Sri Lankan Fish Buns using whole-wheat flour (Simple Baking)
Ingredients:
400g wholemeal flour
200g bread flour
65g butter
8g yeast
8g salt
1/2 tsp of bread improver
1 tbsp caster sugar
375ml warm water
Filling Ingredients:
1 large chopped onion
100g Mashed potato
Finely chopped leeks
2 cans of mackerel or any other fish
1tsp of salt
1 tsp of pepper
Filling Method:
In a hot pan add some olive oil, add all four ingredients, and stir fry, until the mixture is soft and brown in colour.
Method:
Preheat the oven to 180 degrees .Into a standard mixer add the bread flour, wholemeal flour, bread improver, yeast, sugar and start mixing it, then gradually add the salt and water, then mix this for another 8mins on high speed. Add the butter then kneed for another 10-15mins. Once it's done, place the dough in a warm place until the dough doubled in size.
Once the dough has doubled in size, spread some flour on the bench, place the dough on top and flour the top. Cut the dough into 12-14 equal pieces. Then round them up and leave it on the bench to double in size.
Take a piece of dough, press it down onto the bench and using a rolling pin, roll the sides of the dough leaving the middle a bit thick. Then take a spoon full of the filling, place it in the center, then bring all sides of the dough into the center and make sure everything is enclosed in the bun. Then shape the bun into a triangle. Place this again in a warm area to double in size. Brush the tops of the bun with egg, then bake this for about 20-30mins.
