1 small onion, finely chopped

2 cloves garlic, minced

1 small green chili or red chilli ½ teaspoon chili flakes (optional, for heat)

½ teaspoon mustard seeds (optional, for flavor)

½ cup freshly grated coconut (or unsweetened shredded coconut)

Salt, to taste

Juice of ½ lime or lemon, for finishing
🍳 Instructions

Prep the Kale
Wash the kale thoroughly and remove any tough stems. Chop the leaves into bite-sized pieces and set aside.

Sauté the Aromatics
Heat the coconut oil in a large skillet over medium heat.
Then stir in the chopped onion, garlic, and green chili. Sauté until fragrant and the onion turns translucent, about 2–3 minutes

Cook the Kale
