Leaf Bread



Leaf Bread

Ingredients

  • 400g bread flour
  • 100g plain flour
  • 20g suger
  • 20g instant dry yeast
  • 20g butter
  • 5g salt
  • 300ml water

Method.
1-     Into mixing ball, add both flours, and then , sugar, yeast and the butter and salt to a corner where there is no yeast and start mixing about 25 minutes and keep on needing until it becomes a smooth dough.

2-    Then leave dough in a greased ball in a warm place until it becomes double in size.This door will be a bit rough dough.

3-   Now spread some flour onto the bench and press the door to make it flat and  cut it into four equal parts

4     Take it press it down with a roller into an oval shape and then leave it on a baking paper to prove  for about 30 to 40 minutes,

5     Then cut a few lines smoothly onto top to make a leaf bread and brush tops with egg and  then sprinkle the spices on top and bake them 180 for 5 minutes.

Chocolate Buns (Simple Baking)

Ingredients


  • 380g Bread flour
  • 125g plain flour
  • 100g Caster sugar
  • 60g Butter
  • 30g Cocoa powder
  • 165 ml warm water
  • 100ml milk
  • 1 Egg
  • 5g Salt
  • 8g Yeast

Filling

  • 300g Chocolate melts
  • 1Tblsp butter
  • 100g Whipping Cream

Method

  1. Add all the ingredients except butter and knead about 5-6 min.
  2. Next add butter and knead 25 min.
  3. Leave to prove.
  4. Melt butter and chocolate and add cream.
  5. Mix well and leave to cool and set.
  6. When the dough is ready put that on to the bench and cut in to equal size pieces.
  7. Roll to a circle and put 1 tsp full chocolate in to the middle and seal edges and roll.
  8. Egg wash and roll on almonds and leave to prove.
  9. Bake on 180c about 20-25 min.
  10. Cool on a wire rack

Ingredients


  • 50g Cocoa Powder
  • 2 Eggs
  • 1/2 Tsp Bicarb/Baking soda
  • 80g Butter
  • Pinch of Salt
  • 80g Whipping Cream
  • 80ml Milk
  • 200g Self Raising flour
  • 160g Chocolate chips
  • 80g Sugar

Method

  1. Cream sugar and butter.
  2. Add eggs one by one and mix well.
  3. Add flour and cocoa and mix well.
  4. Add chocolate chips   and put that to patty pans .
  5. Bake on 180c about 20 min.

Wholemeal Dinner Rolls



Wholemeal Dinner Rolls

Ingredients


  • 440g Bread flour
  • 160g Wholemeal flour
  • 1 Egg
  • 50g Butter
  • 30g Sugar
  • 6g Bread improver
  • 7g Instant dry yeast
  • 345ml Water
  • 3g Salt

Method

  1. Add flours,yeast, sugar,egg,Bread improver,butter and water and knead 25 min.
  2. Put the prepared dough in a greased bowl and leave in a warm place to double in size.
  3. When ready add flour on to the bench and punch the dough and knead several min until its not sticky.
  4. Cut the dough in to equal size pieces.
  5. Leave 10 min on the bench covering with a damp cloth.
  6. After roll the dough in to an oval shape.
  7. Roll from one end to the other.
  8. Put them on a baking sheet to double
  9. When ready brush the tops with eggs and bake on 180c about 20-30 min.

Chocolate Chip and Peanut Butter chip Cookies



Chocolate Chip & Peanut Butter Chip Cookies.

Ingredients


  • 75g Butter
  • 1/2 Cup sugar
  • 1/2 cup chocolate chips
  • 1/2 Cup peanut butter chips
  • 1 cup self raising flour
  • 1 Egg

Method

  1. Add butter, sugar and mix well.
  2. Add flour , and egg and mix until it comes to a soft consistency.
  3. Add the chips and mix well.
  4. Make balls and flatten a bit.
  5. Leave on cookie sheets and bake on 180c or 350f about 15-20min.
  6. Cool on a wire rack and store in an air tight container.

Blonde Brownies (Simple Baking)



Blonde Brownies (Blondies)

Ingredients


  • 65g Melted butter
  • 1 Cup Sugar
  • 2 Eggs (lightly beaten)
  • 2 Tsp Vanilla
  • 1 cup peanut butter chips or milk chocolate chips
  • 2g Salt
  • 1 cup dark chocolate chips
  • 320g Self raising flour
  • 11/2 cups almonds or any nut as you wish.

Method

  1. Melt butter and add sugar in to it and mix well.
  2. Add flour, salt and vanilla mix well.
  3. Next add the eggs and mix well.
  4. Add chips and the nuts and mix well.
  5. Flatten the mix in prepared tray.
  6. bake on 180c or 350f about 20-30 min or until a skewer goes through comes out clean.
  7. Cool completely and cut as you wish.
  8. Store in air tight containers.

Bacon and Egg Rolls



Bacon and Egg Rolls (Simple Baking)

Ingredients


  • 500g Bread flour
  • 7g Yeast
  • 1/4 tsp bread improver
  • 60g Butter
  • 20g Sugar
  • 230ml water
  • 3g Salt
  • 1 Egg

For the filling

  • Boiled Eggs
  • Fried or raw bacon.

Method

  • Make the bread dough by adding bread flour, yeast, egg, salt, sugar and water.
  • Knead about 5-6 min.
  • Next add butter and knead about 20 -25 min.
  • Leave the dough in a greased bowl to double in size.
  • When the the dough is ready punch down and cut in to equal size pieces.
  • Roll to an oval shape.
  • Put the bacon and half of the egg.
  • Roll as directed.
  • Leave to prove again.
  • When ready brush the tops with eggs and cut across the  buns several times and bake on 180c about 20-25 min. or until golden brown.

Cream Cheese Pound Cake



Cream cheese pound cake

Ingredients


  • 350g Butter
  • 3 cups flour
  • 3 cups caster sugar
  • 6 Eggs
  • 1/4 tsp Salt
  • 1 Vanilla bean
  • 1 block cream cheese

Method

  1.  Pre heat the oven to 180c or 350f.
  2. Grease one bundt pan.
  3. Cream butter and sugar.
  4. Add cheese after and mix for 5 min.
  5. Next add vanilla salt and eggs. 
  6. Mix well.
  7. Add flour and mix one min.
  8. Put the mix in to the pan and bake for 40-45 min.
  9. Make sure to put a tray with water to stop drying up the cake,
  10. Cool on wire rack.

Spinach, Capsicum and Cheese Buns



Spinach ,Capsicum and Cheese Buns (Simple Baking)

Ingredients


  • 750g Bread Flour
  • 400ml Water
  • 10g Salt
  • 40g Sugar
  • 12g Yeast
  • 60g Butter

For the filling

  • 150g Chopped baby spinach
  • 1 Cup shredded cheese (Any kind of a hard cheese)
  • 1 Large red Capsicum

Method

  1. First make the bread dough by adding bread flour, yeast, salt, sugar and water.
  2. Next add  butter when the dough becomes smooth.
  3. Knead the about 20-25 min and leave in a warm place to double in size.
  4. Chop the spinach and capsicum.
  5. when the dough is ready add the chopped veggies and cheese and mix well. (Can do hand kneading or use the machine for this step)
  6. Make buns as directed .
  7. Leave to double in size.
  8. Egg wash and bake about 20 min on 180c.
  9. Cool on wire racks. 
  10. Can freeze for future use or leave about 5 days in fridge in an air tight bag.

Home Made Vanilla Biscotti (Soft & Caky)

Ingredients


  • 90g Butter
  • 135g Sugar
  • 2 Eggs
  • 3g Salt
  • 2 Vanilla beans or 3tsp Vanilla
  • 11/2 tsp Baking powder
  • 250g Plain flour
  • Crystallised sugar for coating.

Method

  1. Preheat the oven to 180c.
  2. Add sugar butter and vanilla and mix well until creamy.
  3. Add salt,flour,baking powder, eggs and mix well.
  4. Make a log adding crystallised sugar to coat.
  5. Flatten it and bake for 25 min.
  6. Take out spray water and leave for five min.
  7. Cut in to thin slices.
  8. Arrange the slices on a baking sheet and bake until golden brown turning to both sides.
  9. Cool on wire rack and store in an air tight container.(Can leave for months)

Salmon Rings


Salmon Rings (Simple Baking)

Ingredients


  • 750g Bread flour
  • 35g Sugar
  • 12g Yeast
  • 1 Egg
  • 8g Salt
  • 60g Butter
  • 390ml Milk

Stuffing

  • Smoked Salmon
  • Shredded or sliced cheese

Garlic butter

  • Several cloves of garlic
  • 100g Butter
  • Chopped parsley

Method

  1. Make Garlic butter keep aside.
  2. Add bread flour,sugar, yeast, egg,salt,milk in to the mixing bowl mix add salt .
  3. Add milk and mix 6-8 min.
  4. Add butter and knead about 20-25 min.
  5. Leave the prepared dough in a warm place to double.
  6. When double take out punch on a floured bench.
  7. Cut the dough in to equal size pieces.
  8. Roll as instructed adding salmon and cheese.
  9. Leave to double again.
  10. Brush tops with eggs.
  11. Spread the garlic butter on top. Bake until golden brown.
  12. Cool on wire racks.

Tuna and Corn Cups



Ingredients:

  • 500g bread flour
  • 30g sugar
  • 7g salt
  • 40g butter
  • 1 egg
  • 8g yeast
  • 260ml warm water
  • 2cups of tuna
  • 1 cup mozzarella 
  • 3-4 corn cobs or canned corn drained.
Method:
  • Preheat the oven to 180 degrees. Add the flour, sugar, yeast and egg into a standard mixing bowl and mix on medium speed for about 1min. Then add the salt and water. mix this for about 6mins. Then add the butter an mix for 10-15mins until the dough is smooth. Then leave it in a warm place to double in size.
  • Mix the corn and corn together and leave it aside. Flour the bench, place the dough on top, keep adding flour  and kneed until it's smooth and not as sticky. Then cut it into 12 equal pieces. 
  • Take one piece, using a rolling pin roll it into a circle that will fit into a round cup, then spray the cup with cooking oil, place the dough inside making sure to cover all edges. Use a tablespoon or two of the corn mixture and place it inside the cup and top it off with cheese to cover the top. Bake for about 15-20min or until golden brown.

French Bread Rolls



Home made soft French Bread Rolls
Ingredients

  • 750g Bread flour
  • 150ml milk
  • 180ml water
  • 35g Sugar
  • 6g Salt
  • 10g yeast
  • 2 Eggs
  • 50g butter
Method
  • Add Bread flour, sugar, yeast,eggs,salt and mix one min.
  • Next add milk and water little by little and mix another 8 min.
  • Add butter and mix another 20 min.
  • Leave in a greased bowl to prove.
  • After add flour on to the bench and punch down.
  • Next cut in to 12 equal size pieces.
  • Make balls and leave on bench to prove 10 min.
  • Roll each piece in to a rectangular or oval shape and roll from one end to the other.
  • Leave to prove.
  • When ready brush the tops with eggs and bake on 180c about 20-30 min or until golden brown.
