Doughnut Cookies



Doughnut Cookies (Simple Baking)

Ingredients


  • 60g Sugar
  • 50g Butter
  • 25g Eggs
  • 100g Flour
  • 1/2 Baking Powder
  • 1 tsp Corn starch
  • 1 tsp Cocoa  Powder

Method

  1. Cream butter and sugar and after add eggs , flour, baking powder and mix it until it becomes a smooth dough.
  2. Divide the dough in to two. Leave one part in mixing bowl and add corn starch in to that.
  3. Next add the other half add cocoa powder in to that mix until smooth and leave in a bowl in fridge several hours or over night.
  4. Crush and get the dough to the right temperature and  roll to a log.
  5. Cut each log to three and then roll to like a rope.
  6. Put the two colours on top of each and roll and cut that to the desired size. 
  7. Put them on baking sheets and bake on 170 on the top rack about 15-20 min.
  8. Cool on wire racks.
  9. Store in air tight jars or use a ribbon to pass all the cookies wrap and present them.

Baked Whole Fish with Spicy Tamarind and Chillie Sauce




Baked Whole Fish with Spicy Tamarind and Chilli Sauce

Ingredients


  • Whole trout or any other kind fish with soft flesh
  • 50g tamarind pulp
  • 1 salad onion or asian shallots
  • 3inches Ginger
  • 1 tblsp brown sugar
  • 5 Red Chillies
  • 50ml Fish sauce
  • Spring onions for filling and garnishing
  • Some shredded red chillies
  • Garlic
  • 30 ml olive oil or any other oil

Method


  1. Process all the ingredients except spring onions and chillies.
  2. Cut lines across the fish until you touch the bones.
  3. Transfer the fish on to a baking tray.
  4. Fill the cavity with some spring onion leaves.
  5. Fill the fish with the processed ingredients.
  6. Leave to marinate several hours.
  7. Bake on 180c about 10 min.
  8. Take out and sprinkle the chillies and spring onions and spray oil and cook further 10-15 min.
  9. Serve with plain rice.

Bakery Style Pretzels (Simple Baking)

Ingredients

For the sponge dough


  • 100g Bread flour
  • 1/4 tsp Instant dry yeast
  • 85ml water

For the Main dough

  • 510g Plain flour
  • 10g Salt
  • 55g Sugar
  • 7g instant dry Yeast
  • 300ml cold water
  • 11/2 olive oil

For the solution for dipping pretzels

  • 700ml cold water
  • 15g Bicarbonate of soda

For brushing pretzels

  • Softened butter

For Garnishing

  • Chocolate
  • Herbs Chopped finely
  • Sesame seeds
  • Almonds
  • Garlic or any topping ti your liking

Method

  1. Prepare the sponge dough and leave in fridge overnight.
  2. Add the flour,roux, sugar, yeast, salt and olive oil & knead 15 min adding water little by little.
  3. Put the prepared dough in a greased bowl until double in size.
  4. Flour the bench top and put the dough on to the flour and punchdown and cut the dough in to equal size portions.
  5. Roll the dough and make pretzels as directed in the video.
  6. Leave the prepared dough on baking trays to prove.
  7. Mix bicarb and water and dip the pretzels and leave them on baking trays, egg wash and bake 8 min on 190c.
  8. After apply butter and bake on 180c about 10 min.
  9. Brush the tops again with butter.
  10. Leave on wire racks to cool down. Garnish as you wish.

Mango Ice cream Slice



Mango Ice Cream Slice (Easy Desserts)

Ingredients


  • 1kg Mangoes
  • 200ml Full cream milk
  • 350ml Thickened cream
  • 1 Can condensed milk

Method

  1. Add the mangoes in to a food processor and puree it.
  2. Mean while heat the milk and cream and add it to a mixing bowl with condensed milk and beat continuously about 15 min.
  3. Next add the pureed mangoes in to the  whipped mix and pour in to a loaf pan (Use plastic wrapping to cover the loaf pan) and freeze several hours or over night.
  4. Serve with fruit salad or sliced mangoes on the side.

Watermelon Bread (Simple Baking)




Watermelon bread (Simple Baking)

This bread just tastes like normal Raisins bread.

Ingredients


  • 320g Bread flour
  • 145ml Water
  • 5g Yeast
  • 3g Salt
  • Green & Red food colouring
  • 40g Sugar
  • 50g dried Blueberries, Sultana, raisins or cranberries
  • 25ml oil
  • 35g Eggs

Method


  1. Add the flour in to a mixing bowl , yeast,sugar, eggs, Salt and water. Keep on mixing for 5 minutes.
  2. Next add oil and knead another 10 more min.
  3. When the dough ready put it in a greased bowl and leave in a warm place to double in size.
  4. When double in size divide the dough put in on to a floured bench top. Divide the dough in to two equal parts.
  5. Then divide one part in to two equal parts. (Watch video)
  6. Next add red or pink food colouring to the larger piece knead well.
  7. Leave one small piece as it is and and add green food colouring to the next knead and leave aside.
  8. Roll the pink dough and sprinkle the berries equally and roll to a log.
  9. Roll the white to a rectangular shape and cover the red as shown in the video.
  10. Next roll the green in to a rectangular shape and cover the prepared log. Secure the edges.
  11. Put in to a greased loaf pan and leave in a warm place until double in size.
  12. When it is ready take out and brush the top with eggs and bake on 180c about 20-30 min or until gives a hollow sound.
  13. Put on wire rack to cool down.

Banana Bread Rolls (Simple Baking)

Ingredients

For the Roux


  • 50g Bread Flour
  • 35ml Boiling water

For the Dough

  • 160g Bread flour
  • 50g Plain Flour
  • 40g Sugar
  • 3g Salt
  • 5g yeast
  • 80ml Cold Milk
  • 30g Butter
  • 30g Eggs
  • Almonds
  • Bananas

Method

  1. Add the flour , sugar, yeast in to a mixing bowl and mix well.
  2. Next add salt and egg, prepared roux and milk and keep kneading for 5 min.
  3. After add butter and knead 10 more min.
  4. Put the prepared dough in a greased bowl and leave in a warm place until double in size.
  5. Put the dough on to a floured bench and cut in to equal size portions.
  6. Take one part out and  roll to a rectangular shape.
  7. next put the banana in the middle and rool to a log.
  8. If you like sprinkle some brown sugar on to the banana and cover the dough and leave to prove. (Watch the video)
  9. Next brush the tops with eggs and sprinkle almonds. 
  10. Bake on 180 about 15 -20 min.

Ingredients


  • 8 Eggs
  • 1/4 cup roasted capsicums
  • 1 Cup Spring onions
  • 1 cup shredded Ham
  • 1/4 cup shredded cheese
  • Salt & Pepper

Method

  1. Mix all the ingredients together and fill muffin holes  and bake on 180 c about 10-15 min.

Chicken and Ham Bread Rolls



Chicken & Ham Bread Rolls ( Simple Baking)

Ingredients: 


  • 500g of bread flour
  • 180ml of water
  • 1 large egg
  • 20g full cream milk powder
  • 50ml of sunflower oil
  • 6g salt
  • 7g dried yeast
  • 30g caster sugar
  • 70ml of full cream milk

For the Filling

  • Roll of luncheon chicken and ham
  • Finely cut spring onions
  • Salad dressing, mayonaise or preferred sauce (optional)

Method:

  • Preheat the oven to 180 degrees
  • Add the flour, milk powder, sugar and the yeast, mix this on a low speed for about 2 mins. Add the milk, and water when the dry ingredients finish mixing. 
  • Then kneed this  on a low speed for about 7-8 mins until it becomes a soft dough, while it mixes add the oil and kneed for another 15 mins. 
  • When the dough done and is roughly sticky and soft, leave the dough in a greased bowl in a warm place until the dough doubles in size.
  • When the dough has doubled in size, flour the bench top and place the dough on top, flour the top of the dough and pat it down. Cut the dough into  12 or preferred equal sized portions. Then roll these pieces into small round balls.
  • Roll the rounds into small rectangles, onto the rectangle add two slices of ham, some spring onion and salad dressing. roll the rectangle into a cylindrical shape and tuck the end in. Repeat this for the rest of the dough pieces. 
  • Place the finished rolls on a baking tray (round or square) in a standing position and leave it to double in size in a warm place. 
  • After it's done proving, brush the top with some milk. Bake this for 180 degrees for about 20mins or until golden brown on top.
  • Once done, leave it to cool for for about 20mins or serve warm.

Nyonya Style Fried Rice (Quick & Easy Meals)

Ingredients

  • 200g fresh prawns
  • green part of spring onions for garnishing
  • 1/2 cup dried shrimp soaked in boiling water and washed 
  • Asian shallots or one large onion
  • 4 Red chillies (Fresh or if dried please soak them several hours)
  • Garlic
  • Salt & pepper
  • 1 Tblsp sugar
  • 3 Tblsp light soy sauce with one tsp dark soy sauce
  • 1-2 Tblsp Oil 
  • 4 cups cooked rice
  • 4 Eggs

Method

  1. Process the shrimp.
  2. Next process onion ,garlic & chillies.
  3. Add oil in to a wok and fry the processed onion mix for 5 min.
  4. After add prawns and cook 2 more min.
  5. Next add the processed dried prawns and cook two more min.
  6. After add the cooked rice & mix well.
  7. Next make a well in the centre and add the eggs and leave to settle. After start scrambling it and mix with the rice.
  8. Season with salt & pepper.
  9. Next add sugar, soy sauces and mix well.
  10. Add the spring onions. Mix well. 
  11. Serve hot.

Jaggery Cake (Hakuru Cake) 

Ingredients


  • 200g Jaggery
  • 200g Cashew nuts
  • 1/2 cup desiccated coconut
  • 200g butter
  • 100g sugar
  • 1 tsp baking powder
  • 1 tsp vanilla
  • Rose water or essence
  • 1 tsp mixed spice
  • 1/2 cup thick coconut milk
  • 3 Eggs
  • 200g Roasted semolina

Method

  1. Add butter in to semolina.Into that add cashew powder, desiccated coconut and coconut milk and mix and leave it aside.
  2. Next add the jaggery in to the semolina and mix well.
  3. Separate the eggs and add egg whites in to a mixing bowl and beat until it reaches the soft peak.
  4. Add sugar and egg yolks in to another bowl and mix well until pale in colour. Next add rose water, mixed spice and mix well.
  5. Next add the semolina mix in to the mixer.
  6. After add chopped cashews and mix well. Next fold the egg whites in to the yolk mix and pour in to the prepared baking tray (4x10 inch ) and bake on 160c about 30-40 min.

Cheese and Vegetable Stuffed Bread

Ingredients


  • 1 Crusty Bread
  • 1/2 of an onion
  • 1cup ham or bacon
  • 1/2 cup cheese
  • Salt & Pepper
  • Several Chillies (Optional)
  • Tomatoes
  • 1 Cup Spring onions

Method

  1. Cut the Bread diagonally and cut squares with out going deep in to the bottom.
  2. Add all the ingredients and season with salt and pepper.
  3.  Fill the squares with the prepared mix.
  4. Sprinkle cheese on top. 
  5. Bake on 180c about 10-15 min.
  6. Serve hot.

Heart Shaped Filled Buns (Valentines day simple Baking)

Ingredients

For the Dough


  • 230g Bread flour + 25g Plain flour
  • 125ml Warm milk
  • 42g Eggs
  •  25g Butter
  • 3 g instant dry yeast
  • 1 g Salt
  • 10g Sugar

For the Filling

  • Corn
  • Carrot
  • 1/2 Cup Diced Bacon
  • Green peas
  • Onion
  • 1/2 cup Mozzarella cheese

Method

  1. Add flour , yeast and sugar and mix well.
  2. Next add salt  and warm milk and continue mixing for 5 min.
  3. Next add butter and keep on kneading another 10 min.
  4. After put the dough in a greased bowl in a warm place until doubled in size.
  5. For the filling fry the ingredients in little oil and season with salt & pepper. (Make sure its just 2 min cooking. If not cant balance the colours) Leave to cool down.
  6. Take the dough and cut in to equal size portions.
  7. Next roll to a log as directed in the video.
  8. Cut the the bun in to two and turn to make a heart. (Watch video for more details)
  9. Leave on baking sheets to prove.
  10. Brush the tops with eggs and put the filling in and sprinkle cheese on top. 
  11. Bake 180c for 20-25 min.

Chickpea, corn and Zucchini Frittata



Chick pea, Corn & Zucchini frittata

Ingredients


  • 1 Can Chick peas
  • 1 Can' corn
  •  1/2 cup Cheddar cheese
  • 1 cup Green onions
  • 2 Zucchini finely grated (Squeeze them too)
  • Hand full of fresh mint leaves
  • 3 Eggs
  • 1/2 cup milk
  • 3/4 cup self raising flour or plain flour with 1 tsp baking powder
  • Salt & pepper

Method

  1. Process the chickpeas and in to that add all the other ingredients  and mix well.
  2. If you find its too runny add more flour.
  3. Leave a pan on the stove to be hot with a table spoon of oil.
  4. Put a spoonful of the mix in to the pan. Cook both sides until golden brown.
  5. Serve with sour cream or chutney.

Ingredients


  • 50g Butter
  • 40g Sugar
  • 90g Plain Flour
  • 15g Eggs
  • Green and pink Food colouring
  • Black sesame seeds

Method

  1. Mix butter and sugar in a mixing bowl.
  2. Add eggs and mix well too.
  3. Add flour and mix well until it becomes a smooth dough.
  4. Next divide the dough in to four and get 1/4 and put that in to a mixing bouland add green food colouring.
  5. Roll the dough as directed in video.
  6. Wrap and put in fridge several hours.
  7. Cut the dough to circles and then to half and put sesame seeds on top. Bake on 150c about 20-25 min.
