How to make Baguettes

Ingredients

First dough


  • 125g Bread flour
  • 75 ml Water
  • 1/2tsp yeast
  • 1/2 Salt

2nd Dough

  • 270g Bread Flour
  • 30g Plain Flour 
  • 200 ml Water
  • 1/2 tsp Yeast
  • 1 tsp salt

Method

  1. Mix all the ingredients to the first dough and knead 5 min and leave to prove 2 hours in a warm place.
  2. Next add the 2nd dough ingredients to a mixing bowl and then  knead adding the fist dough too in it adding water and knead 10 min.
  3. Leave to prove in a warm place.
  4. Next take the risen dough punch down and cut in to two equal parts.
  5. Roll to a rectangle and roll to a log and roll to rectangle again and roll to a log and place in a baguette pan or in a tray and leave to prove cutting tops in an angle slightly.
  6. Brush the tops when its double in size and bake 180 c until golden brown and once knock shold give a hollow sound.

Chicken & Vegetable Tortilla Stacks ( Quick & Easy Meals)

Ingredients

  • Tortilla wraps
  • 300g Cooked Chicken
  • 1 Cup Capsicum
  • 1 cup Cheese
  • 1/2 cup carrot
  • 6 cloves garlic
  • 2 large onions
  • Leeks
  • 1 Can Tomato
  • Salt & pepper

Method

  1. Add oil in to a pan add onion & garlic.
  2. Next add leeks.
  3. After add salt add capsicum and carrots with salt and pepper.
  4. Next add chicken & tomatoes. and cook several min.
  5. Take  tortilla wraps and put one in to a round tray.
  6. Next add a layer of mix on to it.
  7. After add a layer of cheese.
  8. Repeat it & finish with a layer of cheese.
  9. Bake 200c about 15-20 min or until the top is golden brown.
  10. Leave 5 min to rest before cutting.

Kurakkan ( Finger Millet /Ragi) String Hoppers




Kurakkan (Finger Millet/ Ragi) String hoppers

Ingredients


  • 1 Cup Kurakkan Flour
  • 1 Cup Rice flour
  • Salt 
  • Hot Water (around 90c)

Method

  1. Add both flours and salt in to  a mixing bowl.
  2. Add enough hot water to mix. (It has to be smooth but not runny)
  3. Mix several minutes.
  4. Next fill the string hopper maker.
  5. Use moulds press the mix. (Watch Video)
  6. Steam 2-3 min and press the string hoppers to see they are cooked. 
  7. Transfer to a plate and enjoy with a curry.

Mix Seafood and Vegetable Pasta



Mix Seafood & Vegetable Pasta

Ingredients


  • 500g Pasta
  • Tomato paste
  • 150g Prawns
  • 100g barramundi
  • 100g pink salmon
  • 100g Squid
  • 2 Tblsp cream
  • Salt & Pepper
  • Celery
  • Onion
  • Carrot
  • Garlic
  • Parsley

Method

  1. Boil pasta .
  2. Add oil to a pan and fry parsley, garlic, onion and celery.
  3. After add carrots then the tomato pate.
  4. Next add finish and prawns.
  5. Next add pasta and cream.
  6. Stir well and enjoy hot.

Microwave Chicken Curry



Microwave Chicken Curry

Ingredients


  • 500g Chicken thigh fillets cut in to cubes
  • Salt
  • Garlic
  • Onion
  • Chillies
  • Soy Sauce
  • 1 Tblsp white wine
  • 1 Tsp Curry powder
  • 1 Tblsp pepper
  • 1 Tsp Chilli powder
  • 1-2 Tblsp Vinegar

Method

  1. Mix all the ingredients with chicken.
  2. Next cook in the microwave 10 min.
  3. After take out mix again and cook 15 more min.

Tuna Bread Rolls (very soft & Moist)



Tuna Bread Rolls

Ingredients

For the Dough


  • 400g Bread Flour
  • 180g Plain/All purpose Flour
  • 10g Yeast
  • 1 Tsp Salt
  • 50g Sugar
  • 90g Butter
  • 130ml Water
  • 2 Eggs

For the filling

  • 2 Cans of Tuna
  • 2 Eggs
  • 1/2 cup Cheese
  • 1 Cup Spring Onions
  • Salt & Pepper

Method

  1. Add All the ingredients listed under dough in to a mixing bowl and mix until it forms a nice smooth dough kneading about 10-15 min.
  2. Grease a mixing bowl and put the dough and leave it to double.
  3. Mix all the ingredients listed under filling and leave a side.
  4. Take the dough once double in size and cut in to 12 pieces.
  5. Roll each piece to a circle. Put one full spoon of the mix in the middle.
  6. Brush the edges with water and seal the edges.
  7. Using your palm roll them on the bench top. (Watch video)
  8. Leave them to prove again on a baking tray leaving room to double in size.
  9. Brush the tops with milk and bake 180 about 20-30 min or until golden brown.

Chicken and Spring Onion Parcels (Quick & Easy Meals)



These parcels are easy to prepare and also easy to cook. The main thing is not to over cook. Then it will go hard. Add oil to a pan and put them and cover to cook . Can keep in fridge for several days too.

Chicken & spring onion Parcels

Ingredients

  • 450g Plain Flour
  • 240-250 ml Water
  • Cooked chicken with any spice
  • 1 Cup Spring onions.
  • Salt & pepper

Method

  1. Knead the dough adding water and salt.
  2. Leave to rest and knead again.
  3. Put the chicken in a food processor and make smooth paste.
  4. Add spring onions.
  5. Mix well.
  6. After leaving the dough to rest put it on a floured bench and cut in to equal size portions.
  7. Take one and roll it to a rectangular shape.
  8. put the filling on a corner and then seal edges as shown in the video and then roll to the other end. 
  9. Next press the roll down using the palm and roll it to a circle.
  10. Can panfry easily or oven bake.
  11. Make sure not to over cook.
