Coffee Cup cakes with Butter Cream Icing.........
- 175 self raising flour
- 85g butter
- 50 ml of milk
- 70g sugar
- 1 egg
- pinch of salt
- 1 tsp instant coffee or to your taste
- Preheat the oven to 180 degrees. Add the butter into a mixing bowl, with that add the sugar, and coffee for about 2 mins of medium speed. Then add the egg, mix for a 1min, then gradually add the flour and milk and mix for 5mins or so until smooth and combined.
- Using a 12 cup muffin pan, place the cupcake liners inside, then using an ice cream scoop or a tablespoon fill it about 3/4 of the liner for each cupcake and bake for about 15-20mins.
- Once the cupcakes have cooked and cooled down, you may decorate with buttercream icing or have it plain. If you do want know how to make butter cream icing, there is a separate video on my channel.
