Chocolate Cream Cheese Brownies



Chocolate Cream Cheese Brownies

Ingredients:

For the chocolate brownies


  • 200g Baking dark chocolate
  • 200g Butter
  • 250g Caster Sugar
  • 35g Cocoa
  • 100g plain flour
  • 250 g Cream cheese
  • 1/2 tsp Baking Powder 
  • 3 Eggs

For the Cream cheese Filling

  • 100g caster sugar
  • 1 Egg
  • Drop of vanilla

Method 

  1. Melt chocolate it self in a microwave or over simmering water.. (Can Melt butter and chocolate together but need time to get that back to a thick consistency. )
  2. Add Sugar eggs and butter (If didn't add to the chocolate mix) until creamy and pale in colour.
  3. After add flour, cocoa, baking powder and mix well.
  4. In to a another bowl add cream cheese,egg, sugar and vanilla and mix well.
  5. Into the prepared pan add the chocolate mix leaving about a cup of aside.
  6. Next add cream cheese mix on to the top and put the remaining brownie mix and using a fork swirl around.
  7. Bake on 180c about 40-45 min.
  8. Leave to cool completely.
  9. Cut as you wish always can freeze to take later.

Hot Dog Buns


Hot dog buns


Ingredients:

  • 350g bread flour
  • 15g caster sugar 
  • 8g salt
  • 7g yeast
  • 200ml warm water (may vary) 
  • 25g butter
  • 2 cups chopped spring onions
  • Pack of hot dogs

Method:


  • Preheat the oven to 180 degrees.  Mix the spring onions with 1/2 an egg and some mayonnaise,  then put it aside. Add the sugar, flour and yeast into a standard mixing bowl and mix for about 1mins on low speed, then add the salt  and gradually add the water. Mix this for about 5mins  on a medium speed. Then add the butter and kneed the dough for about 10mins on a medium speed.  Once the dough is done, place it bowl and keep it a warm place to double in size.
  • Flour the bench and place the dough on top, make sure to keep flouring if the dough is sticky, Then cut the dough into equal size pieces, then roll each of the pieces of dough into a rectangular shape, place a hog dog in the middle and roll the dough over the top of the hot dog to get a cylindrical shape, repeat for the rest of the dough pieces.
  • Using a knife, make a small opening across the top of the roll so you can see the hot dog, then using an egg wash brush the tops of the rolls, and spread some of the spring onion on top, then place these on a tray lined with baking paper into the oven for 20-25mins.

Vanilla Madelines (Simple Baking)



Ingredients:

  • 1000g self raising flour
  • 100g butter
  • 5ml lemon juice
  • 80g sugar
  • pinch of salt 
  • 2 large eggs
  • 1/2 tsp of vanilla
Method:
  • Preheat the oven to 170 degrees. Add the butter, eggs ,sugar, vanilla, salt into a bowl and beat it with a whisk until combined. Then add lemon juice, and flour and mix this until smooth and combined.
  • Using a madeline tray, spray it with cooking oil, then add about tablespoon in each mould, tap it on the bench to flatten it out. Then bake in the oven for about 20mins or until then spring back when touched.

Sesame Bread Rolls


Sesame Bread Rolls (Simple Baking)

Ingredients:

  • 600g Bread Flour
  • 30g caster sugar
  • 7g salt
  • 8g yeast
  • 60g butter
  • 1/2tsp bread improver
  • 300ml warm water
  • Sesame seeds

Method:

  • Preheat the oven to 180 degrees, Add the bread flour, yeast, sugar, and bread improver into a standard mixing bowl, mix on low speed for about a minute then while mixing add the salt, then add the water little by little, until it makes a smooth dough. 
  • Then while it's mixing on a high speed add the butter and mix for another 20min. Once it's done, place the dough in a bowl, cover it with a cloth and place in a warm area until it has doubled in size.
  • Spread some flour on the bench and place the dough on the bench, then keep adding flour until the dough isn't sticky. Then cut the dough into 8 equal parts or as your desire. Then leave it on the bench for about 10mins without any work on the doughs. 
  • Shape the pieces of dough into round balls and place it in a greased 2inch tray, and leave it to double in size. Once done, brush the tops with egg and spread some sesame seeds on top and bake in the oven for 20-30 mins or until golden brown.

Cranberry & Yoghurt Cup Cakes

Ingredients


  • 200g Self raising flour
  • 100g Dried Cranberries or any kind of a dried fruit
  • A drop of Vanilla
  • 70ml Milk
  • 2 Eggs
  • 120g Butter
  • 125g Sugar
  • 1/2 Tsp Baking Soda
  • 160g Yoghurt

Method

  1. Add the flour, sugar , butter, baking soda and youghurt and mix one minute.
  2. Add eggs vanilla, and mix well.
  3. Next add milk and cranberries.
  4. Prepare 12 hole muffin pan.
  5. Fill each and bake 180 about 20-30 min.
  6. Cool on a wire rack before storing.

Sugar Free Bread (Simple Baking)

Ingredients


For the over night dough

  • 100g bread flour
  • 1/4 tsp yeast
  • 60 ml Cold water

For the sponge dough

  • 105 g Bread flour
  • 70 ml boiling water

Ingredients for the bread

  • 350g Bread flour
  • 6g Yeast
  • 9g Salt
  • Overnight dough
  • Sponge dough
  • 220ml Water
  • 20g Butter

Method

  1. Make the sponge dough and the overnight dough and leave in fridge over night.
  2. Add bread flour in to the mixing bowl with pre made 2 types of doughs, yeast and start mixing.
  3. While mixing add salt and water little by little and knead 6 min until it forms a smooth dough.
  4. Next add butter and keep on kneading another 20 min,
  5. Leave the prepared dough in a greased bowl in a warm place until doubles in size.
  6. When the dough is double in size cut in to 4 equal parts.
  7. Roll each to rectangles and fold as shown in the video.
  8. Leave to prove again .
  9. When ready brush the tops with eggs,
  10. Bake on 180c about 30 min or until golden brown on top or when you tap it gives a hollow sound.
  11. Cool on wire racks.

Oats, Sesame and Coconut Slice


Oats ,Sesame & Coconut Slice

Ingredients


  • 140g Desiccated coconut
  • 70g Sesame seeds
  • 125g Oats
  • 120g Brown sugar
  • 130g Plain flour
  • 1 Tsp. Cinnamon powder
  • 100g Cranberries
  • 2 Eggs
  • A drop of Vanilla
  • 120g Golden Syrup
  • 150g Butter

Method

  1. Preheat oven to 180c or 350f.
  2. Grease and put baking papers to overhang.
  3. Weigh golden syrup to the mixing bowl and add all the other ingredients in to the mixing bowl.
  4. Use the paddle attachment and mix well until combines together.
  5. Press the prepared mix in to the baking tray.
  6. Bake about 30-35 min.
  7. Cool on wire rack.
  8. Cut as you wish. Can freeze or use for weeks in fridge.
