Fried Egg Curry
Ingredients
- - Boiled Eggs
- - Salt
- - Onion
- - Garlic
- - Pundan Leaves
- - Tomatoes
- - Green Chillies
- - Lime Juice
- - Cinnamon
- - Fenugreek Seeds
- - Curry Powder
- - Tumeric Powder
- - Chillie Powder
Method
- Add some oil in to a pot.
- When it is hot add the garlic,curry leaves, pandan leaves and onions. Cook several minutes.
- While frying the onions add cinnamon and the fenugreek seeds.
- Then add tomatoes and green chillies and cook another minute.
- Next, add the spices and salt to your taste.
- Then add coconut milk or cream.
- Cook until the sauce thickens.
- Then add the fried eggs.
- Cook several minutes.
- Serve hot.
