Flapjack Slice

Flapjack Slice Ingredients 350g Rolled Oats 1/2 Cup Almonds 175g Golden syrup. 150g Butter 110g Brown sugar Method Add butter, brown sugar and sugar and bring to the boiling point in a pan. Mix with rolled oats and almonds Press in to 9x9 inch baking tray. Bake on 180c about 15-20 min. Store in an air tight container when cool.

Sunflower Bread Roll (Simple Baking)

Sunflower Bread Rolls (Simple Baking) ingredients: 500g bread flour 50g caster sugar  70g butter 150g sunflower seeds 7g yeast 6g salt 200ml milk 125ml water Method: Preheat the oven to 180 degrees. Into a mixing bowl add the flour, sugar, yeast, salt to the corner of the bowl and milk, then mix this on medium speed for about 5mins. While it's mixing slowly add the water to combine. After it's all combined add the butter and mic for another 20mins. When the dough is ready, place it in a warm place to double in size. Flour the bench, place the dough on top, and keep adding flour little by little until the dough isn't sticky on the outside. Then kneed the dough for bout 2-3mins until it's smooth and malleable.  Then cut the dough into equal sized pieces and leave it on the bench to double in size.  Then take one piece and using a rolling pin, roll it to a rectangle. Chocolate & Almond Slice

Chocolate & Almond Slice Ingredients 250g Butter 250 Chocolate Chips 2 Eggs 110g Self raising flour 85g Plain flour 1 Tblsp Milk 75g Sugar 1 Vanilla bean or 1Tsp Vanilla liquid 110g Almond meal 125 g White chocolate for the topping. Method Preheat oven to 180c. Add butter, Sugar and vanilla in to the mixing bowl and mix well. Next add eggs and all the other ingredients except the topping and mix well. Put that into prepared tray and press well.  Bake on 180c about 20-30 min. Cool completely on a wire rack. Melt the chocolate and put in to a piping bag. Pour over top. Cool and cut as you like, Enjoy with a cup of coffee.

Plain Yogurt Rolls

Plain Yogurt Rolls Ingredients For the first dough 125g Bread flour 50g Greek style yogurt 50ml cold milk 2g Instant yeast For the main dough 300g Bread flour 7g Salt 100g Yogurt 50g Butter 7g Yeast 100g Sugar 1 Egg 100ml Milk First dough Method Add the first dough,flour, yeast,egg,salt,sugar,yogurt and mix well. Add  milk little by little until it becomes a smooth dough and add butter and knead 15-20 min. When the dough is ready put the dough in to a greased bowl and leave in a warm place until double in size. When ready take out and put on to a floured bench and cut in to equal size pieces. roll the dough in to a log and flatten it and roll to a circle. Leave to prove. When doubled in size brush the tops with eggs sprinkle sugar and bake on 180c about 20 min. Cool on a wire rack.

Nutella Cake (Simple Baking) Ingredients 100g Butter 100g Nutella 2 Tblsp Cocoa powder 4 Eggs 1/2 Tsp Baking powder 200g Self Raising flour 200g Sugar Method Add Butter and sugar in to a mixing bowl and mix until creamy and fluffy Add nutella in to it and mix well. Then add eggs one by one and mix well. Add baking powder, cocoa powder, self raising flour and mix well. Prepare a 8 inch baking pan. Fill the mix and bake on 180c about 35-40 min.

Sri Lankan Fish Buns using whole-wheat flour (Simple Baking)

I ngredients: 400g wholemeal flour 200g bread flour 65g butter 8g yeast 8g salt 1/2 tsp of bread improver 1 tbsp caster sugar 375ml warm water Filling Ingredients:  1 large chopped onion 100g Mashed potato Finely chopped leeks 2 cans of mackerel or any other fish 1tsp of salt 1 tsp of pepper Filling Method: In a hot pan add some olive oil, add all four ingredients, and stir fry, until the mixture is soft and brown in colour. Method: Preheat the oven to 180 degrees .Into a standard mixer add the bread flour, wholemeal flour, bread improver, yeast, sugar and start mixing it, then gradually add the salt and water, then mix this for another 8mins on high speed. Add the butter then kneed for another 10-15mins. Once it's done, place the dough in a warm place until the dough doubled in size. Easiest no bake Vanilla Cheesecake

Easiest No Bake Cheese Cake Ingredients 300ml Whipped Cream 500g Cream Cheese 3 Tsp Gelatine Powder 250 g Sweet Biscuit 150g Caster Sugar 150g Melted Butter 1 Tsp Vanilla Strawberries or any other fruit for decorations Method Process the biscuits and add butter. Use a 20 cm Springform pan. Press the biscuit mix in to the pan and leave in fridge for several min. Put the gelatine in to a bowl with 2 tbsp of cold water and leave to soak. Warm that after in the microwave about 30 seconds. Then leave aside to cool down. Add cream cheese in to the mixing bowl with sugar. Add vanilla in to it too. Mix well. Add gelatine little by little in to the cream cheese and mix well. Take the base out and pour the cream cheese and flatten it well. Leave in fridge several hours or overnight, Release from pan slowly. Make sure to put the knife in boiling water to get a nice evenly cut piece.

Wholemeal Bread ( Simple Baking)

Wholemeal Bread (Simple Baking) Ingredients 350g Bread flour 150g Wholemeal flour 5g Salt 7g Yeast 30g Caster Sugar 310ml Warm Water 30g Butter Method Add the bread flour, wholemeal flour,sugar,salt,yeast and start mixing  adding warm water little by little until it becomes a smooth dough. Knead about 5 min. Next add butter and mix another 20 min. Leave the prepared dough in a warm place until it double in size. Next add the flour on to the bench, punch the dough and roll to a rectangular shape and roll to a log and put in a loaf pan. Leave to double in size again. Brush the tops with eggs and bake on 180c about 30-40min or when you tap it gives a hollow sound.  Cool on a wire rack.

Chocolate Cream Cheese Brownies Ingredients: For the chocolate brownies 200g Baking dark chocolate 200g Butter 250g Caster Sugar 35g Cocoa 100g plain flour 250 g Cream cheese 1/2 tsp Baking Powder  3 Eggs For the Cream cheese Filling 100g caster sugar 1 Egg Drop of vanilla Method  Melt chocolate it self in a microwave or over simmering water.. (Can Melt butter and chocolate together but need time to get that back to a thick consistency. ) Add Sugar eggs and butter (If didn't add to the chocolate mix) until creamy and pale in colour. After add flour, cocoa, baking powder and mix well. In to a another bowl add cream cheese,egg, sugar and vanilla and mix well. Into the prepared pan add the chocolate mix leaving about a cup of aside. Next add cream cheese mix on to the top and put the remaining brownie mix and using a fork swirl around. Hot dog buns Ingredients: 350g bread flour 15g caster sugar  8g salt 7g yeast 200ml warm water (may vary)  25g butter 2 cups chopped spring onions Pack of hot dogs Method: Preheat the oven to 180 degrees.  Mix the spring onions with 1/2 an egg and some mayonnaise,  then put it aside. Add the sugar, flour and yeast into a standard mixing bowl and mix for about 1mins on low speed, then add the salt  and gradually add the water. Mix this for about 5mins  on a medium speed. Then add the butter and kneed the dough for about 10mins on a medium speed.  Once the dough is done, place it bowl and keep it a warm place to double in size. Vanilla Madelines (Simple Baking)

Ingredients: 1000g self raising flour 100g butter 5ml lemon juice 80g sugar pinch of salt  2 large eggs 1/2 tsp of vanilla Method: Preheat the oven to 170 degrees. Add the butter, eggs ,sugar, vanilla, salt into a bowl and beat it with a whisk until combined. Then add lemon juice, and flour and mix this until smooth and combined. Using a madeline tray, spray it with cooking oil, then add about tablespoon in each mould, tap it on the bench to flatten it out. Then bake in the oven for about 20mins or until then spring back when touched.

Sesame Bread Rolls (Simple Baking) Ingredients: 600g Bread Flour 30g caster sugar 7g salt 8g yeast 60g butter 1/2tsp bread improver 300ml warm water Sesame seeds Method: Preheat the oven to 180 degrees, Add the bread flour, yeast, sugar, and bread improver into a standard mixing bowl, mix on low speed for about a minute then while mixing add the salt, then add the water little by little, until it makes a smooth dough.  Then while it's mixing on a high speed add the butter and mix for another 20min. Once it's done, place the dough in a bowl, cover it with a cloth and place in a warm area until it has doubled in size. Spread some flour on the bench and place the dough on the bench, then keep adding flour until the dough isn't sticky. Then cut the dough into 8 equal parts or as your desire. Cranberry & Yoghurt Cup Cakes Ingredients 200g Self raising flour 100g Dried Cranberries or any kind of a dried fruit A drop of Vanilla 70ml Milk 2 Eggs 120g Butter 125g Sugar 1/2 Tsp Baking Soda 160g Yoghurt Method Add the flour, sugar , butter, baking soda and youghurt and mix one minute. Add eggs vanilla, and mix well. Next add milk and cranberries. Prepare 12 hole muffin pan. Fill each and bake 180 about 20-30 min. Cool on a wire rack before storing.

Sugar Free Bread (Simple Baking) Ingredients For the over night dough 100g bread flour 1/4 tsp yeast 60 ml Cold water For the sponge dough 105 g Bread flour 70 ml boiling water Ingredients for the bread 350g Bread flour 6g Yeast 9g Salt Overnight dough Sponge dough 220ml Water 20g Butter Method Make the sponge dough and the overnight dough and leave in fridge over night. Add bread flour in to the mixing bowl with pre made 2 types of doughs, yeast and start mixing. While mixing add salt and water little by little and knead 6 min until it forms a smooth dough. Next add butter and keep on kneading another 20 min, Leave the prepared dough in a greased bowl in a warm place until doubles in size. When the dough is double in size cut in to 4 equal parts. Oats ,Sesame & Coconut Slice Ingredients 140g Desiccated coconut 70g Sesame seeds 125g Oats 120g Brown sugar 130g Plain flour 1 Tsp. Cinnamon powder 100g Cranberries 2 Eggs A drop of Vanilla 120g Golden Syrup 150g Butter Method Preheat oven to 180c or 350f. Grease and put baking papers to overhang. Weigh golden syrup to the mixing bowl and add all the other ingredients in to the mixing bowl. Use the paddle attachment and mix well until combines together. Press the prepared mix in to the baking tray. Bake about 30-35 min. Cool on wire rack. Cut as you wish. Can freeze or use for weeks in fridge.
