These pancakes are really quick & easy to make and its a full meal if you are a busy person. It takes only 5-10 min to prep and takes few minutes to cook. You can serve this with a chutney or can eat as it is. If you want to do it at night you can always make the batter in the mornig or even a day ahead and use it when you want.
Potato & Vegetable Pancakes
Ingredients
- Peeled potatoes
- Leeks
- Eggs
- Salt & Pepper
- Milk
- Chilles
- Cheese
- Flour
Method
- Grate the potatoes as fine as you can.
- Add all the other ingredients.
- Make a smooth batter.
- Pour on to a greased pan.
- Cook them until golden brown on both sides.
- Rest them on wire racks,
- Serve with a cutney.
