Dundee Cake
Ingredients
- - 230g of Plain Flour
- - 80g of Self Raising Flour
- - 180g of Caster Sugar
- - 2 Tablespoons of Brandy
- - 1 Teaspoon of Allspice
- - 200g of Raisings
- - 5 Eggs
- - 50ml of Milk
- - 100g of blanched Almonds
- - 100g of Glazed Cherries
- - Mixed Peel
- - 200g of Sultana
- - 260g of Currents
- - 180g of Butter
Method
- Preheat oven to 150c.
- Line a 8 or 9 inch baking tray with 3 layers of baking paper.
- Cream butter & sugar in a mixing bowl.
- Add Eggs one by one. Mix until pale in colour.
- Next add flours.
- Then mix fruit and finally put that to baking tray and arrange almonds.
- Bake for 2 1/2 - 3 hours.
- Cool on wire racks.
- Can freeze up to 3 months.
