Thai Eggplants Curry with Garlic (Thalana batu Curry)

Ingredients

- 250g of Thai Eggplants
- 100g of Garlic
- Onion
- Curry Leaves
- Pundan Leaves
- Cinnamon
- Maldive Fish Flakes
- Fenugreek Seeds
- 1/2 Cup of Coconut Milk
- 1/2 Cup of Water
- Tumeric Powder
- Chillie Powder
- 1 Teaspoon of Curry Powder

Method.

  1. Add all the ingredients  in to a pot except the coconut milk.
  2. Cook several min and add coconut milk.
  3. Serve hot with rice.
