Bakery style Hot Cross Buns (Simple Baking)



Bakery Style Hot Cross Buns (Simple Baking)

Ingredients


  • 200g Bread Flour
  • 50g Plain Flour
  • 1 egg
  • 6g Yeast
  • 35g Butter
  • 100g Chocolate Chips
  • 80-100ml Milk
  • 1/4 Tsp Salt
  • 1 Tsp Cinnamon/ Mixed Spice
  • 50g Caster Sugar

For the Roux

  • 50g Bread Flour
  • 70g Hot water

For the Topping

  • 2 Tblsp Plain flour
  •  Enough water

Method

  1. Add Flours, sugar, yeast, egg, Sponge dough, Salt and Cinnamon or mixed spice and Start mixing adding milk little by little until it becomes a soft and smooth dough about 5 min and add butter next and keep on kneading another 10 min.
  2. After put the dough in a greased bowl and leave in a warm place until double in size.
  3. Next add chocolate chips and knead on the bench about 2-3 min.
  4. Cut the dough in to equal parts and roll it as instructed in the video and arrange the buns next to each other leaving space to prove on a baking tray.
  5. Pipe the topping and bake on 180c about 20-25 min.
  6. Cool on wire racks.
  7. You can freeze these and thaw as you needed.

Mexican Coffee Buns



Mexican Coffee Buns (Simple Baking)

Ingredients


  • 300g bread Flour
  • 30g Sugar
  • 30g Butter
  • 1 Egg
  • 5g Yeast
  • 2g Salt
  • 130ml Milk

For Topping

  • 80g PlainFlour
  • 1 Egg
  • 80g Icing Sugar
  • 80g Butter
  • 2 Tblsp Coffee
  • Cubed Butter (Optional)

Method

  1. Mix all the ingredients for the topping until smooth , then put the mix in a piping bag & put that in the fridge.
  2. Add flour, yeast, egg, sugar,Salt  and start kneading adding milk little by little for 5 min. Add butter & keep on kneading another 10 more min.
  3. When the dough is ready put that in a greased bowl and leave in a warm place until double in size.
  4. Next take the dough out and put that on to a floured bench.
  5. Cut this in to equal size pieces.
  6. After take one part and roll to form a ball.
  7. Leave on baking sheets to double in size again.
  8. Then pipe the topping (If you find the topping is hard take out several min before piping)  as instructed in the video and bake on 180c about 20 -30 min.
  9. Serve with a coffee.

Hot & Spicy Chicken Curry



Hot & Spicy Chicken Curry

Ingredients


  • 500g Diced Chicken Thighs
  • 1 red and green Capsicums diced
  • 2 Onions diced
  • Several red or green chillies sliced
  • 1 Can tomatoes
  • Several Curry leaves/ Coriander leaves
  •  1/2 of a lime or a lemon
  • 1 Tsp/ garlic and ginger
  • 1 Tsp Chilli powder
  • 1 Tblsp coriander powder
  • 1/2 Tsp Onion seeds
  • 1/2 Tsp fenugreek seeds
  • 1 tsp cumin seeds
  • Salt & pepper

Method

  1. Add oil into a pan and add the seeds to splutter.
  2. Next add garlic, ginger and curry leaves, capsicums and the onions and cook several min.
  3. Add chicken and cook 5 min.
  4. After add rest of the ingredients and slow cook until the gravy is thick about 25 min or more.
  5. Serve on plain rice.

Omelet Bread rolls (Simple Baking)



Omelette Bread Rolls (Simple Baking)

Ingredients

For the dough


  •  310g Bread Flour
  • 90g plain Flour
  • 7g Yeast
  • 5g Salt
  • 65g Butter
  • 1 Egg
  • 180ml Milk
  • 25g Sugar

For the Filling

  • 6 Eggs
  • 2 Salad onions
  • Some green Chillies
  • Salt & pepper

Method

  1. Add the flours, yeast, sugar, egg, salt and milk little by little and knead for 5 min.
  2. Next add Butter and knead for 10 more min.
  3. Put the prepared dough in a greased bowl and leave in a warm place until double in size.
  4. Make the omelette and cut in to strips
  5. When the dough is ready cut the dough to equal size pieces.
  6. Roll one piece in to oval or rectangular shape.
  7. Place the one omelette strip in the middle.
  8. Roll as instructed in the video.
  9. Leave on baking sheets to prove again and after brush the tops with eggs and bake on 180c about 20-25 min or until golden brown on top.

Lentil & Chickpea Patties



Lentil & Chickpea Patties (Quick & Easy Meals)

Ingredients


  • 2 Cans chick peas
  • 1 Can Lentils
  • 2 Salad onions
  • Salt & pepper
  • 1 Tsp Coriander powder
  • 1 1/2 Tsp Cumin powder
  • 1 Cup plain flour
  • 2 Eggs
  • Green chillies
  • 1 Tsp Garlic
  • 1 Cup Spring onions

Method

  1. Add oil in to a pan and cook onions until tender.
  2. Next add green chillies, garlic, spices and spring onions. Cook 2 min.
  3. Process the lentils and chick peas in a food processor.
  4. Mix with the cooked onion mix and add eggs to get it to the right consistency.
  5. Next add flour and get it to the right consistency to make patties.
  6. Put some oil in to a pan and leave to be hot on the stove,
  7. Drop the patties and cook on both sides until golden brown.
  8. Serve hot with a side salad and some sour cream.

Open Face Custard Buns



Open Face Custard Buns (Simple Baking)

Ingredients

For the roux


  • 15 g Bread flour
  • 65g hot water

For the main dough

  • Prepared dough mix
  • 110g Bread flour
  • 65g Plain or all purpose flour
  • 21//2 Thickened cream
  • 21/2 Milk
  • 6g Instant dry yeast
  • 50g Sugar
  • 20g Butter
  • 3g Salt
  • 40g Eggs

    For the Filling


    • 2 Tblsp Sugar
    • 2 Tblsp Thickened Cream
    • 2 Eggs
    • 1/4 Cup of milk

    Method

    1. Add the flours, yeast, sugar, roux, eggs, salt, cream and mix one minute. After add milk little by little later add butter and mix for 15 min.
    2. After the kneading process put the dough in a greased bowl and leave in a warm place until double in size.
    3. Meanwhile mix all the ingredients for the custard and leave in the fridge.
    4. When the dough is ready cut the dough in to equal size pieces and roll to a circle. Use muffin trays or disposable foil trays and put the dough in and make a ring (Watch video) and leave to prove.
    5. After press the proved dough slightly and fill the buns. Brush with eggs  and bake on 180c about 20 min or until brown and eggs are set.
    6. Cool on wire racks.

    Home Made Tomato Ketchup

    Ingredients

    • 2kg Tomatoes
    • 1 Cup Celery
    • 6 Cloves Garlic
    • Red chillies
    • 2 Onions
    • Bayleaves
    • 200ml Apple cider vinegar
    • 100g Brown sugar
    • 1/2 tsp cumin and coriander powder
    • 1 Stick cinnamon
    • 1 tsp groung ginger
    • 1/2 tsp Cloves
    • Salt 

    Method

    1. Add all the ingredients in to a pot and cook on simmer for 2 -3 hours.
    2. Pass the tomatoes through a sieve and store in serialised jars .

    Cream Cheese Bread Rolls



    Cream Cheese Bread Rolls (Simple Baking)

    Ingredients


    • 235g Bread flour
    • 20g Sugar
    • 3 g Salt
    • 4g Yeast
    • 110ml Warm Water
    • 1/2 of an Egg
    • 25 g Butter

    For the filling

    • 250g Cream cheese
    • Pepper
    • Lime juice
    • Or Sugar if you like sweet mix

    Method

    1. Add the bread flour, sugar, yeast, and egg in to the mixing bowl.
    2. Next add salt and water little by little to make a smooth dough. Keep on kneading for 5 min.
    3. Next add butter and knead another 10 more minutes.
    4. Put the prepared dough in to a greased bowl and leave in a warm place until double in size.
    5. Prepare the filling adding pepper and lime juice ot use sugar instead  of pepper to make sweet filling. Mix well and keep it aside.
    6. Take the dough out and cut in to equal size pieces.
    7. Roll each piece in to circle and fill with cream cheese. 
    8. Seal edges and press down and leave on baking sheets to prove again.
    9. Brush the tops with eggs ad bale on 180c about 20 min.
    10. Cool on wire racks.

    Thai Style Red Chicken Curry



    Thai Style Red Chicken Curry

    Ingredients


    • 600g Diced chicken
    • Red chillies soaked
    • Kaffir lime leaves
    • 500ml  Thick coconut milk
    • Salt & pepper
    • 30 ml oil
    • 30 ml Fish Sauce
    • Onions or shallots
    • 2 inches Ginger
    • 1/2 tsp Turmeric powder
    • 1 Stem lemon grass
    • 1 tsp Shrimp paste
    • 1/2 Tsp Cumin seeds
    • 1 Tblsp Coriander seeds
    • Cinnamon
    • Pepper corns
    • 6 cloves garlic
    • 1 Tblsp Sugar

    Method

    1. Process the spices. Add oil while processing.
    2. Put coconut milk in to a pot. and add the ground spice mix in to the milk.
    3. After add chicken and cook for 20 min. Next add fish sauce.
    4. Cook until the sauce thickens.
    5. Serve with rice.

    Easter Bunny Bread (Simple Baking)

    Ingredients


    • 260g Bread Flour
    • 25g Sugar
    • 8g Milk Powder
    • 4g Yeast
    • 2g Salt
    • 20g Butter
    • 1 Egg
    • 110ml Milk
    • Black writing icing or melted chocolate.

    Method

    1. Add bread flour, milk powder,sugar, yeast and egg and mix well.
    2. While mixing add salt and milk and mix for 5 min.
    3. Next add butter and keep on kneading for 10 more min.
    4. Put the dough in to a greased bowl and leave in a warm place to double in size.
    5. When its ready put flour on to bench and cut the dough in to two.
    6. Divide one in to to four and other half in to eight.
    7. Next do the bunny as described in the video.
    8. Leave to prove.
    9. Next brush the tops with eggs and bake on 180c about 20-30 min.
    10. Next leave to cool on wire racks.
    11. Using melted chocolate or writing icing draw the eyes and the mouth. ( If using chocolate use a tooth pick to write)
    12. Can freeze the left overs for future use.

    Mongolian Style Fried Rice (Quick & Easy Meals)

    Ingredients


    • 3 Cups
    • 1 Onion
    • 3 Cloves Garlic
    • Ginger
    • Salt
    • 1/2 tsp chilli powder
    • Pepper
    • 300g Cooked Chicken
    • 1 Cup Spring onions
    • 3 Eggs
    • Red & green capsicum
    • Shredded cabbage and spring onions
    • 1 Tblsp Oyster sauce
    • 3 Tblsp soy sauce
    • 2 Tblsp Chinese cooking wine

    Method

    1. Add oil in to a pan and cook garlic, ginger and onion until soft.
    2. Next, add capsicum and cooked chicken & cook two min.
    3. Make a well in the centre and add the chicken and let it set and then scramble it.
    4. Add chilli salt and pepper and the sauces mixed together.
    5. Next add shredded vegetables and spring onions & mix well.
    6. Serve with chutney or mixed sauce.

    Ingredients


    • 300g Bread flower
    • 160ml water
    • 50g sugar
    • 8g Yeast
    • 12g Milk powder
    • 5g Salt
    • 35g Eggs
    • 30g Butter

    For the Coconut Filling

    • 75g Desiccated coconut
    • 35g Eggs
    • 35g Butter
    • 30g Sugar

    Method

    1. Add the flour,yeast,egg, sugar, milk powder and mix well and next add salt.
    2. Start kneading for 5 min adding water little by little.
    3. Next add the butter and keep on kneading another 10 min.
    4. while mixing add melted butter, coconut eggs and sugar and mix well and make small balls.
    5. When the dough is ready knead it on the bench for two min & put that in to a greased bowl and leave in a warm place until double in size.
    6. When the dough is ready put that on to the bench and cut that in to equal size portions.
    7. Roll the dough and follow the video for next steps.
    8. Leave the prepared buns to double in size.
    9. Brush the tops with eggs and bake on 180c.

    Soft & Moist Milk Bread (Simple Baking)


    Soft & Moist Milk Bread (Updated) (Simple Baking)

    Ingredients


    • 300g Bread
    • 30g Sugar
    • 8g Yeast
    • 25g Milk powder
    • 1/2 cup Milk
    • 1/2 tsp Salt
    • 1 Egg
    • 50g Whipped cream

    For the roux

    • 20g Bread flour
    • 1/2 cup water

    Method

    1. Cook the roux ingredients and leave in fridge several hours or over night.
    2. Add the bread flour, roux,sugar,milk powder, yeast,salt , egg and whipping cream in to a mixing bowl and start kneading adding the milk little by little.
    3. Do not add all the milk at once as the it will vary on the size of the egg that you are using.
    4. Next Keep on kneading 15 min. (Make sure the that the kneading process and good yeast plays a big role in this recipe)
    5. After kneading put the dough on to the bench and and keep kneading another 2 min.
    6. Put the dough in a greased bowl and leave in a warm place until double in size.
    7. take the dough and put that on to a floured bench and divide in to 4 equal parts. 
    8. Use the instruction s in video to roll the dough.
    9. Put the dough in to a loaf pan to double in size again.
    10. Brush the tops with eggs and bake on 180c about 40 to 45 min. (Use the lower rack to bake bread if not using fan bake.)
    11. Cool on a wire rack.
