Bacon and Egg Pie Bread (Simple Baking)



Bacon & Egg Pie bread (Simple Baking)

Ingredients


  • 250g Bread flour
  • 6g Yeast
  • 1 Egg (40g)
  • 15g Sugar
  • 50g Butter
  • 120ml Warm Milk
  • Pinch of Salt

For the Filling

  • 150g Bacon
  • 5 Eggs
  • 100ml Cream
  • 5 Medium onions finely chopped 
  • Salt & Pepper
  • Cheese (Optional)

Method

  1. Add bread flour, yeast, egg, sugar, with a pinch of salt and mix adding the milk little by little about 5 min. 
  2. Next add butter and keep on kneading another 10 more min.
  3. Leave the prepared dough in a greased bowl in a warm place until double in size.
  4. Meanwhile fry bacon and onion adding any herb or spice to your taste.
  5. Roll the the dough in to a circle ((to the size of the pie dish) I am using a 24cm dish for this recipe.
  6. Put the cooked bacon and onion in to the dish.
  7. Whisk eggs and cream and pour over and shake a bit. (If you like sprinkle some cheese on top)
  8. bake on 180c about 20- 30 min.
  9. Cool on wire racks before cutting.(Eggs need time to set)

Ham and Cheese Scrolls



Ham & Cheese Scrolls (Simple Baking)

Ingredients


  • 450g Bread flour
  • 40g Butter
  • 30g Sugar
  • 5g salt
  • 11/2 Eggs
  • 5g yeast
  • 150ml Water

For the Filling

  • 1 cup Shredded ham
  • 1 Cup Shredded Cheddar cheese
  • 1 Cup Spring onions

Method


  1. Add bread flour,sugar,eggs, yeast , salt in to a mixing  bowl and start mixing adding water little by little about 5 min.
  2. Next add butter and keep on mixing another 10 -15 more min.
  3. After put that in to a greased bowl and leave in a warm place until double in size.
  4. When the dough is ready and put the dough on to a floured bench and roll to a log.
  5. Sprinkle cheese, ham, and spring onions evenly and roll to a log.
  6. Cut to the desired size and leave to double in size.
  7. Next brush the tops with eggs and bake on 180c about 15-20 min or until golden brown.
  8. Cool  on wire racks before separating.

Butter Cookies



Butter Cookies (Simple Baking)

Ingredients


  • 80g Butter
  • 65g Icing Sugar (Add more sugar if you like it very sweet)
  • 65g Corn Flour
  • 120g Plain flour
  • 1 Egg (50g)

Method

  1. Add all the ingredients in to a mixing bowl and use the paddle attachment to mix well.
  2. Next leave in fridge for an hour or so or make cookies as instructed.
  3. Dip a fork in icing sugar and design the cookies.
  4. Bake on 165c about 15-20 min or until golden brown. 
  5. Cool on wire racks before storing.

Lime Syrup Cake



Lime Syrup Cake (Simple Baking)

Ingredients


  • 170g Self Raising Flour
  • 55g Plain Flour
  • 1/2 cup sour cream
  • 1 Tblsp Lime rime
  • 2 eggs
  • 125g Butter
  • 65ml milk
  • 140g Sugar
  • 1/2 cup caster sugar
  • 1/2 cup water
  • 1/4 cup Lime juice

Method

  1. Cream butter and sugar lime rind together until sugar dissolves.
  2. Next add eggs one by one and whisk until pale in colour.
  3. Next add flours, milk and sour cream . Mix well.
  4. Pour in to a greased baking tray and bake on 180c until a skiver inserted comes out clean.
  5. Mix 1/2 cup water with sugar and lime juice.
  6. Prick the cake  when it is hot and pour the lime syrup on top and leave to cool down.
  7. Serve with cream and ice cream or as it is.

Twisted Chocolate Chip bread Rolls

Ingredients

For the Main dough


  • 200g Bread flour
  • 50g plain flour
  • 1 Egg
  • 5g Yeast
  • 50g sugar
  • 3 g Salt
  • 1 Tblsp Milk powder
  • 25g Butter
  • 25ml Milk
  • 50 ml water

For the Filling

  • 1 Tblsp Melted butter
  • 1/2 Cup Chocolate chips

For the topping

  • 50g Plain flour
  • 25g Butter
  • 1/2 Tsp Vanilla
  • 1 Tsp Milk powder
  • 1 Tblsp Crystallised sugar

Method

  1. Add Bread flour, plain flour, egg, yeast, milk powder, sugar, salt and milk in to a mixing bowl and mix 2 min.
  2. Next add water little by little and mix 3 more min.
  3. Next add butter and knead 10 more min and leave the prepared dough in a warm place to double in size.
  4. Mix chocolate with butter
  5. Mix the topping ingredients too.
  6. When the dough is ready cut the dough in to equal size portions.
  7. Roll to a rectangular shape.
  8. Put a spoon ful of the chocolate mix in the middle and roll.
  9. Do several cuts across and make a circle.
  10. Leave to prove.
  11. Next egg wash sprinkle the topping and bake on 190c about 20-30 min. 
  12. Cool on wire racks

Spiced Potato & Onion Bread (Simple Baking)

Ingredients


  • 510g Bread flour
  • 2 eggs
  • 1/2 Tsp Salt
  • 40g Sugar
  • 7 g Yeast
  • 50g Butter
  • 200 ml Milk
  • Boiled Potatoes
  • 2 Onions

Method

  1. Add the flour, yeast, sugar, salt, eggs and start kneading adding milk little by little for 5 min. 
  2. Next add butter and keep on mixing another 10 more min.
  3. Put that in a greased bowl and leave in a warm place until double in size.
  4. Mean while stir fry onions and potatoes in a little oil and leave to cool down.
  5. When the dough is double in size  put that on to the bench , punch down and cut in to equal size portions.
  6. Roll each in to circles and put the mix in to the middle.
  7. Seal and leave to prove.
  8. Brush the tops with eggs and bake on 180c about 15-20 min.

Lentil Lasagna with Spinach & Ricotta (Easy Meals)



Lasagna with Lentils, Spinach & Ricotta

Ingredients


  • 11/2 cups Lentils Washed
  • 2 Large potatoes grated
  • 1 Cup cheese
  • 1 Tblsp Garlic
  • 2 Onions finely chopped
  • 11/2 cups vegetable stock
  • 1/4 cup parmesan cheese
  • 2 Packets frozen spinach thawed and squeezed excess water
  • 2 Eggs
  • 1 Pack Lasagna sheets
  • 1 Can Pasta sauce
  • 300g Ricotta cheese
  • Salt
  • Nutmeg Powder
  • Pepper

Method

  1. Add lentils, potatoes, onion, vegetable stock , nutmeg,salt, and cook about 2 min and add tomato sauce. (1/2 of the can or the bottle)
  2. While cooking add spinach, ricotta, parmesan and eggs in to a bowl and mix well.
  3. Add the cooked lentils in to the bottom of the tray that you are going to bake the lasagna.
  4. Next Add a layer of pasta.
  5. Put the ricotta mix next and spread it evenly
  6. Next add lentils on top.
  7. Lay until you finish with lentils and add a layer of lasgna on top and add the remaining tomato sauce on top.
  8. Next add cheese and bake on 180c about 20-30 min or until the pasta cooked and the top is golden brown.

Cake Doughnuts


Cake Doughnuts

Ingredients



  • 250g Plain Flour
  • 200g Sugar
  • 2 Tsp Baking powder
  • 1 Tsp Mixed Spice
  • 1/2 Tsp Salt
  • 1 Egg
  • 310ml Milk
  • 1-2 Tsp Vanilla
  • 1 Cup Icing sugar
  • 1 -2 Tblsp milk

Method

  1. Add Sugar and butter in to a bowl and cream.
  2. Add egg and vanilla and mix well.
  3. Next  add mixed spice, flour, baking powder and mix on speed one. Slowly add milk and mix 2 min.
  4. Fill 3/4 of each doughnut hole and bake on 180c about 10-15 min.
  5. Cool on wire racks.
  6. Dip in icing and enjoy with a cup of coffee.

Cauliflower Cheese



Cauliflower Cheese (Easy Meals)

Ingredients


  • 2 Cauliflowers 
  • 600ml Milk
  • 1 Onion studded with cloves, bayleaves
  • 20g Butter
  • 1/4 cup plain flower
  • 1 cup cheddar cheese
  • Nutmeg Powder
  • Salt & pepper
  • 1 Tsp vegetable stock powder.

Method

  • Make the white sauce by cooking butter and flour.
  • Add the onion and bay leaves in to milk and bring to boil and let simmer for a while.
  • After add the milk in to the flour and make the white sauce. (Discard the onion and bay leaves)
  • Add nutmeg,salt and pepper.
  •  Cook the cauliflower in boiling salty water until just tender. (Don,t over cook)
  •  Place the cauliflower in a tray and pour the white sauce over and sprinkle the cheese.
  • Bake on 180c until golden brown on top.

Pita Bread Pockets (Simple Baking)

Ingredients

For the sponge dough


  • 185g Bread flour
  • 3g yeast
  • 110g  Water

For the main dough


  • 590g Bread Flour
  • 35g Sugar
  • 35ml Oil
  • 12g Yeast
  • 10g Salt
  • 355 ml  water

Method

  1. Prepare the sponge dough several hours before mixing all the ingredients.
  2. Next mix all the ingredients except water and add water little by little to make a smooth dough.
  3. After leave the dough in a warm place about 40 min to rise. (The time will vary and that depends on the room temp)
  4. Flour the bench and put the dough on to the bench.
  5. Cut the dough in to equal size portions.
  6. Roll it to a desired shape.
  7. Put them on baking trays to prove again.
  8. Bake them on 200c about 5-10 min.
  9. Open the bread and fill any filling and enjoy!

Stuffed Pasta Shells (Quick & Easy Meals)



Stuffed Pasta Shells.

Ingredients

  • 2 cups of cooked shredded chicken
  • 2 cups of spinach 
  • 1/2 cup parmesan cheese 
  • 2 large onions diced
  • Salt & pepper to your taste 
  • 2 large eggs
  • Pasta sauce of your choice
  • 500g ricotta cheese 
  • 1 cup of cheddar cheese
  • Conchiglie Shells (large)

Method:

  • Preheat the oven at 180 degrees. Add some olive oil into a pan, add the onions and cook for 2-3 mins, when the onions are soft and lightly brown add the chicken, add salt, pepper and spinach. After the spinach is well cooked leave the mixture to cool down. 
  • Boil the Shells until andante or as said on the instructions. While the pasta is cooking, take the previous mixture and add the ricotta and parmesan cheese into it and mix thoroughly (not on the pan).  
  • Add some pasta sauce onto the bottom of a pyrex baking tray and spread it around. To do the shells, take a pasta shell and use about a tablespoon of the mixture to the middle and press it down, then line it on the baking tray> you can add extra pasta sauce to the dish after you have lined it ( if you please). 
  • Then spread some cheddar cheese over the top. Place it in the oven for 10 mins with the tray wrapped int foil to cook. You can then uncover it and cook it for a further 10mins until it's golden brown.
  • Let it cool down and serve warm.

Sausage & Cheese Flat Bread (Simple Baking)

Ingredients

For the Roux


  • 50g Bread Flour
  • 35g Boiling water

Main dough

  • 150g Bread Flour
  • 50g Plain Flour
  • Pinch Salt
  • 6g Yeast
  • 20g Sugar
  • 80ml Water
  • 30g Butter
  • 30g Eggs

Topping

  • Sausages
  • Green peas
  • Corn
  • Cheddar Cheese

Method

  1. Add flours roux,yeast,sugar, eggs, Salt Knead 5 min adding water little by little.
  2. Add butter next and Knead another 10 min and put the dough in to a greased bowl and leave to prove.
  3. When the dough  is ready put the dough on to the floured  bench top and cut in to equal parts.
  4. Next Make balls and flatten them using a rolling pin. Egg wash. Arrange the topping and finish with cheese and leave to prove .
  5. Bake on 180c.
  6. Cool on wire racks.

Upside Down Date Cake



Ingredients:

 Topping:

  • 60g softened butter
  • 100g brown sugar
  • 300g pitted dates 
Batter:
  • 200g self raising flour
  • 1/4 tsp of salt
  • 110g softened butter 
  • 2 large eggs
  • 125g caster sugar
  • 1 tsp vanilla essence 
  • 120ml full cream milk
Pre-Method:
  • Add the brown sugar, butter and melt this on a low heat while mixing it with a spoon. Let it cool down a bit then add it to the bottom of a 20cm round cake tin. Then place the dates on top of the sauce in a preferred pattern.
Method:
  • Preheat the oven at 160 degrees. Add the sugar and butter into a mixing bowl, mix that for about 2 mins until soft and smooth. Then add the eggs then beat it again until the mixture is smooth and pale.
  • Add the salt, vanilla and flour into the bowl, start mixing it and slowly adding the milk until the batter is smooth and glossy.
  • Slowly and carefully add the batter to the cake tin with the dates, spread the batter around to make it even. then place it in the oven for 30-40mins. Let the cake cool and serve warm with some cream.

Japanese Style White Bread Rolls (Simple baking)



Ingredients:

  • 250g bread flour
  • 4g salt
  • 15ml thickened cream
  • 160ml of water 
  • 30g sugar
  • 25ml full cream milk
  • 5g yeast 
  • 12g softened butter
Method:
  • Preheat the oven at 180 degrees. Add the sugar, flour,milk, cream, salt and yeast (keep the salt and yeast on separate sides) start mixing this by hand, and slowly start adding the water, until it's a soft yet floury dough. Leave aside for 1 hour before kneading. 
  • Once it has been an hour, add the butter, then knead the dough by hand or electrical mixer for about 5-6 mins, then prove the dough in a warm (30 degrees) place until it has doubled in size.
  • Flour the bench and your hands, place the dough on the bench, add some more flour to stop the stickiness and pat it down. Then cut the dough into preferred equal sized pieces. Take a piece and keep tucking the edges in to the dough about 5 time, then roll into a round circle like shape (or any shape you like). Then prove these rolls until it has doubled in size. 
  • Dust some flour on the rolls and place it in the oven for about 10-15mins.
  • Serve warm with some butter or jam.

Sausage and Onion Buns



Ingredients:

  • 4 large sliced onions 
  • 2 green chillies chopped (you can omit this or use little to your taste)
  • A few curry leaves 
  • 1/2 tsp pepper
  • 1/2 chilly powder
  • 1/2 chilly flakes 
  • Brown sugar (optional if you like it sweet)
  • Salt to taste 
Dough ingredients:
  • 440g bread flour 
  • 80g plain flour 
  • 7g yeast
  • 4g salt
  • 25g sugar
  • 1 large egg
  • 270ml water
  • 40g softened butter 
  • 12 sausages of your type (cut in half, depending on the size)
Pre-Method:
  • Add some olive oil into a pan cook the onions for bout 1min and add the rest of the ingredients until the onions are soft.
Method:
  • Preheat the oven at 180 degrees. Add the yeast, two flours, sugar and the egg into a bowl, start mixing (kneading), after a few seconds add the salt, then start slowly adding the water and keep kneading it for a further 5 mins. Add the butter then knead again for 10 mins. After it has finished kneading place the dough in a greased bowl to prove in a warm place until the dough has doubled in size.
  • Flour the bench and place the dough on the bench and pat it down until about an inch thick. Then slice this into 12 (or how ever many you want, 12 pieces as a maximum) equal pieces.
  • Using a rolling pin, spread a piece of dough into a small rectangular shape, place a spoon-full of the onion mixture near one corner and place half a sausage on top, taking the same corner tuck everything in and then start rolling this into a log shape. Tuck the ends in to secure the shape. Repeat this for the remaining pieces. Then leave this on a baking tray to prove again.
  • Using egg yolks or melted butter, brush the tops of the rolls and place it in the oven for 15-20 min.
  • Serve warm. 

Brazilian Style Salmon Stew



Ingredients:

Marinade ingredients:

  • 500g pink salmon
  • 1 whole lime or juice of a whole lime
  • 1/2 tsp of sweet paprika
  • Salt to your taste 
  • 1 tbsp of garlic 
  • 1 tsp of pepper 
  • 1 1/2 tbs of cumin powder
Stew ingredients:
  • Marinated salmon
  • 1 can of coconut milk (250ml)
  • 2 large tomatoes (cut)
  • 2 tbsp of olive oil
  • 1 sliced onion
  • Some coarsely chopped coriander  

Pre-Method:

  • Add the salt, cumin powder, garlic, pepper and squeezed lime juice into the salmon, mix it up and leave it to marinade for 7 hours.
Method:
  • Add the olive oil into a pan, then add the fish and let this cook for about 2 mins. Add the onions, tomatoes, parsley and coconut oil to the fish, cook this on a low heat for about 45 mins.
  • Best served warm with rice or naan.

Twisted Easter Bread Ring



Ingredients:


  • 250g bread flour
  • 30g sugar
  • 4g salt
  • 1 large egg
  • 120ml of full cream milk
  • 75g softened butter
  • 3g yeast
  • 50g of whole cashews
  • 50g silvered almonds
  • Cinnamon sugar (combine cinnamon & sugar)
Method:
  •  Preheat the oven at 180 degrees. Add the yeast, salt, flour, sugar and salt into a mixing bowl and start kneading it on a medium speed, while it's coming together slowly add the milk. Mix this for about 5 mins.
  • Then add the butter, mix this for bout 10 mins, until it's a visible doughy texture. When it has finished mixing, place it in a clean bowl, cover it with a tea towel and let it prove in a warm place until the dough has doubled in size.
  • After it has proved, place some flour on a mat or bench, flour you hand as the dough is quite sticky, place it on the bench and spread it out. Flour both sides of the dough until you don't feel the stickiness any more.
  • Using a rolling pin, roll the dough into a rectangle shape. Add a hand-full (or how ever much you please) of the cinnamon sugar to the middle and spread it around the top of the dough. Fold the dough in half and roll it again into a longer rectangular shape. Cut this in half in length not width. Start twisting each piece of dough, then place the pieces of dough next to each other and start overlapping the two pieces of dough. Tuck the ends of the dough to make a twisted circle. Prove this again until doubled in size.
  • Place the nuts and cinnamon sugar together on a plate or sheet of baking paper. Using egg yolk or melted butter brush the top of the proven dough and place in the nut cinnamon mixture. Throughly cover it before proving it for another few minutes. 
  • Place it in the oven for about 10-20 minutes. Serve warm.
