For the Chicken:

  • 3–4 chicken breasts

  • Salt & pepper to taste

  • ½ tsp garlic powder

  • ½ tsp paprika

  • ½ tsp onion powder ( or garlic and herb mix)

     

For the Stuffing:

  • 6–8 asparagus spears (trimmed and halved)

    few spring onions and  jalapenos,

  • 4 slices cooked bacon, chopped

  • 2 cups fresh spinach (sautéed or raw)

  • Pinch of salt & pepper as needed 

(Optional: red pepper flakes, Italian seasoning)

 

 Heat oven to 200°C / 400°F.

Cook the bacon with jalapenos, spring onions and spinach 

Cut the chicken breast in half. fill the middle with bacon spinach mix and the asparagus .

Bake covered first 20 minutes and add mayonnaise on the top and bake uncovered another 20 minutes.  

 Let rest for 5 minutes before slicing.
Serve with roasted potatoes, rice, or a simple garden salad
