Thai Style Red Chicken Curry
Ingredients
- 600g Diced chicken
- Red chillies soaked
- Kaffir lime leaves
- 500ml Thick coconut milk
- Salt & pepper
- 30 ml oil
- 30 ml Fish Sauce
- Onions or shallots
- 2 inches Ginger
- 1/2 tsp Turmeric powder
- 1 Stem lemon grass
- 1 tsp Shrimp paste
- 1/2 Tsp Cumin seeds
- 1 Tblsp Coriander seeds
- Cinnamon
- Pepper corns
- 6 cloves garlic
- 1 Tblsp Sugar
Method
- Process the spices. Add oil while processing.
- Put coconut milk in to a pot. and add the ground spice mix in to the milk.
- After add chicken and cook for 20 min. Next add fish sauce.
- Cook until the sauce thickens.
- Serve with rice.
