Lemon Puff Cookies
For the Cookie
- 50g Butter
- 35g Sugar
- 1 Egg yolk
- 1 tsp lemon zest
- 100g flour
For the icing
- 1 cup icing sugar
- lemon juice
- lemon zest
- Add all the ingredients and mix well.
- Cut the cookies after rolling the dough on the bench.
- Lay them on a baking sheet and bake on 180c about 10 min.
- Cool the cookies completely on a wire rack.
- Make the icing as directed.
- Put the icing in the middle and fix two cookies.
- Store in an air tight container.
