Simple LemonInfused Dessert

Ingredients

  • 1 Lemon (Juice and Zest)
  • 500ml Water
  • 150g Sugar
  • 50g Corn Flour
Method
  1. Add water Zest and boil.
  2. Strain the zest .
  3. Add sugar and mix well. 
  4. Next add the dissolved corn flour in and whisk well.
  5. Cook on the stove while whisking.
  6. Pour the mix in to a jelly mould.
  7. Chill several hours.

Soft and Moist Rhubarb Dessert Cake

Ingredients

150g Butter
125g Sugar
150g Self raising flour
1tsp Vanilla
3 Eggs
Bunch of Rhubarb

For the topping

25g Butter
3 Tblsp Self raising flour
25g Sugar

Method

  1. Finely chop rhubarb.
  2. Beat butter and sugar.
  3. After add eggs and mix well.
  4. Next add flour and vanilla and mix on a low speed,
  5.  Meanwhile Mix the topping ingredients well.
  6. Pour the batter in to a pan. Put rhubarb on top. Next add the topping.
  7. Bake on 180c about 30 min or until a skewer inserted comes out clean.
  8. Cool on a wire rack or serve hot with custard or cream or even ice cream.

Simple & Easy Peanut Butter Cups



Simple & Easy Peanut butter Cups
Ingredients

  • 125g Butter
  • 190g Plain Flour
  • 40g Brown Sugar
  • 130g Caster Sugar
  • Pinch of Salt
  • 1 Egg
  • 1/2 Tsp Bicarbonate of Soda
  • 1 Tsp Vanilla
  • 150g Peanut butter
Filling ingredients
  • 1 Can Condensed milk
  • 2 cup of dark and milk chocolate.
  • 1/2 Cup white chocolate for decorations.
Method
  1. Add butter, sugars,Salt and peanut butter and mix well.
  2. Next add egg, vanilla,bicarb and flour and mix well.
  3. Grease a mini muffin pan and put a spoon full in and press down to foam a cup. Bake on 180 about 10 min.
  4. After taking press down again to foam the cup and leave in tray to cool down. 
  5. Mix condensed milk,and the chocolates and microwave it.
  6. Then pour in to the cups and leave to set.
  7. Next melt white chocolate and drizzle on top.
  8. Let it set out side, or in fridge.
  9. Store in air tight container in fridge. If living in cooler climate can leave out side.

Simplest White Chocolate Mousse
Ingredients

  • 2Eggs Separated
  • 20g Softened Butter
  • 115g White chocolate melts
  • Candies to decorate
Method
  1. Add chocolate and butter in a bowl and melt in microwave.
  2. Whisk egg whites with cream of tartar or a drop of vinegar.
  3. Whisk egg yolks and melted chocolate together.
  4. Fold with egg whites and pour in to glasses.
  5. Chill for several hours.
  6. Serve with cream and ice cream.

100% Whole Wheat Bread



100% Whole Wheat Bread (Simple Baking)
Ingredients
Starter Ingrediens

  • 145g Whole Wheat Flour
  • 130g Warm Water
  • 5g Instant Dry Yeast
Soaking Ingredients
  • 120g Whole
  • 170ml water (cold)
Ingredients  for the bread
  • 260g Whole Wheat flour
  • 25ml Golden Syrup
  • 25ml olive oil
  • 4g Salt
  • 7g Instant dry Yeast
Method
  1. Prepare starter and leave overnight in room temperature.
  2. Soak flour in water for soaking leave in room temperature for 4-5 hours and put in fridge.
  3. Next day add bread flour , soaker and starter in a mixing bowl and mix well.
  4. Add syrup, oil and knead for 25min.
  5. Leave in a warm place to double.
  6. When double in size follow the folding method described in video and leave to double.
  7. Brush tops with eggs or milk and bake until golden brown on top or when tap gives a hollow sound.
  8. Cool on a wire rack. Can freeze too.

Yule Log (Simple Baking)
Ingredients

  • 3 Eggs Separated
  • 25g Cocoa
  • 45ml Oil
  • 65g Sugar
  • 65g Plain flour
  • 100g Dark chocolate melts
  • 50ml Water
Method
  1. Add cocoa powder in to the water and dissolve it well.
  2. Add egg whites in to a mixing bowl and half of the of the sugar and mix well.
  3. Once it comes to the soft peak stop whisking.
  4. Mix egg yolks and rest of the sugar in a bowl and whisk well.
  5. Add mixed cocoa and water in it.
  6. Next mix egg whites too and make the sponge as directed in the video.
  7. Roll with whipped cream.
  8. Melt chocolate and pour over top and design. (Watch video)
  9. Enjoy.

Home made simple French Brioche



Ingredients:
  • 3 large eggs
  • 2g salt
  • 300g bread flour
  • 35g sugar
  • 7g dry yeats
  • 35ml milk
  • 135g butter
Method:

  • Preheat the oven to 180 degrees. In a standard mixing bowl add the bread flour yeast, sugar mix this for about 30 secs. Then add the eggs and salt, mix for about 1min. Then add the milk, mix this for about 5mins. Then add the butter and mix for about 20mins. Place in a bowl and let it double in size.
  • Flour the bench and place the dough on top, kneed the dough for about 5-8mins until no longer sticky. The cut the dough into 8 equal sized pieces. Take each piece and roll it into a round piece and place into the baking pan, do this with the rest of the pieces. Then let it double in size.
  • Brush the tops with egg and bake for bout 15-20mins.

Rum & Brandy Fruit Cake



Ingredients:
  • 5 large eggs
  • 850g mixed dried fruit
  • 150g prunes
  • 150g chopped dates
  • 120 dried apricot and pineapple
  • 150g cranberries
  • 130g mixed nuts
  • 250g butter
  • 350g plain flour
  • 200g brown sugar
  • 65ml rum
  • 130ml brandy
Method:

  •  Into a large saucepan add the brown sugar. Cook it on a low heat until it melts. In a large bowl add the the dried fruits. Whilst the brown sugar is melting add 2 tbps of rum and then boil this mixture. Then add this syrup into the bowl of fruits and mix well.  Cove this bowl and leave to set in a dark area, for 10 days making sure to mix it everyday.
  • Preheat the oven to 150 degrees. In a standard mixing bowl add the butter, whisk this for about 3mins until pale. Then add the eggs one by one and beat this for about 2-3mins, then add the flour and mix well. Then add the fruit mixture making sure that the fruits are coated in the cake batter.
  • Place this mixture in a cake pan, layered with baking paper. Spread it around the pan. Then bake it for about 2-3 hours. Once baked place hot rum or brandy on top of the cake and let it soak in. Repeat this for a week everyday.
  • Serve with a cup of tea.

Simple & Easy Tapioca or Sago Pudding



Ingredients:

  • 4 large eggs
  • Vanilla essence 
  • I cup of tapioca pearls or sago
  • I cup raw sugar
  • 1/2 salt
  • 6 cups of milk
  • 1/2 thickened cream
Method:
  • Preheat the oven to 180 degrees. Into a large saucepan, add the sago, sugar, vanilla, salt, and milk. Cook this on a medium heat for 10-15mins.While the sago is cooking, add the eggs into a small bowl and beat it lightly. Once the sago pudding has thickened in the saucepan add the eggs very quickly and mix together until combined.
  • Add this mixture into a baking tray. Place a tray of hot water underneath the tray and place in the oven for about 30 minutes to bake in the oven. 
  • Serve hot or cold

Bakery Style Hawaian Sweet Bread



Ingredients:

  • 1 large egg
  • vanilla essence
  • 325g bread flour
  • 125ml milk 
  • 25g milk powder
  • 30g butter
  • 3g salt
  • 10g instant yeast
  • 50g brown sugar


Method:

  • Preheat the oven to 180 degrees. In a standard mixing bowl add the flour, sugar, yeast, salt (away from the yeast), milk powder, vanilla, and the milk. Mix this on a medium speed for about 5 mins. While mixing add the butter and mix for another 3mins. Once done mixing cover the bowl with a cloth and let it double in size.
  • Flour the bench, place the dough on top and kneed the dough by folding the dough and overlapping it until it's no longer sticky. Then place it in a cake pan for a pan of your choice, Then leave it again to double in size covered by a cloth for about 2 hours. 
  • Once risen, brush the top of the bread with some egg and bake for about 20-30mins. Let the bread cool down completely before cutting.

Sri Lankan Cashew Paste for Decorating Cakes



Ingredients:

  • 1/4 egg white
  • 175 icing sugar
  • 75g cashew nut meal
  • 1 tsp glycerine
  • Almond essence
  • Rosewater

Method:

  • Add the icing sugar(sifted), The cashew nut meal, 1/4 of an egg white. Mix this on a low speed for for 2-3minutes. Then while mixing add the few drops of almond essence, tsp of glycerine, and some rosewater. Mix this until it becomes a smooth dough.
  • Flour the bench with some icing sugar, place the dough on top and kneed until pliable and not sticky. Then use to decorate as wanted.

Home made Broccoli Bread Rolls



Ingredients:

  • 275g bread flour
  • 100g mashed broccoli
  • 2g bread improver
  • 5g instant dry yeast
  • 30g butter
  • 2g salt
  • 155ml warm water
  • 10g sugar

Method:

  • Preheat the oven to 180 degrees. In a standard mixing bowl add the flour, bread improver, yeast, salt, sugar and mix this on a low speed for for 2-3mins add the butter while mixing. When the dough is smooth and combined add the broccoli. Mix this for about 5mins.
  • Cover the bowl and place in a warm place until the dough doubles in size. Flour the bench and  and place the dough on top. Kneed this until it's no longer sticky. The cut the dough into the amount of bun required or 8 pieces. Take a piece, roll the dough then fold the edges into and make a round shape. Do this for the rest of the pieces. Then let it double in size.
  • Place this on a baking tray spray some olive oil on top and bake for about 10-15mins.
  • Let them cool.

Stuffed Potato Cups Quick and easy meals)



Ingredients:
  • Can of tuna
  • 5-6 potatoes
  • I cup of cheese
  • chopped tomatoes
  • Chopped chillies
  • Chopped onion
  • Garlic
Method:
  • Preheat the oven to 180 degrees. Using a knife or a potato twister cut out the middle of the potato. Cut up the potato that you took out to use as a filling. In a saucepan place some olive oil and cook the tomatoes, potato, chillies onion, tuna (drained) and garlic, to make a smooth filling mixture. Add some parmesan or breadcrumbs for extra flavour.
  • Place the potatoes in a muffin tray facing upwards. Then fill the potatoes with the mixture to the top. Sprinkle some cheese on top and bake in the oven for about 30-40mins.
  • Serve hot with a side of vegetables.

Ingredients

  • 150g Margarine
  • 150 Self Raising Flour
  • 3 Eggs
  • 125g Sugar
  • 2 Tblsp Self Raising Flour
  • 1/2 cup red cherries
  • 1/2 cup Green cherries
  • 1 Tsp Vanilla
Method
  1. Beat margarine with sugar until creamy.
  2. Next add eggs one by one and whisk well.
  3. Add flour  and vanilla mix well.
  4. Cover the cherries with flour and mix in to the cake batter.
  5. Pour the mix in to a cake pan and bake on 180c about 20-30 min or until a skewer inserted comes out clean.
  6. Cool on a wire rack before storing.

Ingredients

  • 1 Egg whites
  • 225g Icing Sugar
  • 1/4 tsp Cream of tartar
  • 1/4 tsp vanilla.
Method
  1. Add egg white , vanilla and whisk until frothy.
  2. Then add cream of tartar and whisk until it comes to a soft peak.
  3. After add icing sugar and whisk 5 min. Then follow as directed for cakes and cookies.

Mashed Potato, Bacon & Cheese rollls



Mashed Potato &Cheese Rolls
Ingredients
For the over night dough

  • 160g Bread flour
  • 2 g yeast
  • 105ml Water
For the Main dough
  • 400g Bread flour
  • 8g Salt
  • 6g Instant dry yeast
  • 20ml Olive oil
  • 240ml water
  • 250g Mashed Potato
  • Salt and Pepper
Filling
  • Bacon
  • Cheese
Method 
  1. First prepare the over night dough and leave several hours out side and then put in fridge overnight.
  2. Add flour, mashed potato,yeast, salt and water  and the prepared dough in to a mixing bowl and mix well.
  3. Then put the prepared dough in a greased bowl and leave in a warm place until double in size.
  4. Next roll and fill as directed in the video and leave to prove again.
  5. After brush with eggs and bake on 180c about 20-30 min.
  6. Cool on wire rack.

  • 95g Brown sugar
  • 1 Tsp Vanilla
  • 125g Chocolate Chips

  1. Add sugar , salt and butter in to a mixing bowl. Mix well.
  2. Next add egg, bicarb, vanilla, plain flour .
  3. Add chocolate chips.
  4. Press in to the prepared pan.
  5. Bake on 180c about 20 min or until golden brown.

Easy Home made Marzipan / Almond paste (Cake Decorating Basics)



Ingredients: 
  • 700g icing sugar
  • 250g ground almond or almond meal
  • 2 egg whites
  • 1/4 teaspoon of almond essence
  • 2tbsp of glycerin
Method:
  • In a standard mixing bowl add the icing sugar (sifted), almond meal, make well in the middle then add the egg whites, some almond essence. Mix this on a slow speed. While mixing add the glycerin and mix this until it's fully combined. If it doesn't mix add another egg white and some lemon juice. Mix for about 5mins.
  • Flour the bench with icing sugar, place the dough onto the bench and kneed for about 3 minutes, until it's no longer sticky.
  • Then use it as you please, it can be kept in the fridge covered by cling film for about 7-10 day. It's best used within 3 days.

Festive Chocolate Fruit Cake ____Episode 1000



Ingredients:
  • 525g Mixed dry fruits
  • 130g chopped dates
  • 130g dried prunes
  • 70g red and greed glazed cherries 
  • 180ml brandy
  • 75ml honey
  • 125g butter
  • 150g brown sugar 
  • 3 eggs 
  • 50g dark chocolate
  • 75g of mixed nuts
  • 150g plain flour
  • 75g self-raising flour
  • 15g cocoa powder
Method:

  • Into a bowl, add the chopped dates, prunes, cherries, nuts, mixed fruit, honey and the brandy. Make sure to mix it well and leave it overnight in a cool dark environment. 
  •  Preheat the oven to 180 degrees. In a standard mixing bowl add the butter, brown sugar, and mix this on a medium speed until it's creamy. While it's still mixing add the eggs 1 by 1 for about 2-3 minutes.
  • Then add the cocoa powder, and the flour, mix this with a wooden spoon by hand or e on the mixer with a paddle attachment. Mix this for about 3-4 minutes.
  • Transfer the cake batter to the fruit mixture, then add the chocolate. Mix this until you get a smooth but chunky batter. Making sure that all the fruits are covered in the batter. 
  • Using a 23inch cake pan, making it's well oiled and layered with baking paper. Transfer the cake mix into the pan and bake this for about 2 hours or 3 hours.
  • Before decorating, make sure cake is fully cooled or serve by itself. For the cake I'm using a marzipan top. If you want to know how to make it, please go  to my channel.

Simple & Easy Chocolate Pizza



Chocolate Pizza (Simple Baking)

Ingredients :
  • I cup bread flour
  • 75ml warm water
  • Pinch of salt 4 grams of yeast
  • 1tbsp of cocoa powder
  • Tbsp butter melted
  • 1/2 cup white choc chips
  • 1/2 milk choc chip
  • 1/4 of dark choc chips 
  • 1/2 flaked almond 
  • Nutella
  • 2 tbsp olive oil
Method:

  • Preheat the oven to 180 degrees.  Into a standard mixing bowl add the bread flour, cocoa powder, olive oil, yeast and salt. Mix this for about 2-3 minutes, slowly add the water to make a smooth dough. You can always add more water if needed. 
  • Flour the bench and and kneed the dough until it's not sticky anymore, then roll the dough into the desired pizza base shape keep about 1-2cm thickness. Fork the base to release the pressure and air when cooking. Brush the top of the base with melted butter. Bake this in the oven for about 10-15 minutes.
  • Using the nutella as a sauce or paste spread it over the base whilst it's still hot, then add the desired toppings, such as the white chocolate chips and the dark chocolate chips. You could also you marshmallows. Place this in the oven for about five minutes until the chocolate chips are melted but still in shape.
  • Then let it cool down, best served with whipped cream.

  • 4 Eggs
  • 60g Milk Powder
  • 225g Self Raising Flour

  1. Add butter, sugar and whisk 2 min.
  2. Add eggs one by one and whisk again.
  3. Next add milk powder,& self raising flour.
  4. Put the mix in to the tray.
  5. Spread jam over.Cover with another layer of batter.
  6. Bake the cake on 180c until a skewer inserted comes out clean.

Vintage Bread
Ingredients
For the first dough

  • 215g Bread flour
  • 85g Plain flour
  • 6g Instant dry Yeast
  • 25g Sugar
  • 240ml Water (Warm)
For the second dough
  • 215g Bread flour
  • 85g Plain flour
  • 25g SUgar
  • 6g Salt
  • 2 Eggs
  • 1 Tblsp Water
  • 75g Butter
Method
  1. Mix all the ingredients for the first dough and put in the fridge for 12-15 hours.
  2. Add flour , Salt, the first dough,sugar and eggs in to a mixing bowl. Start mixing about 5 min.
  3. Next add the butter and mix 5-10 min.
  4. If you feel the dough is dry add some water if not knead for another 10 min and put the dough in to a greased bowl and leave in a warm place.
  5. When the dough is double in size put flour on to the bench and cut the dough in to equal size pieces.
  6. Then roll as directed. Put them on a baking tray to double in size.
  7. Next brush the tops with eggs and bake on 180c about 20-30 min.
  8. Cool on a wire rack.

  • 250g Oatmeal
  • 300g Mixed nuts
  • 80g Butter
  • 40g Sugar
  • 2Tblsp shredded coconut
  • 100g Malt Extract
Method
  1. Add maltose in to a pot and add sugar and butter in too
  2. Melt those ingredients.
  3. After add the rest of the ingredients to ita nd mix well.
  4. Pour in to a prepared tray and press well.
  5. Bake on 180 until brown and cool on a wire rack.
  6. Store in an air tight container.

  • 200g Plain flour
  • 120g Butter
  • 100g Caster Sugar
  • 70g Almond Ground
  • 1 Egg
  • 2 Vanilla pods or paste
Method
  1. Add butter and sugar and mix well.
  2. Add vanilla next and mix one min.
  3. Add egg, almond and flour and mix until it combines all together.
  4. Make balls and press with a fork and bake on 180c about 20 min.
  5. Cool them on a wire rack to cool down.
  6. Store in an air tight container.

Marbled Sponge Cake (Simple Baking)
Ingredients:
  • 3 eggs yolks
  • 3 egg whites
  • Red Food colouring
  • 50g plain flour
  • 25ml vegetable oil
  • 25ml milk
  • 100g caster sugar
Method:
  • Preheat the oven to 170 degrees. In a standard mixing bowl add the egg whites, half of the sugar, this is optional but you add some vinegar or cream of tartar to hold the shape of the egg mixture, beat this for 3mins until there's a soft peak, and it should hold when you lift it up.
  • Add the egg yolks into the mixing bowl, add the sugar, oil and mix for about 1min. Then add then flour, mix this on a medium speed while gradually adding the milk. The slowly fold the egg whites into the batter, DO NOT MIX. Then place half of the batter into a separate bowl, colour it with you choice of food colouring, and leave one bowl with the plain batter.
  • Grab a Cake tray, or marble cake pan, and place dollops of each batter in the pan in different order until the top, then with a spoon slowly mix the batter in the pan until you get a marble effect, don't over mix it, because you will just end up with one colour. Then bake this for 45mins.
  • To take the cake out, run a small knife along the edge of the tray, let the cake cool down in the pan, then you can take the cake out of the pan.

Ingredients
For Black Pepper Chicken

  • Diced Chicken Thighs
  • Enough Black pepper and salt
  • Tomatoes diced
  • Onions and chilles
  • Curry powder and herbs (Optional)
  • Oil for stir frying
For the dough
  • 450g Bread Flour
  • 75g Multigrain
  • 7g Instant dry yeast
  • 20g Sugar
  • 5g Salt
  • 1 Tsp Black pepper
  • 40g Butter
  • 280ml Water
  • 1/2 of an Egg (Leave the other half to brush the buns)
Method
  1. Stir fry chicken and leave to cool down. Make sure you cook the chicken to a dry consistency.
  2. Add bread flour, Multigrain,sugar,yeast, Black pepper& Salt in to a mixing bowl and mix well.
  3. Next add the egg ,water and knead about 20-25 min until smooth and elastic.
  4. Leave the prepared dough in a warm place until double in size.
  5. When ready sprinkle flour on to bench and punch the dough down.
  6. Cut the dough in to equal size pieces.
  7. Roll the dough as directed in video and add chicken and seal.
  8. Leave to double in size again.
  9. Once ready brush the tops with eggs and bake 180c about 20-30 min or until golden brown.
  10. Cool on a wire rack or have them hot.

  • 130g Butter
  • 100g Brown sugar
  • 1 Egg
  • 130g Dark or milk chocolate chips
  • 230g Self raising flour
  • 150g Nutella
Method
  1. Add sugar and butter in to a mixing bowl and mix well.
  2. Next add egg and Nutella and mix one min.
  3. Add flour and chocolate chips and mix until well combined.
  4. Make balls and flatten them.
  5. Bake on 180c about 15-20 min.
  6. Cool on a wire rack.

  •  290g Bread flour
  • 5g Salt
  • 25g Sugar
  • 5g Instant Dry yeast
  • 30g Butter
  • 25g Eggs and leave the rest for brushing the tops
  • 150ml Milk
Method
  • Add flour , yeast, sugar, egg,& salt in to a mixing bowl and mix well.
  • Next add milk and make a smooth dough and add butter. Knead for 25 min.
  • Leave the prepared dough in a greased bowl in a warm place until double in size.
  • When the dough is ready put on to the bench and punch down, then cut the dough in to equal size pieces.
  • Roll each piece in a ball pressing in wards (Watch video).
  • Leave to double in size.
  • When ready brush the tops with eggs and sprinkle some sesame seeds on top and bake 15-20 min or until golden brown on top. 
  • Cool on a wire rack.
  • Can store in freezer for months.

  2. Leave to cool down to the right consistency and spread on top of the cake.

Dark Chocolate Mud Cake

Ingredients

  • 270g Butter
  • 225g Dark chocolate
  • 400g Caster Sugar
  • 375ml Milk
  • 340g Self Raising Flour (or plain flour +2 tsp Baking soda + 1/4 tsp salt)
  • 3 Tblsp cocoa powder
  • 3 Eggs
Method
  1. Add chocolate, sugar, butter & milk bring to a boil. Cool down 10 min.
  2. Next add cocoa powder, egg and flour 
  3. Mix really well.
  4. Pour in to the prepared tray and bake on 160c about 1-11/2 hours.
  5. Leave the cake in tray for 5 min and transfer to a wire rack.

No Bake Peach Cheesecake



No Bake Peach Cheesecake
Ingredients

  • 125g Plain cookies
  • 75g melted butter
  • 11/2tsp gelatine powder x2
  • 250g cream cheese
  • 175g Caster Sugar
  • 1 can peaches
  • 160ml cream whipped
Method
  • Crush or process the cookies and add melted butter and press on to the tray you are using.
  • Next drain peaches.
  • Add cream cheese in to a bowl and mix with 1/2 of the sugar and cream about 2-3 min.
  • Process the drained peaches and puree with sugar.
  • Add gelatine and pour over the cookie layer and put in fridge to set.
  • Next add cream to the cheese and mix well. Add gelatine and pour in to a piping bag. 
  • Pipe on the peaches.
  • Put in the fridge to set.
  • Cut and serve with ice cream.

French Seasame Bread Rolls



French Sesame Bread Rolls
Ingredients

  • 300g Bread flour
  • 100g Whole wheat flour
  • 260ml Warm water
  • Olive oil for brushing or spraying on the top of the bun
  • 4g Salt
  • 6g Instant Dry Yeast
  • 50g Black sesame seeds
  • 20g Caster Sugar
Method
  1. Add both flours, Salt,yeast and sugar in to a mixing bowl.
  2. Start mixing it until it makes a smooth dough and knead about 10min.
  3. Next add sesame seeds. (When I was doing the video the camera battery went flat)
  4. Mix few more min
  5. Leave the prepared dough in a warm place to double in  size.
  6. When the dough is ready add flour to the bench and put the dough and punch down.
  7. Cut the dough in to equal size pieces and roll as directed in the video.
  8. Leave to double in size.
  9. When ready cut the top and spray olive oil and bake on 200c about 20 min or until golden brown on top.
  10. Cool on a wire rack.
  11. Can freeze or leave in fridge.

Ingredients

  • 140g Butter
  • 1 Tblsp vanilla
  • 100g Sunflower seeds
  • 1 Egg
  • 100g Chocolate chips
  • 2g Baking soda
  • 75g Sugar
  • 230g Self raising Flower
Method
  1. Add sugar, Baking soda, and butter in to a mixing bowl and cream one min.
  2. Next add vanilla,Egg and flour And mix well.
  3. After add sunflower seed and chocolate chips and mix well.
  4. Make balls from the dough press them and bake on 180c about 20 min.
  5. Cool on a wire rack and store in an air tight container.

Chicken & Salad Rolls



Home Made Chicken Salad Rolls

Ingredients

  • 300g Bread flour
  • 75g Plain flour
  • 5g Instant dry yeast
  • 5g Salt
  • 1 Egg
  • 40g Butter
  • 20g Sugar
  • 150ml warm water.
For the Filling
  • Chicken brest sliced in an angle or tenderloins
  • Salt and Pepper
  • Vinegar
  • 1 Egg
  • Bread crumbs
  • Oil for frying
Method
  • Marinate the chicken with salt ,Pepper and vinegar.
  • Egg wash and crumb them.
  • Deep fry until golden brown.
  • Leave aside.
  • Add the flours,egg,yeast,salt,sugar and mix 2 min.
  • After add water and knead 5 min.Then add butter and continue kneading for 25min.
  • Leave the prepared dough in a greased bowl and leave in a warm place until double in size.
  • When the dough is ready add flour on to the bench and knead 2 min on the bench until you find its not sticky at all.
  • Then cut the dough in to equal size pieces.
  • Roll each piece to a rectangular or an oval shape and roll as instructed in the video.
  • Leave to double in size in a warm place.
  • When ready brush the tops with eggs and bake on 180c about 15-20 min or until golden brown.
  • Fill with chicken and salad ingredients.

No Bake Oreo Cheese Cake

Ingredients


  • 1 pack Oreo Cookies
  • 250g Cream cheese
  • 150g Caster Sugar
  • 11/2 Tsp Gelatine powder
  • 11/2 Tblsp Boiling water
  • 150ml Whipping/Thickened Cream
  • 1 Cup Crushed oreo cookies.

Method

  • Pack the oreo cookies design side down to a tray.
  • Add the cream cheese and half the sugar and mix well until nice and creamy.
  • Next whip the cream with the remaining sugar.
  • Next add gelatine and crushed cookies and mix.
  • After add whipped cream and mix well.
  • Put the mix on top and cover with some more cookies.
  • Leave in fridge to set.
  • Serve with cream and Ice cream.

Apple Pie Bread (Simple Baking)
Ingredients

  • 310g Bread flour
  • 130ml water
  • 80g Sugar
  • 5g Instant dry yeast
  • 2g Salt
  • 1 Egg
  • 30g Butter
Filling Ingredients
  • 2 Granny Smith Apples 
  • 30ml Water
  • 30g Butter
  • 30g Sugar
  • 1 Lemon Squeezed
  • 15g Corn Flour
  • 1 Tsp Cinnamon powder
Method
  1. Peel the apples and cut in to cubes. Then mix all the ingredients together and bring to a dry consistency. Leave to cool down.
  2.  Add flour, butter,sugar,egg,salt and yeast in to a mixing bowl and mix well.
  3. Next add water and butter and mix about 20 min.
  4. Leave the prepared dough in a greased bowl and leave in a warm place until double in size.
  5. When the dough is ready add flour on to the bench and knead the dough until not sticky.
  6. Then roll to a rectangular shape.
  7. Then cut the dough as directed in the video.
  8. Put the prepared apples in the middle and cover as in the video and leave in a warm place until double in size.
  9. When ready brush the tops with egg and bake on 180c about 20-30 min or until golden brown on top.
  10. Cool on a wire rack or eat hot.

Asian Style Tuna Buns



Asian Style Tuna Buns (Recipe 01)
Ingredients

  • 400g Bread flour
  • 180g Plain flour
  • 2 Eggs
  • 11g Instant dry yeast
  • 90gButter
  • 5g Salt
  • 25g Sugar
  • 150g Water
  • 150g Prepared roux
Ingredients for the roux
  • 50g Plain flour
  • 250ml water
Ingredients for the filling
  • 1 Can Tuna or cooked fresh tuna
  • 1/2 block (125g) cream cheese
  • Salt & pepper
  • Spring onions or salad onions (optional)
Method
  • Prepare the roux before by cooking the flour & water until it thickens and measure the right amount for the dough.
  • Prepare the filling by mixing everything together.
  • Add the bread flours, roux,sugar,salt and mix one min.
  • Next add eggs, and yeast and add water and mix well.
  • Add butter after and knead about 20-25 min.
  • Leave the prepared dough in to greased bowl and leave in a warm place to double in size.
  • After add flour on to the bench and put the dough on to the bench.
  • Cut the dough into equal size pieces.
  • Take one part and roll to a circle.
  • Add the filling to the middle. Seal edges well.
  • Leave on a baking tray again to prove.
  • When the buns are double in size Brush the tops with eggs and bake on 180c about 15-25 min or until golden brown on top.
  • Cool on a wire rack.
  • Can leave in a fridge up to 3 days.

Piped Chocolate Cookies
Ingredients

  • 200g Plain flour
  • 15g Cocoa Powder
  • 100g Sugar
  • 130g Butter (Room Temp)
  • 1 Egg
Method
  1. Whisk Butter and sugar for 1-2 min.
  2. Next add egg and whisk for 2-3 min on speed 8.
  3. Next add cocoa powder and flour & mix on speed one.
  4. Then whisk on a high speed.
  5. Fill in to piping bag .
  6. Use a 6B nozzle or a large star nozzle and pipe cookies.
  7. Bake on 160c about 20 min.
  8. Cool on a wire rack and store in an air tight container.

Peanut Butter and Almond Bread Rolls

Ingredients

1st Dough


  • 220g Bread flour
  • 4g Yeast
  • 135ml Water

2nd addition to the dough

  • 30g Bread flour
  • 18ml water 
  • 2 g Salt
  • 30g Sugar
  • 85g Peanut Butter

Topping 

  • 25g Almond Meal
  • 1 Egg
  • 35g Sugar

Method

  1. Add the first dough ingredients in to a mixing bowl and mix well. Leave in a warm place about 1 hour.
  2. After add the dough,salt, water, sugar and the flour mix well. Knead about 5 min.
  3. Next add peanut butter and keep on mixing about 15 min.
  4. After put the prepared dough in to a greased bowl and leave in a warm place until it double in size.
  5. Mix all the ingredients for the topping and leave aside.
  6. After flour the dough on to the bench and punch down.
  7. Next cut in to four equal parts.
  8. Roll each part to a boll and leave ten min on the bench covered with a damp cloth about 10 min.
  9. After take one part and roll to a circle.
  10. Then roll from one end to the other.
  11. Make long log and cut from the middle and twist them.
  12. Leave to prove .
  13. Next brush the tops with prepared almond and egg mix and bake on 180c about 20-25 min.
  14. Cool on a wire rack.

Ingredients

  • 360g Bread flour
  • 85g Plain flour
  • 30g Sugar
  • 2g Salt
  • 10g Instant dry yeast
  • 50g Butter
  • 1 Egg
  • 200ml warm water
Filling ingredients
  • 80g Spring onion or chives finely chopped
  • 100g Pancetta
  • 1/4 cup bread crumbs
  • 50g Butter
  • Salt & pepper
  • 1 Egg
Method.
  1. Add flours, sugar, yeast and egg and mix one min.
  2. Next add salt and water. Mix 5 min.
  3. Add butter and mix 20 min.
  4. Put the prepared dough in a greased bowl and leave in a warm place until doubles in size.
  5. Prepare the filling ingredients by mixing all together and leave aside.
  6. When the dough is ready cut in to equal size pieces.
  7. Roll the each dough in to a ball as directed.
  8. Leave to prove.
  9. When ready cut the tops of the buns and brush with eggs.
  10. Put the filling ingredients in to the cut and bake on 180c about 15--20 min.
  11. Cool on a wire rack.

Ingredients,..

  • 510g Bread flour
  • 50 ml Olive oil
  • 2 Eggs
  • 7g Yeast
  • 7g Salt
  • 250ml Warm water.
Ingredients for the filling
  • Some Dry sausages
  • Oven roasted Tomatoes
  • Some cheese
Method
  • Add the bread flour,oil,yeast and mix well.
  • Add eggs, salt,and water little by little and keep on kneading for 20 min.
  • Leave in a warm place to double in size.
  • After roll the dough to a rectangular shape and sprinkle the ingredients as shown in the video.
  • Put the  prepared bread on a tray and leave to prove.
  • After Brush the top with eggs and bake on 180c about 20-30 min or until golden brown on top.
  • Cool on a wire rack.

How to Stabilise Thickened Cream for Decorating cakes

Ingredients

  •  500ml Thickened or whipping cream
  • 1 Cup of Icing sugar
  • 1level tsp of gelatine
  • 1 Tblsp warm Water
Method
  1. Add water to the gelatine powder and let it dissolve.
  2. And put the gelatine in microwave about 20 min.
  3. Leave the gelatine to cool down.
  4. Add the cream in to the mixing bowl and whisk well.
  5. Once the cream start thickening start adding icing sugar and whisk well.
  6. Next add the liquid gelatine and whisk well.
  7. Leave the cream in the fridge about     15min.
  8. When sets fill a piping bag and pipe spread or fill cakes.

Coffee Cup Cakes with Butter Cream Icing.


Coffee Cup cakes with Butter Cream Icing.........

Ingredients
  • 175 self raising flour
  • 85g butter 
  • 50 ml of milk
  • 70g sugar
  • 1 egg
  • pinch of salt 
  • 1 tsp instant coffee or to your taste
Method:

  • Preheat the oven to 180 degrees. Add the butter into a mixing bowl, with that add the sugar,  and coffee for about 2 mins of medium speed. Then add the egg, mix for a 1min, then gradually add the flour and milk and mix for 5mins or so until smooth and combined.
  • Using a 12 cup muffin pan, place the cupcake liners inside, then using an ice cream scoop or a tablespoon fill it about 3/4 of the liner for each cupcake and bake for about 15-20mins.
  • Once the cupcakes have cooked and cooled down, you may decorate with buttercream icing or have it plain. If you do want know how to make butter cream icing, there is a separate video on my channel.
