Cream of Pumpkin & Potato Soup.
Ingredients
- 700g of Pumpkin
- 2 Stock Cubes
- 2 Large Potatoes
- Onion
- 1 Stick of Celery
- Garlic
- Pepper
- 1/2 Cup of Cream
- Salt
- Oil
- 1 1/2 Litres of Water
Method
- Heat a tablespoon oil in a pan.
- Add onion, garlic, and celery.
- Then add all the other ingredients except cream.
- Bring to boil and simmer 1 hour.
- Puree the soup.
- Add cream.
- Bring to boil again and serve hot.
