Giant Chocolate Chip Cookie



Giant Chocolate Chip Cookie
Ingredients

  • 95g Butter
  • 95g Brown sugar
  • 1 Tsp Vanilla
  • 125g Chocolate Chips
  • 1 Egg
  • 1/4 tsp Baking soda
  • 150g Plain flour
  • pinch salt
Method
  1. Add sugar , salt and butter in to a mixing bowl. Mix well.
  2. Next add egg, bicarb, vanilla, plain flour .
  3. Add chocolate chips.
  4. Press in to the prepared pan.
  5. Bake on 180c about 20 min or until golden brown.
  6. Cool on a wire rack.

Easy Home made Marzipan / Almond paste (Cake Decorating Basics)



Ingredients: 
  • 700g icing sugar
  • 250g ground almond or almond meal
  • 2 egg whites
  • 1/4 teaspoon of almond essence
  • 2tbsp of glycerin
Method:
  • In a standard mixing bowl add the icing sugar (sifted), almond meal, make well in the middle then add the egg whites, some almond essence. Mix this on a slow speed. While mixing add the glycerin and mix this until it's fully combined. If it doesn't mix add another egg white and some lemon juice. Mix for about 5mins.
  • Flour the bench with icing sugar, place the dough onto the bench and kneed for about 3 minutes, until it's no longer sticky.
  • Then use it as you please, it can be kept in the fridge covered by cling film for about 7-10 day. It's best used within 3 days.

Festive Chocolate Fruit Cake ____Episode 1000



Ingredients:
  • 525g Mixed dry fruits
  • 130g chopped dates
  • 130g dried prunes
  • 70g red and greed glazed cherries 
  • 180ml brandy
  • 75ml honey
  • 125g butter
  • 150g brown sugar 
  • 3 eggs 
  • 50g dark chocolate
  • 75g of mixed nuts
  • 150g plain flour
  • 75g self-raising flour
  • 15g cocoa powder
Method:

  • Into a bowl, add the chopped dates, prunes, cherries, nuts, mixed fruit, honey and the brandy. Make sure to mix it well and leave it overnight in a cool dark environment. 
  •  Preheat the oven to 180 degrees. In a standard mixing bowl add the butter, brown sugar, and mix this on a medium speed until it's creamy. While it's still mixing add the eggs 1 by 1 for about 2-3 minutes.
  • Then add the cocoa powder, and the flour, mix this with a wooden spoon by hand or e on the mixer with a paddle attachment. Mix this for about 3-4 minutes.
  • Transfer the cake batter to the fruit mixture, then add the chocolate. Mix this until you get a smooth but chunky batter. Making sure that all the fruits are covered in the batter. 
  • Using a 23inch cake pan, making it's well oiled and layered with baking paper. Transfer the cake mix into the pan and bake this for about 2 hours or 3 hours.
  • Before decorating, make sure cake is fully cooled or serve by itself. For the cake I'm using a marzipan top. If you want to know how to make it, please go  to my channel.

Simple & Easy Chocolate Pizza



Chocolate Pizza (Simple Baking)

Ingredients :
  • I cup bread flour
  • 75ml warm water
  • Pinch of salt 4 grams of yeast
  • 1tbsp of cocoa powder
  • Tbsp butter melted
  • 1/2 cup white choc chips
  • 1/2 milk choc chip
  • 1/4 of dark choc chips 
  • 1/2 flaked almond 
  • Nutella
  • 2 tbsp olive oil
Method:

  • Preheat the oven to 180 degrees.  Into a standard mixing bowl add the bread flour, cocoa powder, olive oil, yeast and salt. Mix this for about 2-3 minutes, slowly add the water to make a smooth dough. You can always add more water if needed. 
  • Flour the bench and and kneed the dough until it's not sticky anymore, then roll the dough into the desired pizza base shape keep about 1-2cm thickness. Fork the base to release the pressure and air when cooking. Brush the top of the base with melted butter. Bake this in the oven for about 10-15 minutes.
  • Using the nutella as a sauce or paste spread it over the base whilst it's still hot, then add the desired toppings, such as the white chocolate chips and the dark chocolate chips. You could also you marshmallows. Place this in the oven for about five minutes until the chocolate chips are melted but still in shape.
  • Then let it cool down, best served with whipped cream.

Ingredients

  • 140g Butter
  • 100g Sugar
  • 4 Eggs
  • 60g Milk Powder
  • 225g Self Raising Flour
  • Jam
Method
  1. Add butter, sugar and whisk 2 min.
  2. Add eggs one by one and whisk again.
  3. Next add milk powder,& self raising flour.
  4. Put the mix in to the tray.
  5. Spread jam over.Cover with another layer of batter.
  6. Bake the cake on 180c until a skewer inserted comes out clean.

Vintage bread (Simple Baking)



Vintage Bread
Ingredients
For the first dough

  • 215g Bread flour
  • 85g Plain flour
  • 6g Instant dry Yeast
  • 25g Sugar
  • 240ml Water (Warm)
For the second dough
  • 215g Bread flour
  • 85g Plain flour
  • 25g SUgar
  • 6g Salt
  • 2 Eggs
  • 1 Tblsp Water
  • 75g Butter
Method
  1. Mix all the ingredients for the first dough and put in the fridge for 12-15 hours.
  2. Add flour , Salt, the first dough,sugar and eggs in to a mixing bowl. Start mixing about 5 min.
  3. Next add the butter and mix 5-10 min.
  4. If you feel the dough is dry add some water if not knead for another 10 min and put the dough in to a greased bowl and leave in a warm place.
  5. When the dough is double in size put flour on to the bench and cut the dough in to equal size pieces.
  6. Then roll as directed. Put them on a baking tray to double in size.
  7. Next brush the tops with eggs and bake on 180c about 20-30 min.
  8. Cool on a wire rack.

Ingredients

  • 250g Oatmeal
  • 300g Mixed nuts
  • 80g Butter
  • 40g Sugar
  • 2Tblsp shredded coconut
  • 100g Malt Extract
Method
  1. Add maltose in to a pot and add sugar and butter in too
  2. Melt those ingredients.
  3. After add the rest of the ingredients to ita nd mix well.
  4. Pour in to a prepared tray and press well.
  5. Bake on 180 until brown and cool on a wire rack.
  6. Store in an air tight container.

Vanilla & Almond Cookies

Ingredients

  • 200g Plain flour
  • 120g Butter
  • 100g Caster Sugar
  • 70g Almond Ground
  • 1 Egg
  • 2 Vanilla pods or paste
Method
  1. Add butter and sugar and mix well.
  2. Add vanilla next and mix one min.
  3. Add egg, almond and flour and mix until it combines all together.
  4. Make balls and press with a fork and bake on 180c about 20 min.
  5. Cool them on a wire rack to cool down.
  6. Store in an air tight container.

Marbled Sponge Cake (Simple Baking)



Marbled Sponge Cake (Simple Baking)
Ingredients:
  • 3 eggs yolks
  • 3 egg whites
  • Red Food colouring
  • 50g plain flour
  • 25ml vegetable oil
  • 25ml milk
  • 100g caster sugar
Method:
  • Preheat the oven to 170 degrees. In a standard mixing bowl add the egg whites, half of the sugar, this is optional but you add some vinegar or cream of tartar to hold the shape of the egg mixture, beat this for 3mins until there's a soft peak, and it should hold when you lift it up.
  • Add the egg yolks into the mixing bowl, add the sugar, oil and mix for about 1min. Then add then flour, mix this on a medium speed while gradually adding the milk. The slowly fold the egg whites into the batter, DO NOT MIX. Then place half of the batter into a separate bowl, colour it with you choice of food colouring, and leave one bowl with the plain batter.
  • Grab a Cake tray, or marble cake pan, and place dollops of each batter in the pan in different order until the top, then with a spoon slowly mix the batter in the pan until you get a marble effect, don't over mix it, because you will just end up with one colour. Then bake this for 45mins.
  • To take the cake out, run a small knife along the edge of the tray, let the cake cool down in the pan, then you can take the cake out of the pan.

Black Pepper Chicken Buns



Black Pepper Chicken Buns
Ingredients
For Black Pepper Chicken

  • Diced Chicken Thighs
  • Enough Black pepper and salt
  • Tomatoes diced
  • Onions and chilles
  • Curry powder and herbs (Optional)
  • Oil for stir frying
For the dough
  • 450g Bread Flour
  • 75g Multigrain
  • 7g Instant dry yeast
  • 20g Sugar
  • 5g Salt
  • 1 Tsp Black pepper
  • 40g Butter
  • 280ml Water
  • 1/2 of an Egg (Leave the other half to brush the buns)
Method
  1. Stir fry chicken and leave to cool down. Make sure you cook the chicken to a dry consistency.
  2. Add bread flour, Multigrain,sugar,yeast, Black pepper& Salt in to a mixing bowl and mix well.
  3. Next add the egg ,water and knead about 20-25 min until smooth and elastic.
  4. Leave the prepared dough in a warm place until double in size.
  5. When ready sprinkle flour on to bench and punch the dough down.
  6. Cut the dough in to equal size pieces.
  7. Roll the dough as directed in video and add chicken and seal.
  8. Leave to double in size again.
  9. Once ready brush the tops with eggs and bake 180c about 20-30 min or until golden brown.
  10. Cool on a wire rack or have them hot.

Ingredients

  • 130g Butter
  • 100g Brown sugar
  • 1 Egg
  • 130g Dark or milk chocolate chips
  • 230g Self raising flour
  • 150g Nutella
Method
  1. Add sugar and butter in to a mixing bowl and mix well.
  2. Next add egg and Nutella and mix one min.
  3. Add flour and chocolate chips and mix until well combined.
  4. Make balls and flatten them.
  5. Bake on 180c about 15-20 min.
  6. Cool on a wire rack.

Home Made soft Milk Buns (Simple baking)
Ingredients

  •  290g Bread flour
  • 5g Salt
  • 25g Sugar
  • 5g Instant Dry yeast
  • 30g Butter
  • 25g Eggs and leave the rest for brushing the tops
  • 150ml Milk
Method
  • Add flour , yeast, sugar, egg,& salt in to a mixing bowl and mix well.
  • Next add milk and make a smooth dough and add butter. Knead for 25 min.
  • Leave the prepared dough in a greased bowl in a warm place until double in size.
  • When the dough is ready put on to the bench and punch down, then cut the dough in to equal size pieces.
  • Roll each piece in a ball pressing in wards (Watch video).
  • Leave to double in size.
  • When ready brush the tops with eggs and sprinkle some sesame seeds on top and bake 15-20 min or until golden brown on top. 
  • Cool on a wire rack.
  • Can store in freezer for months.

Ingredients

  • 400g Dark Chocolate
  • 150ml Whipping cream
Method
  1. Add cream and chocolate in to a pot  and melt on the stove.
  2. Leave to cool down to the right consistency and spread on top of the cake.

Dark Chocolate Mud Cake

Ingredients

  • 270g Butter
  • 225g Dark chocolate
  • 400g Caster Sugar
  • 375ml Milk
  • 340g Self Raising Flour (or plain flour +2 tsp Baking soda + 1/4 tsp salt)
  • 3 Tblsp cocoa powder
  • 3 Eggs
Method
  1. Add chocolate, sugar, butter & milk bring to a boil. Cool down 10 min.
  2. Next add cocoa powder, egg and flour 
  3. Mix really well.
  4. Pour in to the prepared tray and bake on 160c about 1-11/2 hours.
  5. Leave the cake in tray for 5 min and transfer to a wire rack.

No Bake Peach Cheesecake



No Bake Peach Cheesecake
Ingredients

  • 125g Plain cookies
  • 75g melted butter
  • 11/2tsp gelatine powder x2
  • 250g cream cheese
  • 175g Caster Sugar
  • 1 can peaches
  • 160ml cream whipped
Method
  • Crush or process the cookies and add melted butter and press on to the tray you are using.
  • Next drain peaches.
  • Add cream cheese in to a bowl and mix with 1/2 of the sugar and cream about 2-3 min.
  • Process the drained peaches and puree with sugar.
  • Add gelatine and pour over the cookie layer and put in fridge to set.
  • Next add cream to the cheese and mix well. Add gelatine and pour in to a piping bag. 
  • Pipe on the peaches.
  • Put in the fridge to set.
  • Cut and serve with ice cream.

French Seasame Bread Rolls



French Sesame Bread Rolls
Ingredients

  • 300g Bread flour
  • 100g Whole wheat flour
  • 260ml Warm water
  • Olive oil for brushing or spraying on the top of the bun
  • 4g Salt
  • 6g Instant Dry Yeast
  • 50g Black sesame seeds
  • 20g Caster Sugar
Method
  1. Add both flours, Salt,yeast and sugar in to a mixing bowl.
  2. Start mixing it until it makes a smooth dough and knead about 10min.
  3. Next add sesame seeds. (When I was doing the video the camera battery went flat)
  4. Mix few more min
  5. Leave the prepared dough in a warm place to double in  size.
  6. When the dough is ready add flour to the bench and put the dough and punch down.
  7. Cut the dough in to equal size pieces and roll as directed in the video.
  8. Leave to double in size.
  9. When ready cut the top and spray olive oil and bake on 200c about 20 min or until golden brown on top.
  10. Cool on a wire rack.
  11. Can freeze or leave in fridge.
