange the cooked chicken & Vegetables on the flat bread. Roll and secure edges. If you like to warm & cover with a foil.use the foil while rolling . Then put in a sandwich press.

Ingredients - Flat Bottom Ice cream Cones - 180ml of Milk - 270g of Caster Sugar - 330g of Self Raising Flour - 1 Tablespoon of Vanilla - 3 Eggs - 250g of Butter - 125g of Butter - 2 cups of Icing Sugar - 2 Tablespoons of Milk  Method Preheat oven to 180. Stand ice cream cones on a muffin tray. Mix butter & sugar. Add eggs one by one. Next add flour and milk. Fill the mix in to a piping bag. Fill all the cones 2/3. Then bake for 20min. Leave to cool. Next make the icing adding butter icing sugar and milk. Fill a piping bag. Pipe the cones and decorate.

Leeks & Carrot Cannelloni

Leek & Carrot Cannelloni Ingredients - 2 Leeks - 1 Carrot - 1 Whole Onion - 1/2 Cup of Flour - 20g Butter - 1 Cup of Cheese - 2 Stock Cubes - fresh or cooked Lasagna Sheets - Milk To make the tomato sauce fry onion garlic and then add fresh or canned tomatoes. Season with salt & peppper. Cook until it becomes a thick sauce. Method Cook leeks and carrot  with any spice that you like. Prepare lasagna sheets according to the manufacturers instructions. Prepare th white sauce adding butter flour and milk. Make a tomato sauce or use a ready made one and put that to the bottom of the dish. Then lay the cannelloni and top with the white sauce. Then sprinkle the cheese. Bake on 180 about 20-30 min until the lasagna well cooked and golden brown on the top.

Ginger & Honey Steamed Pudding Ingredients 1 Egg 1 Cup self raising flour 3 Tsp Ginger 120g Brown sugar 160ml milk 3 Tblsp honey 1/2 tsp Bicarbonate soda 50g Butter Method Grease a Pudding bowl. Leave a pot of water to boil. To cover half of the pudding bowl) Add all the ingredients and mix well. Pour that in to the greased bowl Secure the lid Put in the boiling water. Steam one hour. Serve with cream or ice cream.
