This version uses a medley of vegetables for a rich, wholesome bowl that works equally well with idli,or even plain rice.

Stir fry onion and garlic with some red chillies &curry leaves
Add turmeric powder,curry powder,and some chilli powder in to it.I and adding a very large. tomato to it to get the tangy flavour
Once they are cooed add the cooked lentils and cook for few minutes.
Vegetables (mix and match):

1 small carrot, diced

1 small potato, cubed

1 small drumstick (moringa), cut into pieces

½ cup pumpkin

1 tomato, chopped

1 small onion or 6–8 shallots

5–6 pieces okra (optional),Tomato chopped

½ cup brinjal (eggplant), cubed (Or Thai egg plants)
Tempering :
-
2 tsp oil (or ghee for extra aroma)

½ tsp mustard seeds
-
1–2 dry red chillies
-
Onions and garlic
-
1 sprig curry leaves
This mixed vegetable sambar is perfect with:
