Hummingbird Cake



Hummingbird Cake

Ingredients


  • - 2 Bananas
  • - 440g of Pineapple
  • - 2 Eggs
  • - 175ml of Oil
  • - 1/2 Teaspoon of Cinnamon
  • - 1/2 Cup of Self Raising Flour
  • - 1 Cup of Plain Flour
  • - 1/2 Teaspoon of Ginger
  • - 1/2 Cup of Decicated Coconut
  • - 1/2 Teaspoon of Bi-carb
  • - 1 Cup of Brown Sugar

Method.

  1. Preheat  oven to180c.
  2. Prepare a 8x8 inch baking tray.
  3. Mash the bananas and mix all the ingredients in a bowl.
  4. Pour in to the baking dish and bake for about30-40 min.

Ingredients

  • - 500g of Beef Mince
  • - 1 Cup of Fresh Bread Crumbs
  • - 1/2 Cup of Parsley Leaves
  • - 2 Eggs
  • - 2 Onions
  • - 1 Carrot 
  • - Salt
  • - 1 Teaspoon of Pepper

Method

  1. Mix all the ingredients & pipe that on to the pastry sheets. 
  2. Roll the pastry and seal the edges.
  3. Cut in to eight and brush the tops with eggs and sprinkle the seeds
  4. Bake 180 about 20 min.

Oven Roasted Spicy Chickpeas

Ingredients


  • - 3 Cans of Chickpeas
  • - 2 Tablespoons of Olive Oil
  • - Salt
  • - 1 Tablespoon of Cumin Powder
  • - 1 Tablespoon of Paprika
  • - 1/2 Teaspoon of Pepper
  • - 1 Tablespoon of Garlic Powder
  • - 1 Teaspoon of Fenal Powder

Method

  1. Drain the chickpeas on paper towels until dry. 
  2. Then add salt and all the spices.
  3. Spread them on oven trays and bake on 180-200 c ablout 40- 50 min. (Check while roasting)

Ingredients
- 200g of Green Beans
- 1 Teaspoon of Mustard Seeds
- Salt
- Onion
- Chillies
- Curry Leaves
- Cinnamon
- Lime Juice
- 1 Teaspoon of Curry Powder
- Cumin Powder
- Coriander Powder
- Tumeric Powder
- 1/2 Cup of Coconut
- Oil
Method

  1. Add oil in to a pan.
  2. Add spices  in to oil.
  3. Mix ground spices with beans.
  4. Add beans in to the oil.
  5. Then  cook several min. ( Dont over cook beans)
  6. Add coconut, take out and add lime juice.
  7. Serve hot.

  • - 450g of Hokkien Noodles
  • - 1  Tablespoon of Oyster Sauce
  • - 1 Tablespoon of Rice Wine Vinegar
  • - 2 Tablespoons of Soy Sauce
  • - 1 Teaspoon of Fish Sauce
  • - Oil
  • - Mushrooms
  • - 250g of Chicken
  • - 1 Onion
  • - 1 Capsicum

  • - Beans
  • - 1 Tablespoon of Garlic
  • - 1/2 Teaspoon of Ginger
  • - Stock Cube

Method.

  1. Add oil & fry ginger garlic.
  2. Then add chicken , mushrooms and the sauces,
  3. Next add other vegetables except bok choy. Cook several min.
  4. Add bok choy and cook several seconds and add noodles and mix.

Teriyaki Chicken (Quick & Easy Meals)

Ingredients

  • - 1 Kg of Chicken
  • - 1 Tablespoon of Garlic
  • - 1 Teaspoon of Ginger
  • - 2 Tablespoons of White Wine
  • - 3 Tablespoons of Rice Vinegar
  • - Olive Oil
  • - 2 Tablespoons of Brown Sugar
  • - 1 Tablespoon of Paprika
  • - Salt
  • - 1/2 Cup of Light Soy Sauce

  • Method
  1. Add all the ingredients in to a bowl and mix well.
  2. Leave in the fridge to marinate several days.
  3. After preheat grill to 200c put that in the top rack in the oven.
  4. Cook until juices runs clear or golden ,
  5. Take out brush with the remaining sauce several times before taking out.
  6. Reduce the sauce  and serve with chicken.

Ham & Pineapple Pizza from Scratch

Ingredients

For the pizza Base


  • 480 g Flour
  • 2-4 Tblsp olive Oil
  • 2 Tsp yeast
  • 2 Tsp Sugar ( Sorry forgot to tell that in video)
  • 2 Tblsp water
  • Salt
  • Nearly 1 cup water

For the Tomato sauce/ Pizza Sauce

  • 1 Can of diced or crushed tomatoes or 400g fresh tomatoes cut in to cubes.
  • 1 Tblsp oil
  • 1/2 tblsp Oregano
  • 1/2 Tblsp Basil
  • 1/4 cup parsley
  • 1 onion cut finely
  • salt
  • Sugar

For the topping

  • 1 can pineapple cut in to triangles or fresh pineapple
  • 1 cup ham (Shredded)
  • 1 Cup Mozarella Cheese

Method

  1. Mix ingredients for the base and knead 6 min and leave in a warm place to double in size.
  2. Make the tomato sauce sauteeing onion,and adding tomatoes and other ingredients.
  3. Cook the sauce until it becomes like a thick sauce
  4. When the dough is double in size divide the dough in to 2 equal parts.
  5. Roll on a bench top to the size of the tray. (If you are making small trays you can make several small ones.) (Try to make it thinner to get a crispier crust)
  6. Spread the sauce on the base.
  7. Next pineapple, ham and cheese.
  8. Bake 180 c about 15-20 min or until the cheese is golden brown and the base is crispy.

  • Fish of your choice
  • 1/2 cup Coconut milk
  • 4 Tomatoes
  • 2 Onions

  • Green Chillies
  • Tumeric Powder
  • Corriander Powder
  • Chillie Powder
  • Cumin Powder
  • Cinnamon
  • Curry Leaves
  • Pandan Leaves
  • Garlic

Method.

  1. Add oil  & fry curry leaves, pandan leaves with ginger garlic and onions
  2. Add tomatoes next.
  3. Add all the spices.
  4. Add the fish in to the tomato base and mix and cover with the sauce and cook 2 min
  5. Add coconut milk and cook several min.
  6. Serve hot with flat bread , bread or rice.

Ingredients
  • - 250g of Spaghetti
  • - 1 Onion
  • - Garlic
  • - 1/2 Cup of Parsley
  • - 2 Rashes of Bacon
  • - 2 Tablespoons of Olive Oil
  • - Salt
  • - Pepper
  • - 2 Eggs
  • - 1 Cup of parmasan Cheese

                  Method

                  1. Boil Pasta.
                  2. In another pan cook bacon,Then add onion & garlic. Cook several min.
                  3. Beat eggs with parmasean cheese.
                  4. Remove one cup of pasta water and leave aside.
                  5. Add pasta in to the pan and toss with bacon.
                  6. Then add the eggs and mix quickly with out lettling it to scramble.
                  7. Then add pasta water and cook another minute.
                  8. Add parsly and mix it.
                  9. Serve with extra parmasan on top.

                  • Boil Tapioca with tumeric or saffron adding salt to your taste.
                  • Fry the ingredients to get the aroma out.
                  • Add coconut and Tapioca.

                  • - 8 Eggs
                  • - 2 Boiled Potatoes
                  • - Mushrooms
                  • - 1 Onion
                  • - 1/2 Cup of Dried Tomatoes
                  • - Chillies
                  • - 1/2 Cup of Cheese
                  • - 1 Leek
                  • - Salt
                  • - Pepper

                  Method

                  1. Add oil in to a pan and cook onions.
                  2. Then add mushrooms and other vegetables. cook several min.
                  3. Put them equally in to ramekins and then break eggs  and cover the vegetables. ( See the video)
                  4. Sprinkle half of the cheese.
                  5. Bake 180c fan forced about 5 min. 
                  6. Sprinkle the remaining cheese  and bake again and until cheese melts.
                  7. Serve hot as it is or with toasted bread.

                  • - 1 Whole Fish
                  • - 1/2 of a Lime
                  • - 1 Tablespoon of Pepper
                  • - 1 Tablespoon of Brown Sugar
                  • - Salt
                  • - 1 Tablespoon of Fish sauce
                  • - 3 Tablespoons of Oyster Sauce

                  Method

                  1. Add all the ingredients in to a food processor and make a suce.
                  2. Brush the fish with the sauce.
                  3. Bake on 180c about 20 min. Then brush  with the sauce and again and bake uncovered another 5 min.
                  4. Serve hot adding more sauce on top.

                  4. Next make a well in the center and add eggs and scramble it.
                  5. Add noodles spring onions and bean sprouts.

                  1. Tuna & Mackeral or one of them

                  4. Add potatoes and lime juice and mix well.

                  If you like to have a quick dinner this recipe will do it. If going to work can prep and leave in the fridge & then can bake it or prep ingredients and assemble them once come back.
                  The vegetables in this can be steamed or sauteed. You can use any kind of a vegetable as you wish.

                  • - 1 Cup of Self Raising Flour
                  • - 1/3 Cup of Golden Syrup
                  • - 1/4 Cup of Milk
                  • - 20g of Butter

                  • - 1/3 Cup of Golden Syrup 
                  • - 1/4 Cup of Brown Sugar
                  • - 15g of Butter
                  • - 420ml of Water

                  Method

                  1. Add the first four ingredients and make a thick batter. If you find it very hard add a bit more milk.
                  2. Add the second four ingredients in to a pot.Bring to boil.
                  3. Next take two spoons and slowly drop them in to the syrup. reduce heat.
                  4. Cook on simmering about 25-30 min.
                  5. Serve with the syrup , cream or icecream.

                  • 100g of Dried Shrimp
                  • 1 Tsp Oil
                  • - Salt
                  • - 2 Onions
                  • - Garlic 
                  • - Lime

                  1. Add a teaspoon oil and fry / dry roast the dried shrimp.
                  2. Use a food processor or motor and the pestel or even a blender to drind the fine.
                  3. Add the rest of the ingredients and mix well.

                  You can always adjust the amount of cheese and the layers in this recipe. If you dont like adding ricotta can omit that totally too. But cheese hold each layer together.

                  Simple chicken Lasagna.

                  Ingredients

                  • - 750g of Chicken Thigh Fillets
                  • - Bay leaves
                  • - Butter
                  • - 1/2 Cup of Plain Flour
                  • - Lasagne Sheets
                  • - Pepper
                  • - Salt
                  • - 1 Stock Cube
                  • - 1/2 Cup of Parsley
                  • - Chillies
                  • - Garlic
                  • - 1 Onion
                  • -2 cans tomatoes.
                  • -1/2 cup Parmasan cheese
                  • -350g Ricotta Cheese
                  • -1 cup Mozzarella Cheese

                  Method

                  1. Add chicken in to a processor and mince.
                  2. Then add a bit of oil & fry onion garlic,and herbs.
                  3. Then add chicken,and cook for several minutes.
                  4. Then add tomatoes & cook about 45 min until the sauce thickens.
                  5. In another pot add butter and flour and milk and make the white sauce.
                  6. Next lay chicken mix lasanga chicken mix,parmasan cheese, white sauce and ricotta and continue three to four layers.
                  7. Add mozzarella on top and bake 180 about 30-40 min.
                  8. Bake until golden brown.
                  9. Leave the lasagna to rest & cut in to desired sizes.

                  • - 180ml of Milk
                  • - 270g of Caster Sugar
                  • - 330g of Self Raising Flour
                  • - 1 Tablespoon of Vanilla
                  • - 3 Eggs
                  • - 250g of Butter

                  • - 125g of Butter
                  • - 2 cups of Icing Sugar
                  • - 2 Tablespoons of Milk 

                  Method

                  1. Preheat oven to 180.
                  2. Stand ice cream cones on a muffin tray.
                  3. Mix butter & sugar.
                  4. Add eggs one by one.
                  5. Next add flour and milk.
                  6. Fill the mix in to a piping bag.
                  7. Fill all the cones 2/3.
                  8. Then bake for 20min.
                  9. Leave to cool.
                  10. Next make the icing adding butter icing sugar and milk.
                  11. Fill a piping bag.
                  12. Pipe the cones and decorate.

                  Leeks & Carrot Cannelloni




                  Leek & Carrot Cannelloni

                  Ingredients


                  • - 2 Leeks
                  • - 1 Carrot
                  • - 1 Whole Onion
                  • - 1/2 Cup of Flour
                  • - 20g Butter
                  • - 1 Cup of Cheese
                  • - 2 Stock Cubes
                  • - fresh or cooked Lasagna Sheets
                  • - Milk
                  To make the tomato sauce fry onion garlic and then add fresh or canned tomatoes. Season with salt & peppper. Cook until it becomes a thick sauce.

                  Method

                  1. Cook leeks and carrot  with any spice that you like.
                  2. Prepare lasagna sheets according to the manufacturers instructions.
                  3. Prepare th white sauce adding butter flour and milk.
                  4. Make a tomato sauce or use a ready made one and put that to the bottom of the dish.
                  5. Then lay the cannelloni and top with the white sauce.
                  6. Then sprinkle the cheese.
                  7. Bake on 180 about 20-30 min until the lasagna well cooked and golden brown on the top.

                  Ginger & Honey Steamed Pudding




                  Ginger & Honey Steamed Pudding


                  Ingredients


                  • 1 Egg
                  • 1 Cup self raising flour
                  • 3 Tsp Ginger
                  • 120g Brown sugar
                  • 160ml milk
                  • 3 Tblsp honey
                  • 1/2 tsp Bicarbonate soda
                  • 50g Butter

                  Method

                  1. Grease a Pudding bowl.
                  2. Leave a pot of water to boil. To cover half of the pudding bowl)
                  3. Add all the ingredients and mix well.
                  4. Pour that in to the greased bowl
                  5. Secure the lid
                  6. Put in the boiling water.
                  7. Steam one hour.
                  8. Serve with cream or ice cream.
