Chicken Pot Roast
Chicken Pot Roast (One pot meals)
Ingredients
- 1 Whole Chicken
- Several potatoes and carrots
- Leeks
- Onions
- Garlic
- Rosemary
- Thyme
- Mustard
- Oil
Method
- Rub the chicken with mustard, salt and pepper.
- Insert 1/2 of the herbs in to the cavity.
- Add a bit of oil in to a pan.
- Fry leeks onion and garlic.
- Put the chicken on the leek and onion putting wing down and breast up.
- Add the carrots and potaoes.
- Slow cook or cook in the pot or bake in an oven.
- Oven temp will be around 200 about 11/2 hours .
- Serve with the juices remaining in the pot.
