Hot & Spicy Chicken Curry
Ingredients
- 500g Diced Chicken Thighs
- 1 red and green Capsicums diced
- 2 Onions diced
- Several red or green chillies sliced
- 1 Can tomatoes
- Several Curry leaves/ Coriander leaves
- 1/2 of a lime or a lemon
- 1 Tsp/ garlic and ginger
- 1 Tsp Chilli powder
- 1 Tblsp coriander powder
- 1/2 Tsp Onion seeds
- 1/2 Tsp fenugreek seeds
- 1 tsp cumin seeds
- Salt & pepper
Method
- Add oil into a pan and add the seeds to splutter.
- Next add garlic, ginger and curry leaves, capsicums and the onions and cook several min.
- Add chicken and cook 5 min.
- After add rest of the ingredients and slow cook until the gravy is thick about 25 min or more.
- Serve on plain rice.
