Cape Malay Chicken Curry
Ingredients
- 1kg Chicken drumsticks
- 2 large tomatoes
- 1 tblsp tomato paste
- 1 tsp garam masala
- 1 Tblsp Garlic
- 1 Tblsp Ginger
- 1/2 of a lime
- 1 Onion
- Green Chillies
- Pepper
- Chillie Powder
- Tumeric Powder
- 1 Tsp Cummin Seeds
- 1 inch cinnamon
- Cardamon
- Cloves
- Fennel seeds
- Corriander seeds
- Sugar to balance the acidity of the tomatoes
- Water to cover the chicken
- Oil for frying the spices
Method
- Crush or grind cinnamon,cummin,corriander,fennel, cardamon and cloves.
- Add oil in to a pan and fry the crushed spices.
- Add ginger,garlic,onion,tomatoes, chillies and fry several min.
- Next add spice powders and mix well.
- Add chicken and mix with spices.
- Add enough water and cook 1 hour on simmer.
- Add lime juice.
- Serve hot with rice, bread or flat bread.
