Cauliflower & Broccoli Bake




Cauliflower & Broccoli Bake

Ingredients

  • - 1 Cauliflower 
  • - 2 Large Broccoli 
  • - 50g of Butter
  • - 1/2 Cup of Flour
  • - Milk
  • - Salt

Method

  1. Blanch the prepared cauliflower & broccoli. (To Blanch add salt in to a pot of water and when boils add veggies and cook 1 min.)
  2. Lay them on a tray and press down.
  3. Make the white sauce adding butter and flower and then the milk. (You can add onion, bay leaves, nutmeg, or stock cubes to give more flavour.)
  4. Sprinkle some cheese.
  5. Pour the sauce over the top and bake 180 about 1/2 an hour until nice golden brown on top.

Cream of Pumpkin & Potato Soup.



Cream of Pumpkin & Potato Soup.

Ingredients

- 700g of Pumpkin
- 2 Stock Cubes
- 2 Large Potatoes
- Onion
- 1 Stick of Celery
- Garlic
- Pepper
- 1/2 Cup of Cream
- Salt
- Oil
- 1 1/2 Litres of Water

Method
  • Heat a tablespoon oil in a pan. 
  • Add onion, garlic, and celery.
  • Then add all the other ingredients except cream.
  • Bring to boil and simmer 1 hour.
  • Puree the soup.
  • Add cream.
  • Bring to boil again and serve hot.

Ingredients


  • - 500g Pasta
  • - Olive oil
  • - 2 Tablespoons of Cream
  • - Bacon
  • - 2 Large Onions & garlic.
  • - Pesto
  • - Cheese to garnish
  • Parsley

Method.

  1. Boil Pasta.
  2. Fry onion Garlic.
  3. Add Bacon & fry until golden.
  4. Then add basil and cream.
  5. Add pasta and garnish with parsley and cheese.
  6. Serve hot

Ingredients

  • -- 250g of Butter
  • - 1 Teaspoon of Mixed Spice
  • - 5 Eggs
  • -3 Tblsp strawberry jam
  • - 80g of Self Raising Flour 
  • - 300g Brown Sugar
  • - 230g of Plain Flour
  • - 185ml of Sweet Sherry
  • - 1Kg of Mixed Fruit

Method

  • Preheat oven to 150c.
  • Line a 22-24 cm round cake pan with four greased layers of baking paper.
  • Mix fruit with sherry and leave over night.
  • beat butter and sugar.
  • Add eggs and cream the mix.
  • Add flour and then the fruit.
  • Put in to the prepared pan.
  • Bake 31/2 hours.
  • Brush with warm sherry. Leave to cool.
  • Can keep it for months brushing with warm sherry every week.

Spinach & Ricotta Rolls

Ingredients


  • - 500g of Spinnach Leaves
  • - 500g of Ricotta cheese
  • - 1 Cup of Bread Crumbs
  • - 1/2 Cup of Cheese
  • - Puff Pastry Sheets
  • - 2 Eggs
  • - 2 Onions
  • - 1/2 of a Leek
  • - Salt
  • - Pepper
  • -Sesame seeds
  • 1 egg for the egg wash

Method

  1. Steam or blanch spinach and squeeze the excess water.
  2. Cut spinach in to fine pieces.
  3. Add all the ingredients in to a bowl and mix well.
  4. Pipe the mix on to puff pastry sheets and roll them.
  5. Cut them to the size of your choice.
  6. Egg wash and sprinkle some sesame seeds.
  7. Bake 180 20-30 min until golden brown.

  • - 2 Tablespoons of Olive Oil

  • - Pepper
  • - Rice Wine Vinegar 
  • - Oyster Sauce

  • - Ginger

Method

  1. Prepare everything before starting.
  2. Add oil in to a pan add garlic ginger  and onions.
  3. Cook one minute and then add the carrots, celery.
  4. Meanwhile mix all the sauces and leave aside.
  5. Next add all the vegetables and cook one minute.
  6. Then add the sauces.
  7. Next and the dissolved corn flower little by little.
  8. Serve hot with rice.

Cream of Chicken Soup




Cream of Chicken Soup

Ingredients

  • -- 1 1/2 Litres of Water
  • - 1 Cube of Stock
  • - 750g of Chicken Thighs
  • - 1/2 Cup of Cream
  • - 1/2 Cup plain flour
  • - 1 Onion
  • - Garlic
  • - Celery
  • - 2 Carrots
  • - Parsley
  • - Leek
  • - 40g of Butter

Method


  1. Add water,stock, and all the ingredients except flour ,cream and the butter.
  2. Bring to boil & simmer about 30-40 min. 
  3. After take the chicken out & strain veggies and get the broth.
  4. Add but once melted add flour in to the pot. Cook with butter.
  5. Then add stock and cream.
  6. Shred the chicken.
  7. Mix well and bring to boil.
  8. When it starts thickening add the chicken.
  9. Cook one min.
  10. Add Parsley and serve hot.

  1. Add all the spices in to a bag. Make sure all the spices are dry.
  2. Add chicken thigh cutlets.
  3. Shake well. Arrange on trays.

Bacon & Egg Pie

Ingredients


  • -- 250g of Diced Bacon
  • - 8 Eggs
  • - 1 Cup of Thickened Cream
  • - 1 Onion
  • - Short Crust Pastry
  • - 1 Puff Pastry Sheet
  • - Dark Chocolate


Method

  1. Preheat oven to 180c.
  2. Next Grease the Baking tray.(20cm round pan)
  3. Lay the short crust pastry and press with fingers.
  4. Cook bacon and onion and leave to cool.
  5. Mix eggs and cream.
  6. Put the bacon and onion mix on to the bottom of the pan.
  7. Then pour the egg mix over . 
  8. On to the egg mix break the eggs.
  9. Cover with puff pastry.
  10. Prick the pastry.
  11. Egg wash and sprinkle any kind of a seed. (optional)
  12. Bake 180 until the pastry golden brown.
  13. Leave 15 min before cutting for the eggs to settle.

Canned Mackeral Salad


Canned mackeral is really nice when preapred as a salad. Once mixed with all the ingredients and balance the flavours it goes well with anything.
I like to eat that with crusty bread.

Ingredients


  • - 1 Can of Mackerel 
  • - 1 Onion
  • - Sweet Capsicum
  • - 1 Tomato
  • - Green Chillies
  • - Pepper
  • - Salt
  • - 1 Lime

Method

  1. Add all the ingredients in to a mixing bowl and mix well.
  2. Leave it about 10 min.
  3. Then add the canned mackeral.
  4. Mix well.

Black Forest Cake / Black Forest Gateau


This cake is really easy to make when you have collected all the ingredients. The cake can be made before and can keep in the fridge for 3 months. You can cover the whole cake with cream and then cover with shaved chocolate to get a very elegant look.

Black Forest Cake/ Black Forest Gateau

Ingredients

  • - 125g of Butter
  • - 140g of Plain Flour
  • - 45g of Self Raising Flour
  • - 2 Eggs
  • - 60g of Cocoa Powder
  • - 1 Teaspoon of Vanilla
  • - 1 Teaspoon of Bicarb soda
  • - 230g of Sugar
  • - 190ml of Butter Milk

  • - 600ml of Whipped cream
  • - Pitted Cherries
  • - Kirch
  • - Dark Chocolate
  • - 20cm Baking pan

Method

  1. Preheat oven to 180c.
  2. Next Grease the Baking tray.(20cm round pan)
  3. Add sugar and butter cream for several minutes.
  4. Then add eggs one by one.
  5. Next add flours with cocoa.
  6. Mix well and transfer to the Baking tray.
  7. Bake 180 c until a skewer inserted comes out clean.
  8. Meanwhile whip the cream and shave the chocolate in to nice curves. (When you do chocolate it has to be in-between the hard and meting stage)
  9. Leave the cake 30 min in the tray and later transfer on to a wire rack.
  10. When it is completely cool enough to handle cut that in to three equal size disks.
  11. Brush each disk with kirsch and apply cream and then lay the cherries.
  12. Cover with one disk and repeat the same process.
  13. Cover with cream or pipe rosettes on top.
  14. Sprinkle the chocolate on top.
  15. Put it in a fridge until needed.

Stuffed French Bread (Quick & Easy Meal)



Stuffed Bread / French Sticks

Ingredients

  • - 2 French Sticks
  • - 1 Tomato
  • - Parsley
  • - Green Chillies
  • - 1/2 Cup of Mozzarella Cheese
  • - 10g of Butter
  • - 1/2 Cup of Milk
  • - 2 Onions
  • - Bacon
  • - 4 Eggs
  • - Cream Cheese
  • - Mustard
  • - Salt
  • - Pepper

Method

  1. Beat eggs and milk . Scramble the eggs.
  2. Transfer to a bowl.
  3. Add bacon and fry until golden brown.
  4. Next add onions and cook well.
  5. Cut the bread in half or from the top.
  6. Take the middle out and add in to the eggs.
  7. Add all the other ingredients & mix well.
  8. Then add the bacon and onions.
  9. Mix well. Fill the egg mix.
  10. Bake 180 -200 c about 10 min.
  11. Serve hot.

Blueberry/Strawberry Short Cake



Blueberry Short Cake

Ingredients

  • -Blueberries
  • - 2 Cups of Self Raising Flour
  • - 95g of Butter
  • - 1/4  Cup of Sugar
  • - 1/2 Teaspoon of Salt
  • - 1 Egg
  • - 1/2 Cup of Cream
  • - Icing Sugar

Method

  1. Add blueberry,sugar and lemon juice and mix. Leave to infuse.
  2. Add flour, butter,sugar,salt and egg and pulse.
  3. Then add cream little by little.
  4. Make the dough and wrap it and leave in the fridge for 15min.
  5. Spread the dough and cut using a pastry  or a scone cutter
  6. Put them on a baking sheet and bake 180 for 20-30 min.
  7. Put them on wire racks
  8. Once cool enough to handle cut in to two halves.
  9. Put the blueberries on top and then the cream.
  10. Cover with the other half.
  11. Sprinkle icing sugar on top.
  12. Serve with blueberry coulee or ice-cream.

  • -- 4 Cups of Cooked Rice
  • - 4 Sausages
  • - Onion
  • - Ginger and Garlic Paste

Method

  1. Add oil in to a pan & fry onion & garlic.
  2. Then add carrot & sausages and fry 2 minutes.
  3. Next add eggs in to the middle and let it set.
  4. Then scramble the eggs. & mix with the other ingredients.
  5. Add red chillies and mix well.
  6. Next add the rice , fish sauce, soy sauce and oyster sauce.
  7. Mix well and add spring onions.
  8. Mix well.
  9. Serve hot.

Green Apple Curry (Granny Smith ) 

Ingredients


  • - 2 Granny Smith Apples
  • - 1/2 Cup of Coconut Milk
  • - 2 Tablespoons of Sugar
  • - 1 Onion
  • - Ginger and Garlic Paste
  • - 1 Tablespoon of Mustard Seeds
  • - Oil
  • - Green Chillies 
  • - Curry Leaves 
  • - Cinnamon 
  • - Fenugreek Seeds
  • - Maldive Fish Flakes
  • - 1 Tablespoon of Dark Roasted Curry Powder
Method.
  1. Add oil in to a pan.
  2. When the oil is hot add mustard seeds and wait till it strat spluttering.
  3. Then add all the ingredients except curry powder.
  4. Cook several minutes.
  5. Then add the apples.
  6. Let the apples sweat and cook from its own juice about 5 min.
  7. Then add thick coconut milk and cook 5 min.
  8. Serve hot with rice, bread or any kind of a flat bread.

  • - 125g of Self Raising Flour 
  • - 125g of Sugar
  • - 2 Large Eggs
  • - 125g of Butter
  • - 2 Teaspoons of Coffee

For the coffee icing
  • 185 g Icing sugar
  • 2 ttsp coffee.
  • 85 g Butter

Method

  1. Prepare 20cm baking tray.
  2. Preheat oven to 180c.
  3. Add sugar & butter and cream it.
  4. Add eggs next and beat 2 min.
  5. Next add self raising flour and baking powder.
  6. Mix while adding coffee.
  7. Put in to baking tray and bake 180 about 30 min.
  8. Mix the icing and leave aside.
  9. Leave the cake on a wire rack to cool.
  10. Cut the cake in to two .
  11. Spread the icing
  12. Sprinkle icing sugar.

Ingredients


  • - Short Crust Pastry
  • - 2 Cups of Water
  • - Parsley
  • - Green Peas
  • - Carrot
  • - Butter
  • - Stock Cube
  • - Chicken Thigh Fillets 
  • - Onion
  • - Garlic
  • - 1/2 Cup of Plain Flour
Method
  1. Add Butter in to a pan & add onions.
  2. Fry onions, garlic in butter for one minute.
  3. The add the chicken, salt and stock cube next and brown the chicken.
  4. Add carrot, parsley and enough water  to cook chicken
  5. Next add green peas and cook 5 min.
  6. When the chicken is cooked add the flour slowly little by little until the gravy is slightly thick.
  7. Leave to cool down.
  8. Prepare a muffin tray and line with short crust pastry. (I used ready made)
  9. Cut lids for the pies.
  10. Fill the holes with the mix and cover it using the puff pastry lid.
  11. Bake 180 about 30 min.

Creme Brulee


If you don't have a blow torch still you can do it. Cool the creme Brulee in the fridge and then heat oven to high. Then put on the top rack and brown the top. Keep an eye not to burn. It will take only a minute or two.

Creme Brûlée

Ingredients

  • - 500ml of Thickened Cream
  • - 100ml of Milk
  • - 100g Sugar
  • - 4 Egg Yolks
  • - 1 Vanilla Bean

Method

  1. Put the cream,& vanilla on the stove. Do not boil.
  2. Add & mix egg yolks with sugar in bowl.
  3. Add warm cream in to that and whisk it.
  4. Use a strainer and strain them in to ramekins.
  5. Put one tea towel on to a baking tray.
  6. Then add water and put the ramekins. You can fill the tray half.
  7. Bake 180 about 40 min.
  8. Cool the baked creme brûlée and sprinkle sugar on top.
  9. Use a blow torch to brown them It has to form a crust on top.

Ingredients

  • - Banana Peppers
  • - Plain Flour
  • - Tumeric Powder
  • - Salt
  • - Bread Crumbs

  • - 1 Can of Mackerel
  • - Curry Leaves
  • - Onion
  • - Green Chillies
  • - Chillie Powder
  • - Pepper
  • - Tumeric Powder

  • - 2 Potatoes

Method

  1. Add boiling water to the banana peppers & leave covered 30 minutes.
  2. Make the dipping batter.
  3. Make a slit & remove the seeds.
  4. Fry onions and add rest of the ingredients and cook and make a smooth paste.
  5. Season with salt.Leave to cool down.
  6. Fill the banana peppers with the mix.
  7. Coat in flour.
  8. Dip that in batter & Cover with bread crumbs.
  9. Fry until golden brown.

Churros


Churros are easy & less expensive to make. This is a variation of doughnuts. You can pipe chocolate or thick custad in to the churros. Or can prepare a dipping chocolate sauce to serve it with.
Add sugar to the batter to get more sweetness. If you find the batter is runny add more self raising flour.

How to make Churros

Ingredients

  • - 125g of Self Raising Flour
  • - Salt
  • - 25g of Butter
  • - Vanilla
  • - 175ml of boiling Water
  • - Cinnamon 
  • - Sugar

  • Method

  • Add butter salt and vinla in to boiling water.
  • Mix well.
  • Then add in to the flour.
  • Mix until no lumps.
  • Leave to rest 30-40 min.
  • Put oil to be hot
  • Fill in to a piping bag and pipe the mix cutting to the required size.
  • Fry until golden brown.
  • Sprinkle cinnamon sugar on top.

  • - 1/4 teaspoon of Bicarb
  • - 1/3 Cup of Olive Oil / vegetable oil
  • - 85g of Brown Sugar
  • - 125g of Self Raising Flour
  • - 1 Egg

  • - 80g Cream Cheese
  • - 1/2 Cup of Icing Sugar
  • - 15g of Butter

Method

  1. Preheat the oven to 180c.
  2. Line 7" baking tray with paper or spray it.
  3. Beat egg and sugar.
  4. Then add olive oil & beat
  5. Add all spice, bicarb, Carrots and flour.
  6. Mix well.
  7. Pour in to the tray and bake 20-30 min.
  8. Leave 5 min in the tray after baking & then transfer on to wire racks.
  9. Make the frosting.
  10. Spread the cream cheese frosting.

For the marinate


  • - 500g of Prawns
  • - 1 Tablespoon of Garlic
  • - Ginger
  • - Lemon
  • - 1 Tablespoon of Chillie Powder

For the pan roast


  • - Ginger and Garlic
  • - 2 Large Onions
  • - Curry Leaves

Method
  1. Add marinate ingredients to the prawns and leave overnight or atleast 30 minutes.
  2. Then add oil in to a pan add onion, and curry leaves and fry them.
  3. Next add other ingredints & cook several minutes.
  4. After add the prawns and cook 5-6 min, until there is no gravy.

  • - 160g of Bread Flour
  • - 160g of Warm Water
  • - 2g of Yeast

Add Later

  • - 350g of Bread Flour
  • - Salt
  • - 8g Dry Yeast
  • - 1 Egg
  • - 60g of Sugar
  • - 60g Butter
  • - 75ml of Water
  • - Sausages
Method
  1. Add 160g bread flour,160 ml warm water & 2g yeast into a mixing bowl and make roux and leave it until the roux bubbles up.
  2. Then in to the roux add 350 g bread flour,salt, yeast,egg, sugar, butter and water and knead dough and leave until it doubles in size.
  3. Then punch down and cut in to equal size portions.
  4. Roll it in to a triangle. 
  5. Put one sausage and roll as the video instructs.
  6. Bake 180 about 20-30 min.

Method

  1. Add oil in to a pan.
  2. When the oil is hot add the chicken & brown the chicken.

  4. When the chicken is brown add Chinese cooking wine, Ginger garlic paste & cook several minutes.
  5. Then add the spices.
  6. Add tomatoes, Green chillies, onion and curry leaves.
  7. Cook about 10-20 min until the chicken absorbs all the aroma.
  8. Serve hot.

Ingredients

  • - 250g of Marshmellows
  • - 450g of White & Dark Chocolate / compound chocolate
  • - 100g of Pistachio Nuts
  • - 100g of Dried Cranberries
  • - Shortbread Biscuits/ or any other biscuit as you wish

Method

  1. Melt the chocolate on simmering water stirring it several times.
  2. Prepare a dish or a tray.
  3. Mix all the other ingredients in a bowl.
  4. Add the melted chocolate and mix well.
  5. Add in to a prepared dish and press using a spatula.
  6. Put it in the fridge for several hours to set.
  7. Cut according to the size you wish.

Quick & Easy Wrap Pizza



Mackerel & Vegetable Wrap Pizza

Ingredients

- 1 Pack of Wraps
- Onion
- Leek
- Chillies
- Capcicum 
- Tomato
- Salt
- Pepper 
- Chillie Powder
- Cumin Powder
- Mackerel
1 Tblsp flour for thickening the cooked meal.
Cheddar or mozzarella cheese

Method

Add oil in to a pan and cook several minutes. 
Add capsicum & the tomatoes with the chillies.
Then add the spices.
Next mackerel cook several minutes.
If it is little watery add some flour.
Cook several minutes.
Spay or oil the wraps.

Add the mix on the top of the wrap and spread and bake 220 about 10 min.

Ingredients


  • Juice of 1 whole Orange + 1 Tsp orange Zest
  • 50 g Sugar
  • 60 g Butter
  • 80 g Self raising flour
  • 1 Egg

Method


  1. Add butter & sugar & beat well.
  2. Then add orange zest.
  3. After add flour & orange juice and mix well.
  4. Add orange juice until it becomes like a normal batter.
  5. Spray moulds.
  6. Put the mix in.
  7. Steam about 20 min.
  8. Serve with hot custard or cream or ice cream.

To Make hot custard 

In to  250g milk add 25g sugar and vanila and boil. Once it comes to a boiling point mix 1 tblsp custard powder in 3 tblsp cold water and add in to the hot milk and stir until it becomes smooth.

Tomato & Herb Pasta (+playlist)


This meal is a quick & easy budget meal. You can do this when the tomatoes are seasonal too. Making the sauce aday ahead saves your time. The left over sauce can be kept about a week in the fridge.
If you like can add veggies or cooked meat after blending the sauce for extra flavour.
Add any other herb you like if you cant find the herbs,

Tomato & Herb Pasta

Ingredients


  • - 500g  Tomatoes
  • - Salt
  • -Garlic
  • - Paprika
  • - Pepper
  • - Sugar
  • - Olive Oil
  • - Parsley
  • - Basil Leaves
  • - 3 Onions
  • - 250g of Pasta
  • - 1 Stock Cube

Method


  1. Add a tablespoon full olive oil in to a pot & cook onion & garlic.
  2. Then add all the other ingredients.
  3. Cook 30 min 1 hour on low flame until it thicken the sauce.
  4. Add water if necessary.
  5. Check and balance the sugar & salt level.
  6. Blend the cooked sauce.
  7. Cook the pasta.
  8. Add pasta in to the tomato sauce.
  9. Mix well.
  10. Garnish with parmesan cheese or serve as it is.

Pistachio & Brown Sugar Palmiers



Pistachio & Brown Sugar Palmiers

Ingredients

  • - 1/2 Cup of Pistachios
  • - 1/2 Cup of Brown Sugar
  • - Cinnamon Powder
  • - 1 Egg
  • - Puff Pastry Sheets

Method..

  1. Thaw the puff pastry sheets to room temperature.
  2. Grind the pistachios in to a powder & mix with brown sugar.
  3. Beat the egg.
  4. Take a pastry sheet & brush with the beaten egg.
  5. Spread 1/3 of the pistachio mix.
  6. Brush the beaten egg on another pastry sheet.
  7. Place the egg wash side down and press firmly.
  8. Repeat the process.
  9. Then roll the pastry to the middle from both ends.
  10. Cut in tn to thin slices.
  11. Lay them on biscuit tray.
  12. Bake 180 about 15-20 min.
  13. Store in air tight containers after cooling down.
  14. Enjoy with a coffee.
