Serves: 3–4
Prep Time: 15 minutes
Cook Time: 20 minutes
Main Ingredients:

300g (about 2 cups) green beans, trimmed and cut into 2-inch pieces

1/4 medium onion, finely sliced
-
2–3 green chilies,
1 sprig curry leaves
-
½ turmeric powder
-
1 tsp Sri Lankan curry powder
-
¼ tsp chili powder (optional)
1/4 tsp fenugreek seeds
-
1 inch cinnamon
½ cup thick coconut milk
-
1 cup water
-
1 tbsp Maldive fish flakes (Optional ) (omit this if you are a vegetarian or a vegan)

Salt to taste
🍛 Instructions

Prepare the Green Beans:
Wash and trim the beans, cutting them into even 2-inch pieces. Set aside.

Add Green Beans,onion, chilli and curry leaves Add the Spices:
Stir in turmeric, curry powder, and chili powder, Maldive fish flakes. Mix well to release the aroma.

Simmer:
Pour water and add salt. Cook on low heat for about 10 minutes, until the beans are tender but not overcooked.

Finish with Coconut Milk:
Stir in the thick coconut milk and simmer uncovered for another 2–3 minutes until the curry slightly thickens. Taste and adjust seasoning.

Serve:
Remove from heat and serve warm with steamed rice, pol sambol, or parippu (lentil curry).
