Thai Style Red Chicken Curry
Ingredients
600g Diced chicken
Red chillies soaked
Kaffir lime leaves
500ml Thick coconut milk
Salt & pepper
30 ml oil
30 ml Fish Sauce
Onions or shallots
2 inches Ginger
1/2 tsp Turmeric powder
1 Stem lemon grass
1 tsp Shrimp paste
1/2 Tsp Cumin seeds
1 Tblsp Coriander seeds
Cinnamon
Pepper corns
6 cloves garlic
1 Tblsp Sugar
Method
Process the spices. Add oil while processing.
Put coconut milk in to a pot. and add the ground spice mix in to the milk.
After add chicken and cook for 20 min. Next add fish sauce.
