Christmas Pudding
Ingredients
- 90 g Raisins
- 210g Sultana
- 75g mixed peel
- 50g Cherries
- 150g Figs
- 3 Eggs
- 100g Self Raising flower
- 100g fresh bread crumbs
- 40g Almond meal
- 1/3 cup Brandy
- 150g brown Sugar
- 100g Butter
- 1 Orange (Zest & Juice)
- 1 Apple Finely grated
Method
- Mix all the fruits with brandy, orange juice and leave over night.
- Next day mix all the other ingredients and put that to a pudding bowl.
- Cook about 4-5 hours on simmer until a skewer inserted comes out clean.
- Cool on rack and leave covered in a cool dark place.
- On the day serving steam one hour and serve hot with brandy custard.
