Curry Puffs



Curry Puffs 

Ingredients

For the pastry


  • 500g plain flour
  • 125 g butter
  • pinch salt
  • 1 cup water

For the mix...

  • 300g chicken
  • 300g boiled potatoes
  • 3 green chillies
  • 1 large onions
  • Chicken stock powder
  • Salt
  • Tumeric powdr
  • Pepper
  • Chillie powder
  • Curry powder
Method
  1. Fry the onions,curry leaves with green chillies
  2. Add the chicken and all the spices with stock and salt. Cook 5-10 min.
  3. Add the potatoes cook two min and leave it cool.
  4. Add all the ingredients for the dough and knead about 7-8 min.
  5. Then make circles out from the dough.
  6. Fill the circle with the mix and press edges or use a pastry cutter.
  7. Bake them on 180 after egg washing or deep fry until golden brown.

Marble cake ( Super Easy)




Marble Cake

Ingredients

  • 330g Self Raising flour
  • 250g Butter
  • 260g Sugar
  • 3 Eggs
  • 180ml Milk
  • 1Tblsp Vanila
  • Food Colouring
  • Cocoa Powder

Method

  1. Preheat the oven to 170c.
  2. Grease a 20 or 22 cm baking tray.
  3. Add the butter and sugar and mix until creamy.
  4. Next add vanila & eggs and mix,
  5. After add flour and mix it.
  6. Add milk while mixing the flour.
  7. Devide the mix in to 3 equal parts.
  8. Leave one portion as it is.
  9. Add cocoa and the colouring to the other bowls.
  10. Then add all three colours alternetively.
  11. Take a fork and swirl around to get the marbled effect.
  12. Flatten the mix and bake 170 about 40 min.
  13. Insert a skewer and check whether the cake is ready. If the skewer comes out clean its cooked.
  14. Leave the cake to cool down on a wire rack.

Fish Roti



Fish rotis are one of my favourite rotis. Before making them by my self I used to buy them from take away shops in Sri Lanka. They are quite expensive. But worth buying when you are lazy to cook or no time to cook. But the money you spen to buy 2 or 3 , if you spend the same to buy the ingredients you can make 20 with out a problem.
Not only that the advantage is you exactly know whats in it too.  You can cook them and freeze or put in air tight containers in the fridge for several days.Once you know the technique its really easy.
Always adjust level of fish , vegetables and spices to your liking.

Fish Roti ( Fish Filling in unleavened Flat bread)

Ingredients

  • Godamba roti  dough ( Can get the recipe from my channel)
  • Boiled potatoes
  • Curry leaves
  • Salt
  • 1 can mackeral
  • 1 onion finely sliced
  • Carrot
  • garloc
  • Leeks
  • Chillie powder
  • Pepper
  • Curry powder
  • Oil for stir frying.

Method

  • Add oil in to a pan and fry onion, garlic and curry leaves.
  • After several minutes add carrot, leeks and chillies, spices and salt.
  • Add stock powder to get a bit more flavour.
  • Add the fish & mashed potato cook until it becomes sticky.
  • Leave it to cool down.
  • Take the godamba roti dough and flatten each in to a long rectangular shape.
  • Put the filling in to a corner and fold it over from corner to the other untill it becomes a triangle.
  • Put a pan on the stove and cook them turning from side to side.

Naran Kavum/ Pol Kavum/ (Sweet coconut Balls)

In some parts of Sri Lanka Pol kavum or the Naran Kavum are very famous during the new year. Coconut is common in every part of Sri Lanka and people love to eat any thing infused or mixed with coconut.
I read an article about the values of coconut. Its amazing to know every detail about consuming coconut and how it keep the people away from dimentia. Though we havent had any idea about these long time ago, I can remember we rearely saw a person dying from dimetia, though it is very common in some part of the world.

The shape of the mandarine, gave these sweet treats the name naran kavum. The swet coconut and treacle mix cooked on the stove gives these a devine taste. After making it a ball and deep fried in a batter make these look awesome on the plate.

Ingredients

  • 1/4 Cup water ( will need more for the batter)
  • 1/2 Cup freshly grated coconut
  • 100g Rice Flour ( will need more for the batter)
  • 100g Brown Sugar
  • Crushed cardamon Seeds
  • Tumeric powder
  • Salt.

Method.

  • Into a pot add sugar, cardamon, and water and cook several minutes.
  • Add the cocnut cook sevearl minutes.
  • Add rice flour little by little until it forms a nice smooth paste.
  • Transfer it a bowl and leave it to cool down.
  • Make the batter adding, water to the remaining rice flour and tumeric powder. 
  • MAke balls out of the coconut. And dip in batter. 
  • Deep fry it untill golden brown.
